Great job on the video.I just finished making this recipe. Everything about it was fantastic except for the Cotija cheese. Just found out I'm not a fan. I've never had it before. I'll have to find a substitute for this recipe because I will be making it again. Thanks again for doing a great job. Keep the videos coming.
Cotija is similar to parmasan and if you like parm, you can use that. There's also queso fresco you can use too, it's a crumbling cheese. I mean truth be told, make it your own and don't add the cheese. Heck, do shredded cheese if you like.
Darn it Matt that is what you and more Blackstone cooks should do. MORE excellent side dishes. This was excellent, the only thing I would do different is fresh chopped onion of any type. I can't eat anything without onion. It's a sickness I've suffered from for ages. 😂😂😂

Corn looks really good! Could you give me some info on griddle maintenance. My Blackstone was a year old on father's day. The burner box, the paint is coming off and it is rusting. I don't see this happening to your griddle. Is there something you are doing to protect the paint? Or is it just the nature of the griddle! I don't see the box being able to support the weight of the griddle for too many years the way this is deteriorating...
Inside the box will for sure get some rust just due to the high heat all the time, but you should be able to get many more years from it. My original Blackstone that I got in 2015 is still going strong at a friends house!
We’ve got an egg allergy kid in our house, so we do not cook anything egg or items containing egg on the stone. Any suggestions for a swap out to make this without mayo?
Few things upset me more than seeing someone take the seeds out of peppers. I love the little adrenaline buzz from hot foods. Hard for me to understand.
