I wish I had found this long ago, but I will get my grill hot and make my own stuffed Hash Browns. Thank you, they look delicious.

I'm another line cook with many hours over a flattop, I can think of a lot of variations for this but it doesn't really need them. It depends on what ingredients you have, what equipment you have, what you feel like making and your confidence in your skills. Don't be afraid to experiment. This would be awesome on a biscuit or waffle smothered in bacon or sausage gravy. One professional cook to another, you got mad skills. ✊👍✌️🖖
I've always wanted a full-size griddle in my home since I started working in kitchens... Super-jealous of your set-up! Just a couple notes: 1) PLEASE cross-section the final product!!! Everyone wants to see what it looks like in the center. 🤗🤤 2) Yeah, definitely let them rest until they're just about done steaming off their own heat. That should let the eggs cook through completely too, due to residual heat! 🥵
I can totally relate to your story. I was new in the food industry and was will to work my way up the chain starting as a dishwasher and helped prep food. one Friday night I walked in and the Chef called me on to the line. the flat top/ fry cook had bailed lol and I got my 1st shot. it was a sink or swim situation and I managed to stay a float lol. after that I became the friday/weekend fry cook and eventually worked my way to sauté/grill station, and eventually managing that kitchen.
That's almost the exact way every cook starts. When you look at famous chefs, like Wolfgang Puck, they started doing a bunch of bullshit and not even cooking. Same happened for me. I started busing tables and doing random shit until I ended up becoming one of the saute cooks. That's the restaurant business
I too was a dishwasher/bus boy.. at my younger days in the 70s, short handed they taught me how to make triple stacked BLTs for a sunday crowd.. practice makes perfect. Its 2023 and still bust out some awesomeness BLTs for the family.. i will learn how to create the hashbrown omelets for sure! They look tremendous... although i am from NM, ill use green chili, and mushrooms with gouda cheese because i was raised in the great pacific northwest (Wa.) so ill combine his way 1st and then my 2 home state flavors to add onto his creation. Dang yum! Thanks dude! You have some Canadian flare in your talk..
Instead of going thru lots of paper towels, I use rolls of microfiber cloth towels. They're washable for about 40 to 50 re-uses and they soak up a LOT more oil/grease/water than paper towels.

Made this amazing dish for dinner tonight and it was a HUGE hit. I used frozen hash browns I let thaw a bit before griddling them and they worked perfectly. Used green onions because we were out of sweet to go with the peppers. I will be making this again very soon. Fun to make and super delicious! And your video rocks.
Most of us who love omelettes probably always have hashbrowns on the side. Why in the world did it never occur to us to combine them?! Genius! Giving this a go this weekend
I have been adding my hashbrowns to my omlette just before I fold it. ON the one side, I will have one slice of ham, one slice of cheddar, and one slice of gouda. I add the hashbrowns on top that and then fold. Will give incorporating the eggs into the hashbrowns a try one day.
I do something similar, but not quite in the same vein. I make the Hashbrowns first, then the omelette. While the omelette finishes, I put the Hash brown over top, and flip it onto a plate. The result is an unfolded omelette resting on top of a hash brown. You get that crispy saltiness combined with the soft fluffiness, and you can cut it like a pie for serving others.
Morning here, MA, looks yummy 😋 thank for sharing. I pepper jack cheese, and i use Italian spices to the potatoes it's excellent tasting 😊 I use bacon instead of ham it's good too. I use mushrooms with the onions and peppers. And you can you hot sauce or ketchup my kids use.

YES, I do this too!!! I cannot make a good pie crust and I hate store bought. I came across a recipe for a prebake hash brown crust and never looked back:) I prefer quiche this way now. It is delicious!

Tried making this for Christmas breakfast this morning. Substituted some Jimmy Dean maple sausage for the ham. Don't have a flat top, but a cast iron skillet seemed to work just fine. Thanks for the idea.
I cooked 13 omelettes at a time on a similar griddle in a firehouse for over 30 years and never thought of that twist. You would've been THE SHIT (a good thing)there! Can't wait to try this!!!

I love restaurant hashbrowns but for the life of me I can't make them at home. I've tried all the tricks and they come out either burned or soggy. I use russets, shred, soak in cold water. Ring dry in a kitchen towel. Lots of butter and oil in a cast iron pan. How do you make yours?

I cooked these this morning and had rave reviews. The issue I have is I don't have a Blackstone so my hot zones are the back third of my griddle so I had to make smaller omelets. I used 3 eggs which was one too many and I couldn't really figure out when the bottoms of the hash browns were actually done until I flipped them over, thankfully they were cooked GBD. thanks for the instructions!

@@victorianelson3108mainly less butter, other than that it's just ingredients. I use bacon, spinach, and avocado in mine and also add 1/4 cup of egg whites to 2 eggs for additional protein. My wife gets sick when eating egg yolks so I make hers with just egg whites (it's a little messier, but still tastes amazing)
I feel like I am getting ready for skiing. That is like the breakfast you always have in the northeast before hitting the mountain on a cold day. Thank you for sharing it, very cool. Though I make a more traditional french omelet, this is a good weekend one that is set up for a long day of sports.
When camping, also try bacon pancakes on the griddle... start with about a 2 inch wide by 6 inch long amount of pancake batter, place a cooked strip of bacon on top, then top bacon with another layer of pancake mix, cook just like you would a regular pancake on both sides. Plate & top with syrup. It's yummy.
Omg I finally made these and they were out of this world amazing! I didn't use my flat top bc it's still not weather friendly here in NH, but it worked out great using my flat square cast iron pan. Butter and patience 😆 🤣 thank you for my new fav breakfast!!!
I watched this video when it came out but did nothing about it. Well. this morning I cooked this on my 4 year old Blackstone and LOVED it. Every August I cook for about 25 fly fishermen at a 3 day camping outing and this will be my first cook of the day. I hope you start cooking again soon since I really enjoy your situations!.
I am a hashbrown addict & now I have another reason to cook them. Looks great & I will definitely be doing this. What kind of set up do you have blocking the exit to the rear grease cup so you don't lose any food through the hole?
We love hash browns as well. Its a scrapper holder from Blackstone. I slide the holder over the grease drain and that where I keep my scrapper. It helps with losing food. I must warn ya though, The scrapper does get warm sitting back there.

Lyle keep an eye out on Walmart. They have the 36 inch with a lid for 299.00 GREAT deal with magnetic strip for tools, 8 hooks for utensils and a tuck away paper towel holder and the sides fold down for easier storage. You normally have to buy the lid for around $120 alone, so I cannot recommend buying anywhere else. Actually it seems like Walmart was the only place to have that model come to think of it.

Just made this with pork chorizo in it … WOW!!! Thank you sir. My daughter loved it as well. Also I put it on medium until I put the eggs on I had to then crank it up for the eggs to cook well and fast on my little plug in griddle .

I tried this yesterday on the Vevor 21" griddle at around 350F. I cooked the potatoes using Bacon Up triple filtered bacon grease and filled with scrambled eggs, bacon lardons, and American cheese. Came out amazing!! Thanks for the great video!

I cooked these this morning and had rave reviews. The issue I have is I don't have a Blackstone so my hot zones are the back third of my griddle so I had to make smaller omelets. I used 3 eggs which was one too many and I couldn't really figure out when the bottoms of the hash browns were actually done until I flipped them over, thankfully they were cooked GBD. thanks for the instructions!

I stumbled across this video a few months ago and I'm not exaggerating when I say that I make these for my wife and myself 5-6 times a week. They're delicious, filling, and (with a couple small tweaks) pretty healthy too! Thanks for making great content, keep it up!
What tweaks do you make, if you don't mind me asking?
@@victorianelson3108mainly less butter, other than that it's just ingredients. I use bacon, spinach, and avocado in mine and also add 1/4 cup of egg whites to 2 eggs for additional protein. My wife gets sick when eating egg yolks so I make hers with just egg whites (it's a little messier, but still tastes amazing)
I feel like I am getting ready for skiing. That is like the breakfast you always have in the northeast before hitting the mountain on a cold day. Thank you for sharing it, very cool. Though I make a more traditional french omelet, this is a good weekend one that is set up for a long day of sports.

When camping, also try bacon pancakes on the griddle... start with about a 2 inch wide by 6 inch long amount of pancake batter, place a cooked strip of bacon on top, then top bacon with another layer of pancake mix, cook just like you would a regular pancake on both sides. Plate & top with syrup. It's yummy.

Omg I finally made these and they were out of this world amazing! I didn't use my flat top bc it's still not weather friendly here in NH, but it worked out great using my flat square cast iron pan. Butter and patience 😆 🤣 thank you for my new fav breakfast!!!

Any shredded potato cooked meal requires drying the potatoes after you grate them down to soak up the excess water that comes out of them.
The way you use that spatula, you for sure worked cooking breakfast. It’s a skill so few know about. You’ll never lose those skills.

I watched this video when it came out but did nothing about it. Well. this morning I cooked this on my 4 year old Blackstone and LOVED it. Every August I cook for about 25 fly fishermen at a 3 day camping outing and this will be my first cook of the day. I hope you start cooking again soon since I really enjoy your situations!.

I am a hashbrown addict & now I have another reason to cook them. Looks great & I will definitely be doing this. What kind of set up do you have blocking the exit to the rear grease cup so you don't lose any food through the hole?
We love hash browns as well. Its a scrapper holder from Blackstone. I slide the holder over the grease drain and that where I keep my scrapper. It helps with losing food. I must warn ya though, The scrapper does get warm sitting back there.

They are dehydrated hashbrowns! Don’t let that stop you from using the frozen type they work just as well! 😊

Lyle keep an eye out on Walmart. They have the 36 inch with a lid for 299.00 GREAT deal with magnetic strip for tools, 8 hooks for utensils and a tuck away paper towel holder and the sides fold down for easier storage.
You normally have to buy the lid for around $120 alone, so I cannot recommend buying anywhere else.
Actually it seems like Walmart was the only place to have that model come to think of it.
I MUST SAY, THAT SURE LOOKS LIKE A GOOD MOIST HOT TASTING OMELET..I HAVE NEVER TRIED COOKING A HASH BROWN OMELET BEFORE, BUT I DEFINITELY WILL BE TRYING IT FOR MY NEXT BREAKFAST..

Also I put it on medium until I put the eggs on I had to then crank it up for the eggs to cook well and fast on my little plug in griddle .

I tried this yesterday on the Vevor 21" griddle at around 350F. I cooked the potatoes using Bacon Up triple filtered bacon grease and filled with scrambled eggs, bacon lardons, and American cheese. Came out amazing!! Thanks for the great video!
