    This vegan sour cream is tangy, thick, and creamy. It’s also cultured so it has all the benefits of fermented foods. It’s perfect on baked potatoes, chili, enchiladas, tacos, or any other Mexican-inspired dish.
    A few years ago I realized that fermentation has a truly special and significant place in the world of food development. Sure, you can add lemon juice, apple cider vinegar, or any other flavorings to foods, but they will only get you so far with regards to flavor. The reason is that fermentation produces not only acids, but also other compounds that contribute to the unparalleled fermented flavor. This is why fermented sour cream, be it vegan or not, is mind blowing.

    I love that you have your omnivore husband do the taste testing. Those of us that are transitioning can get a better idea of what the food tastes like that you are making.

    I REALLY love your hubby's reviews on your recipes! It is the main reason I subscribed! I am not a vegan,but I love vegan recipes. My hubby is less of a fan of vegan recipes. Lol sometimes when a vegan recipe receives rave reviews of being JUST LIKE the non vegan version,I try it and it does not taste anything like it. I have come to the conclusion that it is because vegan's tastebuds have changed so they either dont remember what it tastes like ,or because they eat a healthier lifestyle that to them it seems similar. So I looke forward to your hubby's reviews because then it is a meat eater's point of view...similar to what my husband's might be. This is so crucial for me! I hope u keep him on EVERY recipe! Thanks for ur channel!❤

    I've done pretty much the same thing, but I did use roasted cashews. Haven't gotten around to ordering raw ones online. But even with roasted cashews it tasted very close to real sour cream and my girls agreed and happily used it. I'm sure it's way better with raw cashews though. Also, when I am in a pinch and can't wait 24 hrs for the culture process, I add a little ACV (with the "mother") and that works pretty well too. 😉😊

    I'd like to mention that cashews are vegan, but usually come from forced prisoner labor in developing countries. The reason cashews are never sold in the Shell is because they are from the poison ivy family, and shelling them causes chemical burns on the workers, because wearing gloves is said to slow them down during shelling.
    It may be that using cream cheese from cows in some circumstances could be less cruel than using cashews. Something to consider anyway.

      Abi Nor-Mac yup... I’d also rather use Macadamia nuts or Almonds. It might be worth the experiment...

    • @AbiNomac
      @AbiNomac 5 лет назад +1

      Tanya S - I have been reading up about cashew nuts and they are not as healthy as people think so I would prefer to substitute them.

    • @tanyas6643
      @tanyas6643 5 лет назад

      Abi Nor-Mac I’m living the keto lifestyle and therefore cashews are pretty much not a good idea. (Too many carbs and not a lot of beneficial nutrients, for any small amount I could eat.)

    • @AbiNomac
      @AbiNomac 5 лет назад

      Tanya - So your understanding is in line with what I am discovering. I have been getting my info from doctors who are not only focused on medical science (and practice it) but are also concerned with healing from a nutritional point of view. Cashews I understand should be avoided. They carry a chemical in them (sorry I cannot remember its name of the top of my head) that will cause you put on weight, and here is a bit of a downer, tomato seeds have the same chemical and so do red capsicums :(
      I am just getting use to the idea of scraping the seeds from my tomatoes.

    • @tanyas6643
      @tanyas6643 5 лет назад

      Abi Nor-Mac You May be talking about lectins?! In small amounts, it’s fine. (Like seeds in tomatoes, for example.) But legumes,like cashews and beans, have a lot. (The lectins in beans can be made less troublesome by soaking and then pressure cooking.)

    My daughter is allergic to cashews. What other nut could I use?

    • @Adriana.Gabriela
      @Adriana.Gabriela 5 лет назад +1

      I think any nuts would do. I'm just not sure if those with a specific taste, like walnuts and hazelnuts, will have their usual taste after fermenting (they shouldn't beacuse e.g. if you make yoghurt from coconut flour, it doesn't have coconut taste after fermenting). But if they do leave their usual taste, you can use almonds. They're pretty much neutral

      @@geraldinethompson8195 You're welcome! However, I haven't tried Brazil nuts myself, so be forewarned. Another suggestion would be to use chickpeas; I have seen them used to make vegan whipped cream, which looks identical in colour and texture to real dairy whipped cream. However, I don't know how the fermented product would taste.
