Good luck getting a discard bowl in a restaurant. I asked for a finger bowl recently (mussels) and she looked at me like I had 3 heads...etiquette lesson followed, as did a bowl of extremely hot water sans lemon.... :)
1: raise your hand to the nearest staff ( don’t wave or be rude), and keep your eyes fixed on them to they notice you ( often they can be distracted, don’t take it personal). Have your gace « soft , but clear», without showing your feelings of the missing item. 2: Now you have their attention. Simply give a firm order « one tray or small bowl». Give zero explainations. - never complain, never explains. Simply give the order. Without a undertone of beeing a asshole or beeing wexed - Many staff are often unskilled. This is how it is in the industry. Many are often also low paid, but hard working people. Show them respect, by treating them with dignity - if the staff is rude/trolls/insult you. Simply look at them with a cold firm look. Don’t get draged into their narcissism/toxic ways. This is also to be expected from time to time. And is nothing to take personal.
