  • Bhindi (Okra) curry is a healthy & delicious curried dish made with herbs and warming spices, it is a dry masala type curry (sabzi) that can be eaten with Raitha, Salad, Naan, chapatti or even rice
    It's a simple & spicy dish but packs a punch when it comes to taste & flavour
    Ingredients :-
    1 kg Fresh Okra / Bhindi
    5 Whole Fresh Green Chillies
    Fresh Coriander (garnish)
    2 Fresh Green Chillies (garnish)
    1/2 Lemon (garnish)
    3-4 Onions chopped
    2 Tomatoes chopped
    1 tbs Garlic & Ginger Paste
    1 tsp Salt
    1 tsp Garam masala
    1 tsp Cumin powder
    1 tsp Coriander powder
    1 tsp Turmeric
    2 tbs Yoghurt
    1/2 cup Oil
    2 Fresh Green Chillies (garnish)
    1/2 Lemon (garnish)
    Method of cooking :-
    First of all wash and dry the ladies fingers
    And then chop them into pieces
    Now add some oil into your choice of saucepan (I’m using the clay pot)
    Once oil has warmed up add the chopped onions and sauté for 10 minutes until translucent
    And spices and green chillies and mix together
    Let it simmer on a low heat while you fry your ladies fingers
    Add some oil into a wok and at up
    Once oil is hot add chopped okra and fry until the slime has disappeared (about 5-10mins) and they have a little golden colour
    Take out into a strainer
    Now lift the lid on masala and add 2 tablespoons of yoghurt, mix together then simmer for 5-10 minutes
    Now add your fried okra and mix together
    Pop the heat on low cover and let it simmer for 10-15 minutes
    Lift lid and your okra curry is ready transfer into your serving dish garnish with fresh coriander
    Serve and enjoy with your choice of naan bread, chapatti or rice
