I love this recipe... We are going to have get together with my husband family..who love Indian food. So I will this Ocra dish, chiken masala with yiur wonderful recipe..thank you for sharing
I will try this today. Kudos on your easy-to-follow recipes. Update: I used ghee instead of vegetable oil and the smell was overpowering like beef/mutton or gaminess which my wife disliked. She asked me to change it to vegetable oil so for the future no ghee. All in all, everything turns out like what you mentioned “No Slime” and it is simply delicious for me. Will try cooking again with vegetable oil in the future. So fast and easy. Love those spice aromas on the potatoes and okras. Thanks for sharing this recipe.
thank you.A young lady served me dry okra without slime more than 4 years ago. I loved it and have been looking for the recipe. Much Appreciated. -I dont mind the slime , but the dry version was a sweet surprise.
Ur video encourage me try again okra recipe . I tried once in the past and slime make me frustrated and promise my hubby I will never make this veg at all . But u change my mind and today I try following ur recipe n it works I m sure my man will be happpy today that I made what he love . Thank u
IMPORTANT TIP: If you REALLY want to eliminate the mucilage (slime) from okra, use BABY OKRA which are only about 1" to 1-1/2" long, and DO NOT CUT THEM. Leave the calyx and beginning of the stem on as they are perfectly soft when cooked, so there is no need to cut them at all and let the mucilage leak out. By cooking them intact like this the mucilage cooks on the inside and you are left with a dry-okra dish that everyone will love.
@@meta5291 Acid will change it to something not as slimy, but just as much of the mucilage leaks out. Using uncut baby okra prevents any mucilage from leaking out.
I am Mexican but my husband is from India and since I don’t know how to cook Indian food, I check youtube videos to attempt to cook something Indian. Thank you so much for the step by step explanation, and the tips. I definitely surprised my hubby with this recipe 💕😊
I must admit, I despised okra when I was a kid. It was the slime thing you mentioned in the title. I have since learned how to cook it and I do enjoy it immensely now. I love your East Indian recipes and look forward to trying this one. Thank you for your hard work, Bumbi.
Perfect timing, I got a bag of frozen Okra about a week or so ago and have been meaning to look for a good recipe for it. My laziness has been rewarded, a good recipe has come to me ;-)
I'm an Okie and grew up on fried okra, sometimrs it had romatoes cut up with it. I'm going to try this recipe. Maybe for breakfast with ham and eggs. Thank you for a new idea that sounds delicious. Thank you!!!!❤
Just made this for lunch I added garlic and ginger. Only had a lime no lemon but this was easy and delicious full of flavor. Thank you for sharing please continue doing videos!!! Very good info in a nicely edited to the point video 👍👍👍
Yum. My two okra plants are taking their own sweet time to produce okras because of the unusually wet summer this year. I’ve harvested only two so far, but hopefully will get more soon, and then can try this recipe.
This is a simple yet extraordinary dish. I'm constantly flabbergasted by the number of people I encounter who have never cooked or eaten okra. Okra is a physical, mental, emotional & spiritual necessity! There are no metaphysics without okra! A person is not ontologically complete unless they have eaten okra! Oh yeah.
Some people hate them & see them as slimy. Once I told my cousin "Then the person who made them for you didn't understand how to handle them"...she replied "It was my Mum"..ouch😅
@@j.w8680 When I was in the Atlanta Georgia area in the mid-1990s, I looked forward to eating some okra, & most of it was awful. It wasn't sliced, the pod was cooked whole, into a flavorless slimy almost mash. Very very disappointing. I finally found a little restaurant that served it properly (sliced, & sauteed almost until crisp) with collards and mustard greens. There is a cold okra soup recipe that is quite "slimy" but also incredibly delicious. It's an acquired taste, as they say, but anyone with culinary curiosity would love it. Must dress with hot sauce.
Tried this and it turned out deliciously. The spices and instructions are spot on, Bumbi. ❤ as far as i know, never add water when stir frying ladies finger & They'll stay dry.
I LOVE THIS! I've never eaten okra and I've been wanting to prepare okra for THE.. LONGEST TIME! 😅 But I've been procrastinating and ignoring it. This recipe has FINALLY excited me & made me desire to prepare it. Yaaay!!! 👏👏 👏 Thank you so much for this simple yet amazing recipe! ♥
I’m a big fan of Okra so today I had to make your Masala Bhindi Aloo Fry. Once again Bumbi, this dish did not disappoint. Absolutely delicious. Thank you for always providing us with the wonderful video instructions and recipes.
Today, I will be making this for dinner, wish me luck. I am looking forward to cooking okra differently 😋. Thank you for the recipe. Update: I did indeed try this recipe like I said I would and I loved it. I served it with steamed brown rice, I now have a new way to cook okra. Thanks again.
Hi Bumbi. Today, I tried again and this time using regular vegetable oil. Furthermore, I have adjusted the spice ratio according to my taste. My wife will approve of this. Getting the hang of cooking an Indian recipe. Super fast and easy to follow using your recipe.
No need to wash the ochroes, just wipe clean with paper towel that's all that is needed. In this way it has no way in being wet and getting slimy. We have always done this and hasn't been sick of not washing it. Another good tip is Not to cover the pot since this creates steam and ochroes can be slimy!
Not being a huge fan of okra I was intrigued by this recipe. Was very pleased at the texture and lack of sliminess of the okra. Was also pleased with how long it DIDN’T take to make. Will add it to my rotation! Thanks for another great and tasty recipe.
We always have curry. I had to buy the other ingredients (spices mainly) through Amazon. I am in the United States. I grew up eating Okra with fish and Chicken. I have learned to move toward more meatless meals for healthier diet.
I tried this one of your Bumbi ! Excellent taste came out well no slime ; I had with garlic and coriander rottis from tesco and yogurt because it was spicy 👌😋 Thank you 🙏
Hey Bumbi , I did this one again yesterday. Sexed it up with a bell pepper and some cashews and served with a yogurt and mint sauce over basmati . OMG. It was da bomb 💥
Hi Bumbi! I grow okra and it grows prolifically here but I still havent found a way to get rid of the slime. I have tried so many things, including baking before cooking. I will try your trick for the slime. Thank you for the tip! I look forward to more recipes!
I boil the whole okra for 2 minutes in plain water. After boiling the whole okra for 2 minutes, let the okra cool completely. Then cook as usual. There will be very little no slime. Of course, add salt at the end.
oh no! boil equal to slime always. another simple way is to stir fry and add a little corn or chick pea flour and fry till flour is crispy dry.@@gloriaf6971
Thanks for the inspiration. Definitely will try. I've been sautéing frozen cut bindhi as that's the easiest to find at the grocery store here in Canada. Even got my daughter to enjoy it along with Sautéed spinach or methi, Dhal, a meat or fish dish and rice. I still chuckle at the comment you made In another video about drama at the table. My daughter hates the cardamom and cloves in food preparation, not the taste, but the whole spices being there 😅😂.
Okhras are one of my fav. Veggies.Summer is setting in and these ladies fingers have started showing up in our local market. Must try this out soon Thanks Bumbi
Thanks for giving me the idea to use potatoes with ladies finger! I'll certainly try this soon. I might complicate the process a bit. As I always do, I will wash, dry and chop the ladies finger, and fry it first. I will also boil my potatoes and then fry it separately with your ingredients. Finally, I will mix the two and then add the masalas and the rest of the ingredients. Thanks and regards.
Hi Bumbi, I made this today for lunch. I am a big fan of okras and this was so yummy, I will definitely make it again. Thanks for sharing:-)
So very happy to hear that. I know you love okras and I am so glad you liked this recipe. Thanks for trying it out and sending your lovely feedback.

I usually freeze the Okra’s the day before, it work wonders. I learned this from my in-laws. Try this someday, enjoy.
First recipe that succeeds in suppressing okra slime. All this time I was deep frying the okra before cooking. No need to do this at all. Many thanks.

I never thought vegan food can be this appetizing. As a vegan for 20 years i would enjoy making this. Thank you

Funny how my people will actually go miles to preserve the slime such as not cooking it too much and adding bicarbonate of soda.
