We try to eat meat-free two or three times a week and this dish is now on my rota of dishes, particularly on a Friday night when you're exhausted from a busy week at work and all you need is a curry and a cold bottle of beer. I recently discovered your channel Bumbi, and I absolutely love it! Many many years ago I was introduced to Indian food by my future mother-in-law who came from Calcutta, and she taught me how to cook a variety of dishes. As a 17 year old Aussie girl, raised on typical meat and veg meals, my taste buds were awakened and I was in love with Indian food from the first bite. I used to watch her in the kitchen and write down the ingredients in a note book. 47 years on and I still use some of those recipes. One of my sons inherited the cooking gene and he loves to make curries too, and has already made several of yours in the last few weeks. One of our family's favourites has always been chicken Khow Suey (yes, technically not Indian but Burmese) which my MIL used to make, with lots of gravy. I'd love to see your take on that Bumbi. I just made this cauliflower curry tonight but used carrots as I didn't have potatoes, and it was amazing. You have some other fabulous vegan dishes which I'll be making as it's Great Lent now for us Orthodox folks for another 6 weeks. Thanks so much Bumbi 🙂

Excellant - will try it. Re: chilli seeds - they do NOT add "heat". It is the Capsaicin in the flesh of the chilli that induces the "heat".
Capsaicin is in the inner white pith of the chilli where the seeds are attached. In order to remove that the seeds also need to be removed
