    We dice ours small and toss in oil, salt and cornmeal then roast.

      You can also dust some gram or corn flour, pepper and seasonings you Ike to the cut okras and deep fry golden brown.

      My aunt and my grandmother made the world's BEST FRIED OKRA! They were to die for. I I didn't know you could cook it any other way. Man, I wish I could have it again. They are both gone now. 😓

    I made some like this in the air fryer a couple of weeks ago and ate them all, about a half pound 😂 They were so delicious but I learned the hard way what okra can do to the digestive system 😬

      I don't like the slime. When it's not roasted or deep fried, it's slimey. I love the seeds inside when i deep fry the battered okra. I also fell in love with mild pickled okra, especially when i was pregnant 😂
      The first time i even heard about pickled okra was when i was at a salad bar, and i ate some with my salad, and it was so good. I don't buy the hot pickled okra, just the mild.

    I had a buddy that would do this on a hot - ish smoker/ grill with wood chunks as a snack at cook outs while waiting on the ribs to get done. Was amazing.

      Wash it in morning and use it in evening.. so that they're completely dry.. Fry them in 1 tablesspoon of oil before using them in any dish.. get No slime

    Shopping for fresh okra is unpredictable. What you want is tender, small pods, not the overgrown woody ones .

      It’s not difficult to grow and yields constantly for many weeks. The only thing you need is a sunny spot.

      groww your own, its the most forgiving crop and gives fruit every day or two. good to freeze or dehydrate for winter too.

    Never liked okra until I just sautéed it simply in a touch of oil. Now I love it. Can’t wait to try this. Maybe for Easter 🐣 2024

    Young okra is usually best for other cooking methods on account that it's tender and soft,not hard. We used to have to keep picking okra that way while they're still young

    I grabbed a bag of the freeze/fried okra from Trader Joe’s, ate the whole bag, wished I’d bought at least two more. Okra grows fantastic in my area and I’m here for it! (Don’t mind me while I go buy a bunch of seed packets…)

      I LOVE okra. I’m jealous that you can grow it. I have tried growing it but it just doesn’t do well. I don’t think it gets hot enough for it.

    Instead of that, slice them in 1/3 - 1/2-inch circles and cook them on high heat in a cast iron skillet. And use a blackening spice blend. Takes a while to get there, but any slime that starts at the onset of cooking is quickly turned into flavor, (And dries up). I've been cooking okra this way, (and in gumbo), for over 30 years.

    I learned the way turkish women prevent okra from getting mushy.
    You never cut it, and take care to clean the section around the stem without hurting the skin!

    Well I had high hopes but I covered for 12. Uncovered and cooked for 12…then cooked for 8…then cooked for 4….then cooked for 4 more….then a few were crispyish….then cooked 6 more and most are a little crispy. Oven temp was accurate with a manual thermometer. So needs some tweaking for sure

    Okra or Vendi was our almost every week breakfast.. round cut okra + chopped potatoes with turmeric/hot chili powder/salt..fried in oil and served with porota ( oil fried tortilla) … okra can be cook with fish/ lantil / even by itself …

    If okra is too large, they become tough, stringy, and tastless. I love the slippery slime in okra, especially in greens.

    I learned this trick in Greece during the 50’s, main difference is the okra is left whole, tossed in olive oil with salt

    I have lived all over the world (Italy, Greece, Turkey, Brazil, Canada) and all over US (FL, COLORADO, MINNESOTA, NJ, NE and NY from NYC to Western NY to Capitol region and up near Montreal. Have had okra in many forms and types of stews. Never roasted until moved tonGeorgia and then not until going to farmers market where they roast whole okra over open wood fire in a screen bin that rolls them around over the fire in batches. IT IS THE BEST. Can never get enough. Note - when handling fresh okra it has a fine hair on it that some people can be allergic to. Gives you awful itching rash. May need to use surgical gloves. TRY ROASTED OKRA IT IS THE BEST.

    I love these people, but covering the okra with foil caused mushiness and didn't even out the browning at all. Do it without the foil and flip them. The truth is that you get slimy okra if you steam them for the first half of the cooking process.

      I guess they didn't wash okra at all. Being an Indian I have tried okras in all different ways, and only deep frying has given me good results without mushiness.

      I have. It works pretty good if you get the okra as dry as you can (pat it with paper towels, remove the ice crystals, etc) and then give it a few minutes in a hot oven to dry it a bit more before you prepare it.

    Is it okay to wash okra right before roasting? Or do I need to pat it dry and give it time? Im Indian and I have always loved the deep fried diced okras. Deep frying wet okras take a lot of time and oil

    Have you ever sated chopped Kara ~ 1 cm slices with thick slices of yellow onions after getting rid of slime and adding some salt, black and red pepper and say half a lemon juice. Absolutely delicious!

    You take green banana and roast in same way. Either keep thin or thick as per as choice.
    Use same method for taro. You half boil taro adding ordinary vinegar.
    All skin will come out without itching your hand.
    After removing skin bake it.
    Add lemon 🍋 or vinegar.

    What is the reason for using vegetable oil not EVOO?

      Evoo is expensive for good oil and it breaks down in higher temperatures. It also has a stronger flavor. I personally would use avocado oil because it’s a neutral flavor but has a higher slope point.
