    I tried this but it didn't come out right. It was more of a thick stew instead of a soup. It still tasted good - just wasn't what I was expecting. I'll be trying it again.

      Regular pot, more water needed but it should be ready in around 25 minutes. With other (regular stovetop) pressure cooker, after it comes to full pressure, 5 minutes cooking, then let pressure drop naturally. As masoor dal cooks really quickly, I usually just use a regular pot and keep an eye on it as it bubbles on the back burner, it's usually ready even before all the other dishes are done and happily waits and stays hot.

      Labelled as "hing", it usually comes in a bright yellow plastic container. In this form, it's compounded with rice flour and turmeric to make it in a powder form that measurable, readily usable and is the most common form used in domestic Indian cooking. The pure extract - resin, actually - is a darkish and hard lump that needs hefty pounding to pulverise it, so it's not really practical for daily use. I once thought I'd be a smart-alec and bought the pure lumps of resin to try out - tried to crush it on my cutting board with a meat mallet; well, the lump stayed mostly intact, but embedded itself into the board, leaving an indentation that stayed there for good! We all laughed about it later and it makes for a good dinner party anecdote. Much later on I learned that those pure resin lumps are used mostly whole, stuck onto the underside of a pot lid with dough etc., and that in itself will be enough to give flavour to the dish.
      Don't be alarmed when you first open the container of hing, it smells pretty powerful but that's how it is. A little goes a long way, and the flavour changes from unpleasant to enticingly aromatic once it's sizzled. Aunty Manjula is very practical and instinctively uses all three anti-flatulent and digestive items in the dal - turmeric, ginger & asafoetida - so one will find the dal will not bring on the dreaded "wind" afterwards! That's a good preventative and I also add all three items to ANY dal or bean dish that I prepare so there won't be any after effects!
      [Asafoetida is resin or gum-like substance from a plant in the celery family, it's "lanced" in a way similar to how opium might be harvested. The dark gum is a powerful anti-flatulent, digestive and also a substitute for onion & garlic, both of which are avoided for certain religious reasons etc.]
