    You can make this quick delicious Indian instant pot recipe for masoor dal on a weeknight or anytime. This is a vegan red lentils recipe packed with protein and flavor. I love red lentils as they cook quickly and have a wonderful creamy texture. With just a few spices, you can make this flavorful dish come alive in your bowl. Cooking in an instant pot is quick and easy and lets you get dinner on the table in a flash, but you can make this easily and quickly on the stove, too.
    Ingredients:
    2 cups red lentils (masoor dal) washed well
    2 tbsp vegetable oil
    1 large onion
    6 cloves garlic
    1” fresh ginger
    1 large jalapeño seeded
    2 tomatoes, chopped
    1 tbsp cumin seed
    1 tbsp mustard seed
    1 tsp coriander powder
    1 tsp turmeric
    1 tsp Kashimiri red chili powder
    2 dried red chilis
    6-7 curry leaves
    1/2 tsp asafoetida (hing)
    2 tsp salt
    8 cups water
    Instructions:
    Heat oil in the instant pot on the sauté setting or in a pot over medium heat. Add the mustard and cumin and cook for about 30 seconds until the aromas start to release. Add asafoetida and dried chilis then add the curry leaves. Fry for 30 seconds and then add the onions. Cook for about 3-4 minutes and add the jalapeño, garlic and ginger. Cook another 5 minutes until softened. Add the dried spices, tomatoes and salt. Cook down or about 5 minutes. Add the rinsed dal and 8 cups of water. Stir well. Cook for 5-10 minutes under high pressure then let the instant pot cool and pressure release naturally. If using the stove, cook for about 20 minutes until the dal is soft and creamy.

    I halved the recipe and this makes a ton of food! I’m gonna make a bunch of freezer meals with this I added some turnip greens and it worked well! Never tried asafetida before and wow it is powerful stuff I’ll have to try it in some other recipes!

    I have the Mini-Delux - when halved, this recipe is a perfect match for my IP! I'm very fond of red lentils, no one needs to starve with basics like this around - dals, soups, flatbreads, etc, so economical, tasty, quick to cook & very nutritious. 😇🌠 Great recipe, will be trying today! 🙋

    I have an Instant Pot and a bunch of red lentils to use up, so I started searching for relevant videos. This one looks delicious and I can't wait to try it! I'm in the U.S., but I have a large Indian food mart near me, so I know I can get the spices. I especially like that this recipe doesn't depend on coconut milk, which adds a lot of fat.

    I have been having IP problems with the food burn message. I always soak legumes overnight and I think they may then be unable to float and immediately stick to the bottom. I have noticed the split reds soaked have these black flecks that look like insects. Since I have found them EVERY time and purchased masoor from everywhere, it must be part of the plant but it sure looks like bugs!!! Yuk. We all know what weevils look like in our grain and it really turned me off so started to use other legumes. But reds my fave. I love to use fenugreek seeds along with my faves cardamom and garam masala. Thanx for showing, I definitely have been overlooking and overcooking, nevertheless still delicious and have been making weekly for about 18 months now!!

    Do you ever stick a can of coconut milk in there?

      I think it would be good, but I generally don’t use coconut with dals. Traditionally they are more simple and let the flavors of the legumes dominate. I do make a wonderful beet curry with coconut milk and peanut based sauce. I’ll add that to my list of curries to do for the channel.
