      This lentil soup is lovely. But... could your kitchen test which vegetables or seeds would create whole protein variations on this lentil soup, for vegans or vegetarians, while retaining this good flavor and texture? For instance: chia or hemp seeds, etc in the soup; toasted sesame seeds in the mint garnish; or bulkier items like white, brown or wild rice or corn as side dishes.

    I'm north African, this recipe is usually vegan, we add carrots for taste and color. Some people add potatoes for thickness. On the spices, we add turmeric, black pepper, cumin and coriander, ginger and cayenne are okay to add to preference, we don't add cinnamon though. The topping sounds more turkish than North African.

    Here in Greece we use whole lentils for soup, lots of onion, garlic, bay leaf, oregano, tomato passata, vegetable broth, salt, pepper, olive oil, served with a chunk of feta, and some rustic bread, tastes like heaven!

    This was delicious. Thanks to some comments below as it really helped. 1. I had an herbal mint tea. Chopped the mint and lemongrass w/i bag. 2. Added minced carrot before adding onions. I only had a red onion and it worked. 3. I did use 1/2 butter y 1/2 evoo 4. Added pinch of kosher salt and sq of lemon into paprika mix 5. Topped with sprinkle of parmesan 6. Served with garlic bread
    Did I mix some cultures? Probably but it is called 'I want to make this now without running to grocery store'. It was very tasty!!

    I just made this soup, 3x the recipe, so so so good! I made vegetable broth from scratch instead of chicken broth too, topped it with olive oil with mint and paprika instead of butter, some nigella seeds and pumpkin seeds. Served with French baguette. Everyone loved it, a must try! ❤️

    You omitted one important step: RINSE those lentils thoroughly before adding to the pot.
    Rinse until they no longer have that foamy stuff on them… at least a minute.
    Always rinse lentils before cooking.

      The printed recipe calls for rinsing the lentils. Sadly there are frequently omissions from the videos and other differences between their actual recipes and their videos.

    This is so good! I use vegetable broth instead of chicken and olive oil instead of butter for the garnish. I've made it a few times and it's always delicious.

      Yes I would do the same, partly because it's vegan that way and partly because using butter sounds disgusting. I find people are either used to butter's over fatty, cloying taste or used to olive oil.

      Ab-so-lutely. US chefs are way too attached to making otherwise veggie dishes with chicken or beef broth. If it's a meat dish, go right ahead. For a veggie dish, make your default ingredients meatless. I'm not vegan, but I think featuring totally non-animal (no butter here) as equal option on veggie dishes where appropriate would also be a good move

    When I lived in southern Macedonia, (now called North Macedonia) we used the garnish you made over toasted bread. Similar to Italian garlic bread.Also I didn't want to open a can of tomato paste for a tablespoon, so I put in a tomato I already had. Amazing. If you are out of mint, its the same stuff in the tea bags.

      Omgosh thanks for your comment as I never have mint, but always mint tea bags. Never thought of doing that 😁🙃.
      When I open the can of paste for a little bit I pop the remainder on non-stick surface in the freezer. Take the frozen maybe 1/2" thick piece and put it in a freezer bag. Cut off pieces as need be.

    i made this yesterday and it's delicious. i decided to purée mine for an even creamier texture. i also served it with a dollop of yogurt and some olives. very comforting soup!

    Tunisian, Egyptian, Lebanese cuisines don't use any broth at all, even the turkish. Blending with a handheld takes this soup to a different level. And that last drizzle, i love it

    I learned to cook red lentils from a good friend who's Iranian, and the spice blend is very similar. She adds potatoes to hers to thicken it to more of a stew consistency, but I like adding carrots & sweet potato to thicken it.

      If you love creamy soups (and so do I), use a hand blender instead of a whisk to give the soup a smoother and creamier consistency.

      @@alanvonau278 also works great if you boil the lentils in a pot and cook the vegetables and spices in another pot, whisk the hell out of the lentils, then add the vegetables. Otherwise the salt from the onions and the chunks of onions make it harder to hand blend or whisk.

    This looks just the ticket as the cooler months approach. A little spicy kick is right up my street, and I love your 'test, tweak, and test again' principle. Red lentils seem so exotic in recipes like this-it surprised me to learn that most are grown in Saskatchewan.

    I’m 67. I’ve hated lentils all my life. My mother made them when I was a kid. I hated the flavor so much that I would wait until she wasn’t looking, then I would wrap them in a napkin and stuff them in my pockets so I could throw them away later. Imagine my surprise, while visiting Turkey. Lentil soup is served in most restaurants. I reluctantly tried it. To my shock, they were absolutely delicious. I ordered and ate it a few more times. When I go back home I intend to make my own lentil soup.

    I just made this soup and I love it! The ratio of lentils to liquid is perfect. The spice blend is very good and I was happy to have all of them on hand when I found this recipe. I'll definitely be making it again! I used vegetable broth and olive oil, and I didn't even make the garnish. I used my blender for about a third of the batch, which made it thick and creamy. It really doesn't get much easier than this!

    I tried this and it's amazing. I didn't use butter in the beginning, used vegetable broth instead of chicken, and skipped the buttery garnish and it's delicious and super healthy!

    It is a Turskih recipe called Mercimek Çorbası" and the way you sauce on top also proves this.

    This recipe is outstanding. The flavors positively sparkle! I made it as written, with the exception of adding one chopped carrot with the onion and using a stick blender because my pot was too full to use a whisk. I had no dried mint, but I had dried cilantro, so subbed that in the butter/paprika garnish. I definitely will make this simple, delicious, and satisfying soup again. Thank you Erin!

    Sweat

    This is what was for dinner tonight! It smelled wonderful as it was simmering but I felt the spice was a little light until the lemon was added-it really did make the spices pop! It was quick easy and delicious. So much so I whipped up a batch for lunches this week! Easily becomes vegan if you swap out the butter for olive oil! Ladies, look you make me think I'm a chef too!! 😁😁😁

    I wish they'd mentioned how this is basically just an Indian Dal Tadka with North African/Middle Eastern spices. That "garnish" is just a standard indian Tadka (hot oil with infused spices used to garnish).

    Had some Berbere in my cupboard that I rarely use (got it as a free jar from Penzeys), so I used that with some cumin. Also added potatoes. Turned out good.

    This is ‘dal’ …. In India, this is cooked and eaten with chapati or roti or Naan, every day. It can be cooked with other varieties of lentils too, and is usually served with a side dish of vegetables.

    Clicked on the link to look at the recipe and one has to to commit to a trial subscription to gain access. I will just try Yeung Man Cooking who has a similar red lentil recipe but he includes the recipe in the "more" section. America's Test Kitchen is just shooting itself in the foot. If you are going to do a video just include the recipe, I usually skip America's Test Kitchen because of this monetization practice but I thought just maybe when they wrote" Get the recipe" before the link. In fairness it was an informative video and well presented video.

    When you pour yourself a bowl you should stir in a dollop of Greek yogurt. Really nice compliment.

    Made two batches today, one as recipe is written and one for a vegan using subs for butter and the chicken stock; I used coconut oil and vegetable stock for my second batch...the second batch needed a tad more salt, but overall both batches were so darn good and came together so quickly. My vegan went home with enough soup for a couple of meals sans the garnish. Keeper!
