  • How to Make an Authentic, Healthy Chicken Balti With Chef Hussain.
    If you love original, pure Indian cuisine you're in the right place. We don't do gloopy, watery or oily sauces. Straightforward, honest food - just how we make it at home. For a vegetarian or vegan option, substitute the chicken for tofu, beans or legumes.
    🍛 What is a Chicken Balti?
    Originating in Northern Pakistan, the Balti is a fresh, fragrant curry that has a thick tomato base 🍅
    Bought over to the UK in the 19th century, it's become a popular dish in the UK, and you can now find it in most Indian restaurants.
    The name Balti actually refers to the dish it is cooked in - a double-handed deep wok-style pan - although you don't need this pan to make it.
    🔥 Is a Balti Hot?
    A Balti is made with chillies. It's unlikely to cause you any discomfort if you're used to spice, but if you don't like too much, consider cooling it down with some natural yoghurt.
    🛒 Ingredients:
    -400g boneless chicken pieces in 4 tbsp rapeseed oil
    -1 large onion
    -2 large tomatoes
    -2" ginger
    -4 small garlic cloves or 2 medium-sized, cut into big pieces
    -salt to taste
    -1/2 tbsp Kashmiri chilli powder
    -1/4 tbsp turmeric
    -1/4 tbsp garam masala
    -a pinch of Kasuri methi
    -2 green chillies and a sprig of coriander for garnish
    For the rice:
    -2 bay leaves
    -1 medium cinnamon stick
    -1 cup of basmati rice
    -pinch of saffron
    -pinch of Haldi powder
    -pinch of salt
    -pinch of garam masala
    📖 Recipe:
    1. Add four tablespoons of rapeseed oil to your pan and slowly heat.
    2. While you wait for the oil to heat up, dice an onion.
    3. Place the onions in the pan, there should be a subtle sizzle.
    4. Leave the onions to fry and chop up four garlic cloves and a small piece of ginger.
    5. Once the onions have browned, add a pinch of salt, garlic and ginger.
    6. Leave to infuse and chop two large tomatoes, then throw them in.
    7. Cook for 2-3 minutes on medium heat and remember to keep stirring.
    8. Add half a tablespoon of Kashmiri chilli powder, a quarter tbsp of turmeric, a quarter tbsp of coriander powder, a quarter tbsp of curry powder and a pinch of Kasuri methi.
    9. Add the chicken to the pan and let it simmer for 3-4 minutes.
    10. Chop and add two chillies and cook for a minute (alter to your preference).
    11. Add one cup of water and reduce heat so the sauce is bubbling.
    12. Add another pinch of Kasuri methi to your balti, followed by a pinch of coriander leaves.
    13. Cook until you're happy with the taste and consistency, then spoon the balti into a balti dish and garnish with fresh coriander.
    14. Enjoy your curry!
    For the rice:
    1. Heat some water in a pan for the rice and throw in a two bay leaves and a medium cinnamon stick, a pinch of saffron, a pinch of Haldi powder, a pinch of salt, and a pinch of garam masala
    2. Add the rice and boil for 8-10 minutes - or to your desired texture.
    Chef Hussain's tip: if you want a rich, tasty curry, use top-quality ingredients.

    As a former cook of Asian cuisine - having been taught by a Karachi born and bred Family - there is so much effort in the cooking process when it comes to good Curry and such respect and appreciation of ingredients - the result is the great reward at the end. Watching Chef Hussain was an absolute pleasure and I will try this recipe. What a wonderful video and chef who is a pleasure to watch!

      Faraz Haider Jaffry - if Chef Hussain says it’s Pilau then it’s Pilau. It’s probably different to what you call Pilau but each chef, area will have their own version of Pilau. (I’m all Pilaued out now 😐)

    People moaning about hygiene and gloves and hairnets/beardnets.....do Gordon Ramsay or the Hairy bikers wear them when they're cooking for demonstration/video purposes? I think not. Do people complain? Again, I think Not!

      From a food safety standpoint you should always wash your hands after handling raw meat. After touching the raw chicken he touches corriander and the serving dish, but he's making a video. He probably doesn't do it when he's working. Some food safety managers believe beard snoods increase the risk of hair contamination because people touch their face more. Food preparers should never ever wear gloves (unless its for personal safety) as you don't know if a glove is dirty, but you do know if your skin is.

    Thank you for making such a clear and concise video about real Curry making. Having seen so many other videos claiming to be authentic and then using tomato puree, garlic paste, onion paste and even a jar of curry paste from a supermarket ! It's very refreshing to see a true master at work using simple natural ingredients that are not difficult to obtain. I shall be trying this one at home.

    Best demo I’ve seen. No madras powder, no mix powder, no paste, just a little Garam masala. Yes I know GM is a kind of curry powder but so many demos here using madras powder and paste and mix powder. Fresh ingredients, clear enough what is going in. Thoroughly nice seeming chap too. If this is a home garam masala mix, I’d love to know your ingredients, but for now I’ll use the one I have. Thank you for this great demo.

    Hussain, I've tried all of your curry recipes. All have been great. I really enjoy your videos, they are very easy to follow and never involve ingredients that I cannot obtain. I am perhaps lucky here in that Dudley, close to where I live has three very good Asian cash and carries. What I would say however is that if you still hope to get your subscriber list up to 100k then you need to get more videos on screen. I think that these should concentrate more on the curry dishes as I am sure that they are the ones most people would go for. e.g. Dupiaza, Dansak, Pathi, Vindaloo, Korma etc.

    Hussain this is fantastic love the presentation you show us how to cook with an understanding of how inexperienced we are, I made this last night for our dinner and I have to say it tastes fantastic and I will defn make this and your other lessons please keep it up. we are in the NW a lot Bury mainly and will come and taste your curries first hand :-) we are from Scotland

    For all the complainers about hygiene and so on this is a demonstration video on how to prepare this dish he wasn’t throwing the food at your plate out the screen so you could eat. What the hell has happened to common sense
    Once you start to cook this dish you may wish to take whatever measures to ensure your food is safe and sanitary.
    As for others please leave your prejudices to your selves this video is about culinary tastes and learning not about your feelings of hate hope you people grow out of your 🐚

    Made this with chicken. It was phenomenal. I am going to make it tomorrow with lamb and increase the simmering time. We need more of these videos.

      It worked out well. I simmered it for 2 hours after adding the seared lamb, and its as good as anything I have had in a restaurant.

    Its a good honest and traditional Pakistani curry. Ive watched literally thousands of "BIR" vids, cooked literally thousands and yes some taste good but i always end up making the simple, traditional curries and they just taste the best. Hussain, its a great video and please do some more! This recipe looks very tasty. Interesting you use garam masala and coriander, i'm going to try this.
