How to Make an Authentic Malai Chicken Masala in Under 20 Minutes | Mum's Recipe | Chef Hussain

  • How to make a Malai Chicken Masala with Chef Hussain.
    If you love original, pure Indian cuisine you're in the right place. We don't do gloopy, watery or oily sauces. Straightforward, honest food - just how we make it at home. For a vegetarian or vegan option, substitute the chicken for tofu, beans or legumes.
    🍛 What is an Malai Chicken Masala?
    While its core flavours originated in India, variations of this dish have been passed down through generations and adapted along the way. The chicken tikka masala is now a true British national dish. With its succulent chicken tikka pieces and creamy tomato sauce, it's a perfect illustration of the way Britain absorbs and adapts external culinary influences.
    🔥 Is it spicy?
    Traditionally, a Masala is not a hot curry. While it contains chilli powder, the cream within the sauce will cool it down, making it a medium spice. If you would like yours a little hotter, add more chilli powder.
    🛒 Ingredients:
    -500g chicken fillets (diced)
    -2 medium sized onions
    -2 vine tomatoes
    -4 tspn of rapeseed oil
    -4 cloves of garlic
    -¼ cup single cream
    -½ inch piece of ginger
    -1 tsp of dhania powder (coriander powder)
    -1 tsp of jeera powder (roasted cumin powder)
    -1 tsp of haldi powder (turmeric)
    -1 tsp of kashmiri chilli powder
    📖 Recipe:
    1. Add 4 tablespoons of rapeseed oil to a hot pan and allow it to heat.
    2. While the oil heats, finely chop two medium sized onions.
    3. Add the onions to the pan, you should hear them sizzle.
    4. Season with one and a half teaspoons of salt, add the pan lid and allow them to cook until they begin to turn brown.
    5. Meanwhile, finely chop 4 cloves of garlic and half an inch piece of ginger and add to the pan.
    6. Next, chop 2 vine tomatoes into chunks and add throw them in.
    7. Turn down the heat and stir continuously while allowing the contents of the pan to soften.
    8. Add your diced chicken fillets and stir well. Place the lid on the pan and allow the chicken to cook for about 10 minutes, removing it to stir every minute.
    9. Add 1 teaspoon of dhania powder, 1 teaspoon of jeera powder, 1 teaspoon of haldi powder, 1 teaspoon of kashmiri chilli powder (add less or more depending on how spicy you like your Masala. Stir well and turn up the heat.
    10. Add 1 ½ cups of water and continue to stir until the sauce thickens.
    11. Then, add a quarter cup of single cream and stir.
    12. Add the lid to the pan and let the curry simmer and thicken even more.
    13. It’s now ready to serve and enjoy!

    Thank you SO much for making these videos so detailed AND more importantly giving the written recipe in the description REALLY helps me to be prepared when i start the video and cooking process. I am an american white girl and I have had so many problems finding something this detailed. I love indian food but ordering out all the time is too expensive! So i am trying out recipes like this to satisfy my curry cravings.

    I wish I can stay so calm in the kitchen and the rest of my day😌. Thank god no sugar was added. Here in India why are restaurants adding sugar? When we say no sugar they say no that will be sweet only because it is malai chicken! Finally thank god someone agrees with me. Chef never seen you put garam masala in your recipe is there a reason for that?
