- How to Make an Authentic Aloo Gobi | Simple and Traditional | Cooking in Pakistan With Chef Hussain
We've recently rediscovered some videos from Chef Hussain's visit to Pakistan in 2020, so we thought we'd share them with you. Better late than never!
If you love original, simple Pakistani cuisine, you're in the right place. As part of our origins series, I visited my ancestor's village Jallo Chak, which is near the city of Dina in the district of Jhelum.
My family have lived in the village for generations, starting with my great grandfather who moved there over 150 years ago. My ancestors were farmers, and local hotel owners that served meals, so food has always been a part of my family life when I was growing up.
It was good to catch up with everyone from the village (I hadn't been back since 2016) and spend some well-needed time with my family. It was nice to see all the community changes, more hospitality, good food, and culture growth, it’s a cool calm place, lots of greenery, fields away from the city's hustle and bustle.
We’ve had lots of requests for vegan and vegetarian dishes from viewers over the year, and whilst you can adapt most of our other recipes, this is a specifically vegan dish. We hope you enjoy it!
🍛 What is Aloo Gobi?
Aloo Gobi is a delicious vegan dish made from potatoes, cauliflower, onions, tomato and lots of spices to give it some flavour! It originates from the Indian subcontinent and is eaten in Pakistan, India and Nepal. There’s no water in the dish, so it’s a dry curry which gets all its flavour from the spices.
🥗Is Aloo Gobi healthy?
Like most veggie dishes, Aloo Gobi is quite healthy, although it is quite high in carbs thanks to the potato, which you may want to bear in mind if you’re trying to lose weight.
🛒 Ingredients
- 3 chopped boiled potatoes
- 1 small chopped boiled cauliflower
- 5-6 tablespoons of oil
- 2 finely sliced medium onion
- 1 finely sliced tomato
- 1 teaspoon of salt
- 1 teaspoon of whole cumin
- ¼ teaspoon of turmeric powder
- 1 ½ teaspoon of coriander powder
- 2 ½ teaspoons of chilli powder
- ½ teaspoon of ginger paste
- 1 tablespoon of garlic paste
- Chopped green chillies (optional)
- 1 teaspoon garam masala powder
- ½ teaspoon chilli powder
- Pinch of coriander
- Pinch of fenugreek leaves
📖 Recipe:
1) Chop the potatoes and cauliflower and boil them, ready to cook in our curry.
2) Add 5-6 tablespoons of oil to a pan.
3) Add 2 finely sliced onions to the pan and add 1 tablespoon of salt to help them cook.
4) Add 1 teaspoon of fresh cumin.
5) Add ¼ teaspoon of turmeric powder.
6) Add 1 ½ teaspoons of coriander powder.
7) Add 2 teaspoons of chilli powder.
8) Add 1/2 teaspoon of ginger paste and 1 tablespoon of garlic paste.
9) Add 3 chopped boiled potatoes and 1 small boiled chopped cauliflower.
10) Cook for a couple of minutes and keep stirring to prevent the vegetables from burning.
11) Add 1 medium finely sliced tomato and some finely sliced green chillies if you choose.
12) Add 1 teaspoon of garam masala powder.
13) Add ½ teaspoon of chilli powder.
14) Add a pinch of coriander and fenugreek leaves. Make sure you crush the fenugreek leaves in your fingers to release their full aroma.
15) Your Aloo Gobi is ready! Serve up to eat with rice, a salad or a naan bread.

Wonderful video. God bless xx
Love your videos.
Looked a nice balance and thanks..
I want you to know that since I found your channel over 4 months ago I have cooked your recipes at least 4 times per week - sometimes 5 or more times per week. We have had the Balti at least 20 times, Jalfrezi and Aloo Gobi at least 10 times, I have cooked the Keema matar 3 times (we save that one for special occasions - the kids love it). I have cooked the malai curry, the madras curry, the drumstick curry, and for the first time last week made your proper pilau rice rather than the quick version (that was a real hit!). These meals are so healthy and every single one of them has been incredible. You have deepended my understanding of cooking and getting the biggest flavour from the meals I make - I have taken a lot of your tips and applied them to other recipes as well. Putting it simple you have completely changed everything for me in the kitchen. I love that the recipes are not to time consuming but you still get amazing results. I can't thank you enough! I am really looking forward to more videos and visiting your restaurant one day. I will also be purchasing pans and spices from you. The generosity you have given us all in sharing your family recipes is incredible. Thank you! ... Also, your video's are so soothing. After a long day at work I love nothing more than cooking with you as I watch the videos every single time I make the recipes - even though I know how to do them now. Big respect mate.
Thank you so much for your kind words 🙏 we're glad to hear you and your family all enjoy our food so much, that's what it's all about for us ☺️
@@thebaltibrothers2574 May I please ask when you plan another video? Obviously, you've given us more than enough already, but I still hope for more soon.
@@npdoughty1405 we're hoping to have some ready soon
Looks absolutely awesome. Thank you for sharing your knowledge
Another great video, really enjoyed it. Love the citrus tree behind too. Think this needs to be on my list to make. I'd probably add a little paneer at the end too, as I'm a massive cheese lover. Many thanks.
A joy to watch you cook fresh food.
Another great tutorial and lovely fresh looking dish. I look forward to making this. Please could you show us how to make a dhansak in the future.

I really enjoy your videos. It has helped me improve my cooking and broaden the dishes I serve my family. I particularly enjoy the calmness and slow paced narration and cutting technique. A good contrast to our fast paced modern world. Keep up the good work. Regards from Sweden.

This is brilliant Chef Hussain, I am loving the videos. So well presented and you have have perfect manners. Would you consider doing a video for masala fish one day?
New friend
Keep mums recipes coming brother, can you make Haleem? Rasam or Rajma recipes
Can't praise turmeric enough, I have used a turmeric paste on someone's bed sore and it healed without prescription drugs.
That looks really nice 👍 as usual 😀
Looks like another excellent recipe to try. Just subscribed to the channel and last evening made the Vegetable Bhaji and Chicken Madras to happy feedback from the family. I was wondering if i don't par-boil the potatoes and cauliflower and if by adding water at the end as you mention, that it will provide more gravy? Also for the Butter Chicken, i don't have Butter chicken masala powder but have Tikka Masala powder, is that a good/potential substitute? THX!!
Thank you so much for your kind words and kind feedback. In that case adding water will be beneficial and most definitely you will get a sauce also, you can use massala powder, results may be different but overall will be nice though
My partner has been cooking recipes from your channel for a while now and they are absolutely delicious! Thank you for sharing these amazing dishes! We are having this one tonight 😊.
Thank you so much for your kind words and feed back, we will be making more videos for you all 🙏🤲

We love Asian food but sometimes we liked one with out meat or vegetables in, just curry sauce or gravy to put over rice, plz can you show me how to make tasty spicy curry gravy.. ❤️
Add bit of jeera (whole cumin)
Looks nice mate 👍 can you cook a fennel Curry please mate thanks I'm yet to try it
Great videos, binge watching at the moment, trying to brush up on my cooking skills, do you ever use Ghee? or always vegetable oil?
