I added mushrooms and peas to the pancetta, and subbed Greek yogurt for the double cream. My version was more watery, but still sooo good. Thanks for this, Donal!

Just made this tonight and it was super easy and my family loves it! I made it with 1 lb of pasta. For the sauce I used about half the butter here with about 1/3 lb of pancetta cubes. Added the pepper flakes and boosted the vodka to about a cup. Used 1/2 can of tomato paste and about 1.5 cups of heavy cream. Added a touch of salt as well to sauce. Boosted parsley and parm. One thing, as the dish sat on the table, the sauce thickened considerably. I had reserved some of the pasta water and stirred in about 1/2 cup of it to the leftovers before putting in fridge. So, tomorrow, it will still have a nice sauce when I nuke it for lunch. Thanks! My family will definitely be requesting this again!

Vodka is quite sweet, and to break the acidity of the tomato puree, vodka would be quite an addition. I love it!

strange question, but does the tomato paste strip the seasoning on your de buyer pan?
