I just made this for dinner and I love it, my parents loved it, and my grandparents loved it! I used shiitake, portobello, white cap and porcini mushrooms for the sauce, which had a lovely strong aroma. I'm no expert on mushrooms, I just got the wildest looking mushrooms I could find in Waitrose, and I am very pleased with the results. My parents were also amazed at how juicy the chicken was, despite the crispy bronzed prosciutto ham surface. Next time I would take a lot more time with the wrapping, because on one piece of chicken I overlapped the ham significantly and the salty taste was occasionally overpowering the other flavours. Other than that this is a fairly easy dish to cook. Creamy, salty and earthy are spot on choice of words for this dish, 10/10 and I will definitely make this again. Thank you Donal Skehan and Jamie Oliver for showcasing an excellent recipe with a top notch video!
This looks lovely. One minor quibble. I have been cooking mushrooms just about exactly like this for decades, and i have found that I get a much better garlic flavor if I wait to add it until much later. Garlic goes in, gets cooked long enough to become fragrant, and then in with the cream.
He reminds me so much of Niall Horan. It made me love watching this video even more! By the way the dish looks ABSOLUTELY delicious. Butter and mushroom are a match made in heaven.
I actually ended up making this last night - tastes great! For the mushrooms, I mostly just used diced fresh portobellos and reconstituted several dried shiitakes in chicken broth. Made for a very aromatic sauce! I also thought about throwing in a sprig of fresh rosemary while it simmered, but decided against it. Now I'm kicking myself - that might have turned out even better!

For example, I generally just bake mine in foil wraps because it keeps everything moist and in-tact, but I might give pan-frying it a go. I haven't managed to put together the right kind of sauce yet, but serving it in it's own juices tends to be amazing already. If this is anything like what I make, then I'd recommend this recipe 100%.
Amazing! That mushroom sauce has many uses on it's own. Imagine a generous portion over quinoa for a vegetarian dish! (sub veg stock for the chicken stock). I want that chicken now! Excellent as always.
