The legendary Antonio Carluccio finally makes his debut on Food Tube! We are honoured to have this incredible chef, author, restauranteur and old friend of Gennaro Contaldo share with us - and you - his authentic Italian carbonara recipe. So simple. So tasty.

Italians have a knack for turning just a few simple ingredients into something that absolutely sings. It’s like magic.
And Jamie Oliver has a knack for trying to make it something that it's not ...
Roman has been cooking for thousands years, Using too many types of spices and cooking methods causes the basic taste to be gone, but when ingredients and simply seasonings can be mate, produce great taste.
That's almost how I like to describe Italian food: simple and few ingredients but of very good quality.
Honestly it’s quite similar to the American kitchen. Fatty foods combined, of course it tastes good 😅
That's what Italian food is all about: few selected ingredients can make the magic happen.

Only eggs, guanciale (or pancetta), pecorino (or parmigiano) and pepper, that's all the ingredients.

I had the pleasure of meeting him at the opening of one of his restaurants about 10 years ago now. I told him how my Mum makes spaghetti bolognese and he just shook his head haha. He then wrote down a recipe for ragu bolognese - the genuine way they make it in Italy - and it blows what we in the UK think spag bol is out of the water. He even gave me a couple of packs of his own pasta to go with it. Such a nice guy and brilliant chef. RIP...

He was a great chef and approachable but I wouldn't say he had a gentle heart. He would get frustrated quite easily and one of the few examples was when he cooked with Gennaro.

Indeed, those who fear their Lord unseen will have forgiveness and great reward.
And conceal your speech or publicize it; indeed, He is Knowing of that within the breasts.
Does He who created not know, while He is the Subtle, the Acquainted?
It is He who made the earth tame for you - so walk among its slopes and eat of His provision - and to Him is the resurrection.
Do you feel secure that He who [holds authority] in the heaven would not cause the earth to swallow you and suddenly it would sway?
Or do you feel secure that He who [holds authority] in the heaven would not send against you a storm of stones? Then you would know how [severe] was My warning.
And already had those before them denied, and how [terrible] was My reproach.
Do they not see the birds above them with wings outspread and [sometimes] folded in? None holds them [aloft] except the Most Merciful. Indeed He is, of all things, Seeing.
Or who is it that could be an army for you to aid you other than the Most Merciful? The disbelievers are not but in delusion.
Or who is it that could provide for you if He withheld His provision? But they have persisted in insolence and aversion.

And they say, “When is this promise, if you should be truthful?”
Say, “The knowledge is only with Allah, and I am only a clear warner.”
But when they see it approaching, the faces of those who disbelieve will be distressed, and it will be said, “This is that for which you used to call.”
Say, [O Muhammad], “Have you considered: whether Allah should cause my death and those with me or have mercy upon us, who can protect the disbelievers from a painful punishment?”
Say, “He is the Most Merciful; we have believed in Him, and upon Him we have relied. And you will [come to] know who it is that is in clear error.”
Say, “Have you considered: if your water was to become sunken [into the earth], then who could bring you flowing water?”

With his casual yet elegant manner, I felt not only kinship to his authentic persona but grateful for having given us something akin to a cultural experience.
It's quite beautiful when artisans allow their craft to not scare us by their underlined complexities but simply to invite us to engage in it.

I like a very little bit of boiling water of the pasta or cream or milk with it..I mean a "very" little bit..the eggyolk wil bind it if it comes at 70 C.
It gives me just a bit of extra sauce and I do not change the idea of the dish in my mind.

What a wonderful chef and soul. He is truly missed. However, I freaked out when he soaked up the Guanciale oil with the paper towel! That stuff is GOLD! I keep a jar of it for the recipe's. 😉😉
I really love Italian cuisine. And how Italians treat their food. Only the highest quality ingredients. And the food it feels homemade and cozy and comforting.
den galvez yes, ingredients are homemade and the food is fairly easy. A lot of them were poor man's dishes so quick to make and yet of high quality, because they had to feed hungry workers/family fathers/the whole family after a day of work!

Thank you Chef Antonio, RIP. Over the years I tried many recipes and this is the best so far. I just made some modifications on my own:
1. I drain the pork oil fully before adding pasta;
2. I add a cup or two of spaghetti water to the sauce gradually and depending on serving size.

2. Mix the paste with yolk harder.
3. Add some water from the pan, if it necessary to liquefy sauce a bit.

He is greatly missed. I bought his book on cooking with wild mushroom thirty years ago and loved his recipes. This video reminded me to dust it off and revisit his lovely dishes.
I met Antonio a few times, The last time I spoke with him was outside his restaurant on Neal Street, London, He was taking a break from teaching young budding chefs, he was really pleased with the enthusiasm of them. Such a real and rare Gentleman. I was always having problems with my Pizza bases and he told me how to do it properly, don't knead to much and he added I always follow my mothers advise and bless it before cooking,
In honor of Signor Carluccio, I took an axe and destroyed all the cream in the supermarket.

I have used this recipe by him for atleast 5yrs. Always a favorite in the house!! I recommend adding the 3rd yoke. You will not be disappointed

It was delightful listenining to him, such a smart lovely man he was and will always be .
I've literally had 100s of meals at Carluccio's (and buy so much food from there, especially around Christmas) and have probably been to every single one of the restaurants in London. This is the first time I've watched Mr Carluccio himself cook and it made me smile so much until I realised 3 minutes into the video that he passed away a year ago. RIP! :(

I have seen this video dozens of times, and yet I never tire of watching it. Now, whenever I cook pasta, I hear the phrase "no oil, please" and I smile fondly and remember this legendary gentleman.

I recently went to Rome and had this dish and it had no cream at all! I have had this dish here in America many times but it always had cream. Both ways are delicious. But yes this is the authentic way to make it with no cream. If you like it with cream then eat it that way. Not sure why people act like its a bad thing, enjoy food the way you like it!
If you have it with cream then it is NOT a carbonara, it is 'a la creme' or a liason
I've only tried it with no cream and its so good. If you add the cream in, does it have the same taste and consistency of say, alfredo?
Danny Simion it tastes like Alfredo with bacon. It tastes different than the real Carbonara that I tried in Rome. But like I said they both are delicious to me!
