I have no pizza stone, my oven goes until 250 degrees and I don't precook the dough. After preheating, I just put the pizza on the lowest part of the oven (where the heat is generated) and also I turn on the heat below and turn off the grill above. I have wonderful results.

My tip would be to get some fire bricks to put on a rack level just above the pizza stone. It works amazingly. Preheat the oven at 500 for an hour, and then after popping the pizza in (on the pizza stone just below the bricks), 10 minutes or less later, as close to Napoli style pizza as a conventional home oven can manage.

Donal, when you stretch the dough, you can do it more easily and efficient by pressing it with your fist in the center of the dough, then using the tip of your fingers to stretch it a bit and then you hold it by the borders and let the weight of the dough do the final stretching for you. Then, use your knuckles to define the crust. No need for rolling pins. That way, and if you did it correctly, you end up with better shaped pizza. Finally, no need to pre-cook the dough before you add the toppings. Just put a little bit of olive oil, spread a very thin layer of sauce and tear up a little bit of mozzarella cheese, a little bit more olive oil, add the basil, salt and pepper and into the oven! Do not overdo the topping. Too much and you DO end up with soggy dough. I hope you try this and see the difference. Sorry for my broken English. Great channel! Keep it up.

It can also depend on your flour or how humid the air is. You could try only using part of the water and then adding more and more while kneading until you reach a good consistency :)
+SprinkleofWilly same, but last night I decided I would rather have a slightly dry dough that I can deal with. So, I left out the olive oil and did 1.3 cups of water to 4 cups of flour, and it turned out perfect. Keep trying!
Donal I use a fairly large cast iron skillet when I make pizzas and it works like a charm and you can buy one at a second hand store so what is there to lose!

My dough always become too wet/sticky whenever i make one. I think there's something wrong with my measuring cup. This video is too funny lol
