I think food it's all about the taste who makes and inspiration that involves it. It is not because a crazy Italian created a sauce called Carbonara that everyone's has to follow. How boring would be and where is the creativity. I studied cookery in Australian, a multicultural country where I really learned there are thousands of version of every kind of food/dishes you already know! I am Brazilian with ancestry in Italy as well and I love cream on my carbonara . How controversial it is . Simple!! I dot give a Dam ... Lol
I live in a one room apartment with a very tiny kitchen so actually I don't care about 'authenticity' or cream/no cream, I care about easier-to-prepare dish and lesser-ingredients dish and this recipe is so much of a help. Thank you, Donal. You're one of my favorite people.

I never understand those that use cream in a carbonara. So many recipes I see use it, and it probably annoys me more than it should do lol. Nice recipe Donal, I make mine pretty much the same way. If you can get hold of some cured pigs cheek (guanciale) that stuff is heaven in a carbonara.
Cha Thats a dish called pates carbonara. It's a French 'version' of an Italian carbonara. A true Italian carbonara doesn't have cream in it. I mean you can put whatever you like in it really, it's just my thoughts on it. like I said, it probably annoys me more than it should haha

I'm always amazed how the egg yolks create a creamy and rich sauce as if out of thin air. this recipe looks amazing and I want to try it. the only other time I made carbonara was Nigella Lawson's version which interestingly enough used some white wine to deglaze the pan dripping and also had freshly ground pepper corn on top, with some cream for sumptuousness and gorgeous creamy texture. her recipe was I. N. S. A. N.E.L.Y delicious and I am a convert for all things carbonate!

You should check out the carbonara made by Antionio Carluccio on Jamie's channel.. I've seen quite a few carbonara recipes but that one looks most authentic and delicious to me. Personal preferences though of course, love this recipe too!

Just discovered this video! I followed along and made the recipe for one, so just one egg, 1/2 cup of shredded parm, a small handful of spaghetti noodles, and one piece of crumbled bacon since I didn't have pancetta. It came out delicious and was really easy and fun to make.
My understanding of the 'creamy/silky' ness of the sauce comes from the egg yolks and pasta water. I don't know if adding more egg or cheese would add to the creamy or silkiness...............other than cream, of course.

Aww, Donal so funny :)) My Mom whose background is of Irish descendant & a lil' Scottish. Used to make the best Italian dishes. We had 4 Italian families in the neighbor hood, & loved my Mom's Italian food, ha! Btw, I love this easy version, it helps alot :))
Great video man, if i can make only a suggestion in italy we usually don't discard the pancetta fat but we toss the pasta in that fat and then add the egg/cheese mixture into that pan (with no heat under it)
Man congrats, you made a very nice job with this dish. You know, the real recipe is with guanciale without olive oil and put pecorino instead of parmigiano BUT, here in Italy there are two versions: the first one and yours and the result is the same, a very beautiful and amazing spaghetti alla carbonara. Keep coking italians dishes, with love from Italy ;)
My all-time favorite pasta dish! So glad you didn't add cream like some other offenders! :) I like pecorino more since it's got a bit more flavor but parm will do in a pinch.
lol nothing to get the foodie Nazis out like a carbonara. Home cooking is all about the taste, not just tradition. Real chefs who have cooked all their life like nevin mcguire, marco pierre white and Massimo Bottura have done in both ways, cream or no cream. It really boils down to personal preference and what ingredients you have available.

I've seen a lot of people do it this way but I don't get why you wouldn't do it in the pan and get those extra fatty flavours from the pancetta. It's not really that hard to avoid scrambling the eggs and it'll make the sauce even more shiny and silky

it cuts þhe cost of using cheese. in my country for example, cheese is like tofu or tempe in europe. it's cheap over there.

he did use pepper. but oil, salt, and pepper are considered pantry ingredients so you don't usually count it.

It looks amazing. I leave one of the four eggs whole and use three yokes with it. But otherwise that is exactly how I make it
