For me this is a basic tomato sauce for pasta. I make alla arrabbiata sauce with, olive oil, onion, garlic, pink salt, tsp each basil and Italian seasoning. fresh tomatoes, tomato sauce (glass bottle) , dried Habanero chili or other types, black olives in bulk then I slice it, capers, parmigiano cheese to top at the end. [ whole wheat pasta] I prefere penne because it holds the sauce very well.

For all the italia-nerds let me add 2 things: you dont have to salt your tomato sauce, when you add some tablespoonsof the salty water beforhand, also helps with the mixing of noodles and sauce. If you need even more salt afterwards, add some cheese (parmigiano or pecorino!) after the noodles, in the pan, off heat :D second, the garlic is in fact NOT optional xD sry but if you don't like garlic, this is not for you ...
I love this recipe so much. I don't care if its authentic or not. The sauce is brilliant. It's so versatile, and I can easily alter for Bolognese or marinara. THANK YOU!

I've been doing the same thing for years and didn't even know it was something. FWIW, I put the tomato paste in the pan and stir it to cook for a minute before adding the sauce to take the harshness away.
Great recipe donal but i just want to tell you that this is a normal red sauce pasta not arrabbiata pasta (btw it’s arrabbiata not Al-arrabbiata), as I’m arab i will tell you the real arrabiata, first the red sauce called “tasbeka” it’s a way we cook the red sauce by sautéing onion and garlic in oil then adding two tsp of tomato paste when it starts to sizzle you add the tomato purée and leave it until the oil covers the surface of the sauce and it reduces, you then add spices which is( salt, pepper, cumin, chili powder not flakes), after that you add small chunks of (tomatoes, olives and green pepper) and no cheese at all and it’s mainly made with penne pasta not spaghetti. That’s it i hope i gave you the real arrabbiata
I love this dish, very easy and fast but i also love it with fresh red pepper. Anyway, no matter what kind of hot pepper you use the dish remains delicious.

Good show, Donal! I make this dish often (and enjoy it every bit as much as you seem to). Snuggle a couple of good-size meatballs next to that pasta and maybe sprinkle a bit of chiffonade-cut basil atop the finished dish and I am a very happy man indeed. 😀

It's good to see you doing videos, again. I haven't seen one fro some time. One question about the cooking time for the sauce: How can you cook canned/tinned tomatoes for so short a time, without losing the high acidity? I always do a long simmer ... 2 hours, minimum. I've never had a fully flavorful "quick" tomato sauce.
Tinned tomatoes are already partially cooked. They only need a few minutes to pick up more taste from the other ingredients. I use whole tomatoes in thick juice and give them a few snips with the kitchen scissors to cut them down to size. I don't usually blitz them as I prefer a more rustic texture.
I had leftover tomato sauce infused with basil as well as some garlic, so was able to make this. Only thing i forgot to add in is chilli but it was still delicious! 😋

The recipe in the link provided in the info to this video says "2 cloves of garlic, finely chopped," but in the video he uses sliced garlic. It also says to add the tomato puree to the pan with the cooked garlic and chili flakes, not put in the processor with the tomatoes.
@@donalskehan I drain my pasta but save a little bit of that starchy pasta water about half a cup and then add it in my sauce..... Am I doing it wrong?
@@nabila2180 no that's the Italian way. Rinse the pasta and add a quarter cup of the water to sauce. For a dish like this I wouldn't just put the pasta from the pan to the frying pan...would make it too watery. It's all about the oil in this recipe
I am roman and pasta alla'arrabiata is one of the famous roman cusine plate. We don't use pecorino cheese in receipt. Don't make arrrabiare( get hangry) yes because arrabbiata is the female past participle of the verb arrabbiarsi (to get hangry)
Never thought of adding tomato paste to the canned tomatoes while preparing this sauce. I’m planning to make this for dinner and I’ll remember this tip :)

another FWIW, I would crush the plum tomatoes with my hand so there are some chunks of tomato in the dish, rather than a smooth consistency.
