My Italian nana does it differently. She gently simmers the garlic on low heat for a minute, adds the anchovies, lets them dissolve. Then she adds a pinch of chilli flakes & THEN fresh tomatoes, a splash of lemon juice & pinch of brown sugar to balance out the acidity in the tomato & lets that all simmer gently for 10 minutes. After 10 mins she adds the olives + capers & then the pasta. Have tried both ways, prefer the flavour of the tomato slowly cooked with the lemon & sugar, it's got a sweet not overly tart tang :)

Put a tin (small tin!) of anchovies in the pan with some chopped garlic (you might want to drain some of the anchovy oil off first or it will end up too oily) then when the anchovies are all melted squeeze in a tablespoon or so of tomato puree and half a tablespoon of ketchup (to sweeten it) mix together so it's all a thick sauce. Then just add your spaghetti and it's done! You have to like anchovies as it's very strong flavoured bit it's a very satisfying dinner!

Anchovies, garlic, chilli, baby capers, kalamata olives, extra virgin olive oil, tomatoes, dash of red wine, rosemary (you can add a can of tuna if you want some protein) and don’t add salt like he did unless you taste it first because the capers, olives and anchovies are already salty ~ enjoy 👌😋
When Donal added the parsley the only thing I could remember was he saying "why would you serve it with parsley Sophie? come on" 2 videos ago hahaha. Btw loved the bloopers at the end ! :)
congrats, i usually get triggered when i see foreign cooks trying classic Italian pasta dishes and fucking them up, but you made it perfect, this is the classic recipe. Some people makes slight changes here and there and it's ok, for example not everybody likes the slices of garlic so they only put a full clove in the oil to savor it and pick it out afterward, or just chop it finely (makes sure you dont burn the garlic if you use this system). Also be careful when you add salt to the sauce, it can be already quite salty if you use capers and anchovies: always taste the sauce before adding salt.
