    My Italian nana does it differently. She gently simmers the garlic on low heat for a minute, adds the anchovies, lets them dissolve. Then she adds a pinch of chilli flakes & THEN fresh tomatoes, a splash of lemon juice & pinch of brown sugar to balance out the acidity in the tomato & lets that all simmer gently for 10 minutes. After 10 mins she adds the olives + capers & then the pasta. Have tried both ways, prefer the flavour of the tomato slowly cooked with the lemon & sugar, it's got a sweet not overly tart tang :)

    Thanks Donal! Puttanesca packs so much flavor for little effort. So good and anyone can push it however they like, more or less heat, whole or halved olives, and so on. Thanks for the recipe and method.

    Donal, your reverence for Pasta Puttanesca is the same as mine! I traveled to Italy and had it in a restaurant and went bonkers! Never had I had this semi-fishy, aromatic taste in any food I had ever eaten. Thank you for the recipe and your reverent teaching about it. I am leaving for Safeway to get anchovies right now! Puttanesca is on my menu tonight! You are a master!!!!

    What a great pasta dish me and my girlfriend loved!! I love this pasta because of simplistic ingredients so tasty and fast to prepared you need just 20 min to complete this dish! Perfect for a lazy Sunday!!

    Spaghetti vongole, puttanesca, tagliatelle bolognese and carbonara are my favourites. Also a pesto pasta with garden cherry tomatoes and bocconcini in the summertime. Delicious and all easy. (Well the bolognese takes slightly more patience).

    Puttanesca is definitely my favourite pasta recipe, but the parsley is not optional. Everything going in is a pantry staple, so that tiny hit of freshness makes all the difference.

    Puttanesca is my favorite pasta sauce & it’s so simple to make. I always use fresh blanched tomatoes instead of canned..... 😋🍅🍅🍅🍅🍅🍅🍅🍅🍅🍅🍅🥰 Nice too, with the olives. I love your passion for making pasta sauces; me too!

    I make this vegetarian-friendly and it is one of my favourite pasta dishes!! always goes down a treat at dinner parties

      Wilma Van Heusden I usually just double up on capers because I love them! (you can add feta cheese for some creaminess and saltiness too, though it is not at all traditional) Donal probably has a better suggestion. :)

      Actually, there are two variations in Italy for this recipe, the traditional one used in Campania (Naples region) includes the anchovies, while in Lazio (Rome's region) they skip it, making it vegan.

    Another similar one i liked at uni is anchovy tomato pasta. Put a tin (small tin!) of anchovies in the pan with some chopped garlic (you might want to drain some of the anchovy oil off first or it will end up too oily) then when the anchovies are all melted squeeze in a tablespoon or so of tomato puree and half a tablespoon of ketchup (to sweeten it) mix together so it's all a thick sauce. Then just add your spaghetti and it's done! You have to like anchovies as it's very strong flavoured bit it's a very satisfying dinner!

    It is actually my favourite to make, though I dice the garlic, olives, capers and anchovies, and I reduce it for about ten minutes or so (usually I cook the pasta then as well), as well as adding parsley to the sauce, not as a garnish.

    Very good! thank you,only watch out when adding the extra salt on to the sauce,as the anchovy are salty already.

    Anchovies, garlic, chilli, baby capers, kalamata olives, extra virgin olive oil, tomatoes, dash of red wine, rosemary (you can add a can of tuna if you want some protein) and don’t add salt like he did unless you taste it first because the capers, olives and anchovies are already salty ~ enjoy 👌😋

    Might be the best recipe for Putanesca on RUclips. Personally, I would skip adding salt and double the anchovy.

    congrats, i usually get triggered when i see foreign cooks trying classic Italian pasta dishes and fucking them up, but you made it perfect, this is the classic recipe. Some people makes slight changes here and there and it's ok, for example not everybody likes the slices of garlic so they only put a full clove in the oil to savor it and pick it out afterward, or just chop it finely (makes sure you dont burn the garlic if you use this system). Also be careful when you add salt to the sauce, it can be already quite salty if you use capers and anchovies: always taste the sauce before adding salt.
