Its kind of amazing seeing how his style has changed. He used Pancetta, Parmesan, and both Butter and Olive Oil. Both Olive Oil and Butter are not needed in Carbonara. Then a few years later he’s doing it properly. No oil or butter in the pan, or Pasta, and he’s using traditional Guanciale, and Pecorino Romano cheese. It’s really cool seeing a chef’s style change over the years, and Id say this is a prime example
When we Filipinos introduced to us spaghetti, we reinvent it according to our taste. But the world love it that is why we have "sweet style filipino spaghetti sauce". And then Carbonara came to our Filipino table in late '90s. We also reinvent it again. Italian react to our version of Carbonara in nestle cream. Wow, to say italians are strict about their recipes is an understatement. So much hate over butter, garlic and some pancetta. If you'd see what passes as "carbonara" around the globe. Think of cream, hard boiled eggs and ham. And not everyone can afford guanciale and pecorino so you do it the best way you can with the items you can afford and hope to travel do Italy one day to have the real taste :)

If you can't find pancetta just use smoked pork belly. I prefer to use local ingredients so for my carbonara I use for smoked Swedish pork belly!

When I miss Italy cuisine I come here to watch Gennaro making real fantastic delicious mouth-watering Italiana gems (and I miss Italy every day:(). Guys, if someone has any relatives or mates in Italian government can you please tell them to open the Italian borders for Russian people. People are dying here without panchetta, without real cheese, Italian wine, pasta, pizza, mortadela and incredible beauties of Italy:(.

Wow, to say italians are strict about their recipes is an understatement. So much hate over butter, garlic and some pancetta. If you'd see what passes as "carbonara" around the globe. Think of cream, hard boiled eggs and ham. And not everyone can afford guanciale and pecorino so you do it the best way you can with the items you can afford and hope to travel do Italy one day to have the real taste :)

Interesting to see all the differences between this version and FoodTube's Antonio Carluccio version (egg yolks + 1 whole egg, vs. whole eggs + 1 yolk, salt vs. no salt, garlic/no garlic, butter/no butter, size and amount of meat, pasta water addition, etc.) They both look excellent, though.
