    6 T peanut butter
    1T dark soy sauce
    1 T rice wine vinegar
    1t sesame oil
    3T chili oil
    ~1” nob of grated Ginger
    1 clove garlic grated
    Melt all together in a saucepan for about 3 min.
    Add 1-2T water as necessary to consistency
    Pour sauce on top of “Loads of” cooked Udon noodles. Mix in thinly sliced Spring onions and chilies, sesame seeds. Add some on top for presentation.

    I add shredded carrot, cucumber, and daikon or radish at the end for my favorite summer noodle dish.

    I have a recipe just like this passed down from my grandma, incredible comfort food. Always makes me feel warm and fuzzy, the nostalgia is also really potent. I miss her like crazy.

    Keep some of the noodles starchy water instead of plain water for the sauce.

      @@BenNeedsATheme4aDream The starchy water from the noodles will make the peanut sauce more silky and rich tasting without the calories from, say, butter.

      @@larrysmith2638 Thats actually a very good idea. Add a cube of butter at the very end and maybe more of that chilli sauce and a bit of lime.

      @@cherrymetha3185 I made it, and it was delicious. I added hot Chili Garlic Sauce instead of the oil and I garnished it with chili. I've made it three times already and now it's one of my favourite dishes.

      you could make this with any nut butter, almond would be great! And if you are allergic to all nuts try wow-butter

      Jen Si maybe Tahini would work as well? I've developed a nut allergie as well and I was missing the nut taste soo much but then I discovered what a great alternative Tahini is :)

    Few Asian restaurants cook this dish. I had it last in Wash., DC in "Chinatown" in the 90's. It was called Dan Dan Noodles. Your recipe hits the nail on the head except they sprinkle crushed peanuts over the top.

    Finally! A recipe where I've actually got all of the ingredients to make the dish. I usually quit recipe videos half way through because I need Fenugreek, Daikon, Kohlrabi etc or a selection of spices and pastes that I don't have or can't even get.

      Keep in mind that organic peanut butter usually has no sugar and is much thinner than brand name peanut butter. It will change the flavor profile and thickness of the sauce. Shouldn't be a problem, but be aware.

      If your peanut butter is unsweetened, do add a tablespoon or so of honey. Adds immeasurably to the taste!

    I'm asian and have never had peanut butter noodles but this is probably the most tastiest looking fusion noodles i've ever seen 🤤 looks like a perfect lunch box dish.

    Same! I love crunchy. I like texture and think the peanuts add to the flavor. Of course I like creamy, but if I have crunchy you know I'm going to eat that up.

    I added lemon juice instead of rice wine vinegar and some cilantro to the sauce plus some chicken and beansprouts to the dish which made it even better! Fully recommend!

      That’s a good idea! But part of the beauty of this recipe is that it’s accidentally vegan :( You shouldn’t support the meat industry. You should look at some chicken substitutes. There are so many, and chickens are treated so horribly. They have no legal protection like other animals so they can be slaughtered in any horrible way and no one will be held responsible. Try some vegan chicken or even tofu :))

    it's weird because I don't like peanut butter that much when it's in a sandwich or on toast. But I've roasted a whole chicken in peanut butter before and it was just amazing! Also, I'm incredibly jealous about your kitchen! I get serious kitchen envy sometimes haha.

    In Taiwan a version of this is very popular - but noodle is chilled (even more addicting, try it!), sesame paste is used instead of peanut butter, and shredded cucumbers and carrots are added for crunchiness.

    You can make chili oil at home. Just take any cheap cooking oil, mix in cheap chili power, and that’s it. For less than 25 cents you’ve got chili oil. #Gracias

      Thank you. Wasn't sure what im going to do with all that rice wine vinegar, soy sauce etc that remains. I don't really use all that in my cooking generally so until i make this again...

      You should try some veggie chicken substitutes. Chickens have no legal protection like other animals, so they can be slaughtered in any horrible way and no one will be held responsible. There’s so many other options. Try veggie chicken or even tofu :)

    I made a similar thing to this using soy sauce, sesame oil, sriracha, lime and peanut butter.

      I've made it with Sriracha when I didn't have chili oil or chili paste. Works fine.

    I once made something similar, as a uni student being hungry and lazy haha, but just used peanut butter, soy sauce and siracha lol. I will definitely try yours, so yum!! Thanks Donald

    Honestly, it may be the only channel that I subscribe to without having seen the video, so good job, this video is so great that, as a person who is first trying to finish all my 'unusual' ingredients before buying new ones, I feel like chili oil is a must-have in my kitchen now!
