Yes, you can add other proteins to it. I split my batch into three different kinds: pork, chicken (I ground it up myself) and the last I finely chopped up shrimp. All were very yummy! Next time I want to try beef, ground turkey and a veggie concoction.

Use a pan, put the dumplings in, a few minutes on high or medium high heat until the bottom of the dumplings turn golden and hard, then pour in some cold water, where 1/3 of the dumpling is submerged, and cover the pan with a lid, until most of the water has evaporated. Take off the lid, when all of the water has evaporated, serve your dumplings. An option here is also to disolve some cornstarch or potato starch powder in the cold water then use it, that way you get an even crunchier exterior for the dumplings.
Would you have a steaming basket, like a fan steamer? That would work, but oil it lightly first. An electric steamer would definitely work too. Otherwise, if you have a trivet of some kind, an elevated wire rack that would fit inside a wide pan, that would work. Put the dumplings on an oiled plate, or line it with baking paper, pop that on top of the wire rack. Pour boiling water until just below the plate. Then steam as shown. The only thing with not using a bamboo steamer but a pan with a glass or metal lid is that condensation might fall back on the food being cooked, so look for a pan with a domed lid, as that does help drip the condensed steam down to the edge of the lid. Another help is if the plate isn't too wide to avoid catching the condensed water collect in the pan which makes your steamed dishes extra soggy or diluted. PS: If you have a wok with a domed cover, that works great... there are cheap steaming plates (perforated discs) that turn a wok into a steamer and it holds really big dishes in there too. I often use one of these to prepare a whole fish, as it's considered unlucky if the fish gets its head or tail cut off to make it fit!
