Barramundi Spearfishing with Tim McDonald (Australian Champion!) Catch, clean, cook burgers.

  • Weather, tides & work aligned for us this day in central Queensland hunting the enigmatic barramundi. Tim McDonald is one of the current Australian champions in spearfishing (along with Bryson Sheehy) and we’ve been diving together since 2012. There isn’t another person on the planet that has put me onto more quality fish than Tim and this day was no exception.
    Later Hannah and I make an old classic, the barra burger. The wings and belly flap was shared amongst dozen of people at the Adreno Brisbane store for a live Noob Spearo Podcast episode and the frame was put into the crab pots.
    Fisheries bag limits for barramundi are 5 per person, per day with a minimum size of 58cm and maximum size of 120cm. We took one nice fish each for the day which measured 105cm & 108cm.

    So similar conditions to Seabass fishing over here and i understand those Barramundi are elusive and hard to find like our Seabass!

    Nice video, as usual, just one tip, that I learned from a great chef from UK, that maybe you know, Chef Mike Robinson from Fish in the wild, fried fish in sunflower oil, I know it looks like less healthy, you may can add some olive oil to the sunflower oil, but not just olive oil. And deep fry it, it will come up better.

      I’ve been to this spot 10 years ago and had shoals of 1m + fish swimming around. After local flooding all the dam fish escaped and it was crazy in 2012/13.

    any reason why the skin is often not eaten?
    i find that deep fried, pan fried, steamed etc, it taste pretty good too. but i understand its personal... just curious.

      Quite thick on these fish and very difficult to remove the scales. On smaller fish I definitely eat the skin though.

      Yes, when they are brained correctly the jaw goes slack. Biggest tell for when it's finished.

      Yes in Qld it's 58cm minimum size and 120cm maximum along with a closed season. Different rules for the Gulf and Northern Territory though.

    What a fishing day Danniel! I'm sure it tasted incredibly well. Here is a tip, no long ago I found a video of a couple from Peru. They are artisans, and make leather out of fish for fashion designers. They use farmed fresh water Barramundis but the skin is almost the same. If you are interested, here there is the link which shoes almost the full process. Who knows, you could end up doing a purse or some nice shoes for your wife hehehe.       My bad, it's not Barramundi, but Paiche/Pirarucu. It reminded it me of Paiche because it does have a very similar skin, and the shape of the head it's curved like a duck's peak.

      Touch wood never seen a bull shark in the area but I'm sure they are around. After Australia... I have some great adventures back in Greece with the current world champion!

    Great tip about the knife through the gill plate and back up into the brain. Can think of a few common species it would be safer to do so with rather than risk a slip.

      Worrying never helped anyone 🙂 But in all seriousness it’s not super far north so not a major issue. You check for croc slides if you’re in a dodgy area.

      Only have bronzies and gws here in SA and tassie but still always something to think about.

    For a few pregnant seconds at 1:46 - I thought Tim had found a small salty until the pectoral fins flared. I reckon you'd need stainless steel man-parts to be spearing with the bulls and handbags like this at Gladstone.
