    I adore your Butter Paneer ( I don’t eat meat) so this has been very helpful. I usually use store bought paneer and after seeing this there is no reason to continue doing so. In fact I live near a dairy farm so I’ll be getting some fresh milk from them! 🐄 🧀

    I've lived in Scotland for three years before coming back home to Italy. When I was there I discovered paneer (and Indian cuisine honestly) and since I've come back home I've been desperately looking for it but it's nowhere to be found 😢 and thanks to you I can now try and make it myself at home. I can finally make Palak paneer!!

    What an amazing masterclass! I've been curious about this cheese for a long time and for my surprise it has the same elaboration process of the queso fresco (which I love being from south america). This is such a discovery for me, specially because I didn't know that you can add herbs to this kind of cheese! I am really grateful for all your beautiful and useful videos! Thanks!     You are so delightful and beautiful. Thank you so much for sharing your classes online. I have lived in Pennsylvania all my life and I am not indian, but I love learning to make different foods from different parts of the world, especially since my mother got me interested in penpals and friends from many parts of the world when I was a kid. I don't have or use muslin cloths but I use a clean old pillowcase. Works just as well. This is similar to our American cottage cheese.

    Thanks Chetna, I'll be trying out home made paneer this week after seeing how simple it is. I'm a meat eater, but since making my first paneer curry recently, I find I prefer it to something like a chicken curry. I just love the taste and texture of paneer and now I can do the whole thing myself . . . . woohoo ☺

    I made your paneer recipe yesterday and it turned out fantastic!! Your instructions were so clear and helpful. I am in the US, so I used 1/2 gallon of whole milk and about 2 Tbs vinegar mixed with 2 Tbs water. I am excited to make the recipe again. Thanks for teaching me a new skill!!

    Great video - I’ve immediately went out and bought full fat milk. But it didn’t work - I only managed to yield little curd and the milk was still very milky not clear liquid like yours. What am I doing wrong ?

      You will have to add more acid

      I'm still figuring it out myself, but boiling the milk more and keeping the heat a little higher made mine solid enough to use

    Thank you for such a good demonstration. I learned from the comments under a tofu making video that paneer is made in the same way using dairy instead of soy milk. I love paneer but it is quite expensive where I am (more so in the recent past) I could only have it as a rare treat. Thankfully milk is still relatively affordable, so that's about to change. 160 grams of paneer from 1 litre of milk is a great cost saving compared to buying the ready made stuff. I just successfully made tofu with soymilk from scratch (making the milk was a whole sport 😮‍💨), so I should be able to manage this quite easily. I'm excited to give it a go tonight.

    Do you have to use fresh lemon juice, or would bottled lemon juice work? Many thanks for such a clear tutorial / masterclass. It's good to see you're human, and have accidents in the kitchen like the rest of us.

      make sure you use a real lemon such as a Lisbon. I have a meyer lemon tree and they are not true lemons and aren't acidic enough.

    Hello! This is the same way Bavarians in Germany make cottage cheese since hundreds of years. They only use vinegar instead of lemon juice. My grandmother (RIP) was raised in a rural area where they had mainly milk. She had so many recipes for milk and milk products. Some recipes are recipes mankind developed! ❤

    I have been making your basic paneer recipe for years now, usually for your matar paneer. Really interesting to see this in more detail. Will try the new heating and waiting methods next time I make paneer.

    Lovely alternatives, Chetna. I usually only use plain yogurt, which does result in a nice soft textured paneer. Will definitely try the lemon juice next time I make paneer. I stopped buying store bought paneer years ago, since trying making using yogurt. It's cheaper and tastier to make ones own.
    Hope your floor tile didn't crack with that pestle falling!!

    I have used another person's recipe for paneer. There was no teaching about lowering my heat in different stages like you just showed! SO i will try that next time reducing the heat in stages-maybe that is why i might have lost some of it with the other method. the other recipe made my paneer very crumbly, falling apart in the pan- and even i tried frying it- and it still did not fry properly. I will give this recipe a go and follow up.

    I used to make paneer at home without any difficulty, but lately, it crumbles and won't stay firm. I think it's because the milk I get now is ultra-pasteurized, and this just doesn't work as well, but really, I'm not sure why won't hold it's texture.

    lol thanks for being real, you made me laugh when the dish fell. I wanted to ask you if you ever use citric acid, the powder, the recipe that I found had that and you has to heat the milk to 185-194 for 20-30 mins in the first step. Just wondering because I figured you are the expert ;-) mine came from an American cheese making company

    Thank you for this! Can you explain why you add water after the curds have formed? Is it to cool it down a bit? I know you said that pouring water over it while it's draining is to wash the vinegar taste off, but you didn't explain about the earlier addition of water.

    Where I live in Berlin it is easy to get most middle eastern fresh cheeses, but paneer isn’t readily available. I’m so happy you showed us how to make it! Thank you!

      Hi chetna i was wondering why do you raise the temp so high?
      Dosnt it cook the proteins?
      My paneer always comes out hard. It dosnt melt when you fry it.

    Brilliant video, thank you! I’ve only made paneer with yoghurt, not lemon or vinegar, and it cam out very crumbly, I probably didn’t weight it for long enough as whatever I was using as a weight kept falling off, just like yours did! 😂 I have got a tofu press, so might try using that (I had the same problem with the weights falling off when pressing tofu, the press is amazing!) Can’t wait for your paneer recipe, I just tried your mushroom and cashew recipe, it was DELICIOUS!

    I have a question: If lemon juice concentrate is all I've got aside from vinegar, can I still use it and should I mix it with water when using it. Or would you suggest I stick with vinegar if I don't have fresh lemons?

    I'm in Cyprus 🇨🇾 and you can't find Paneer except in Indian restaurants. I want to use it at home so learning how to make it is wonderful.

    I got so excited when I found out paneer was so “easy” to make…. Mine turned out TERRIBLE. I don’t know what I did. But even my husband couldn’t eat it. The texture was so off. I legit gagged because of the texture. Every bite I took, I gagged. I was sad. So I have to figure out what I did wrong because I love paneer. Just not what I made 😂😂😂😂

    My Ukrainian cheese much like paneer is made with yogurt and put to ferment until bubbly then slowly heated….the other difference is that the cheese is not put under weight but just hung in it’s cheesecloth sac. The cheese is more like a dry cottage cheese but very tasty, recipe directions can be found online under “farmer cheese or Polish fresh cheese”….I will try yours also.

    Good day! First I would like to say that I enjoy your recipes and when I make them and share them on Facebook I always # your channel! Secondly I want to say that I am glad you put your mishaps in the kitchen in the video because it makes you so much more relatable! I respect you for that it shows just how humble you are.❤ last but not least, do you go live often are just during masterclasses? I'm wondering why I'm not getting the notification because I would love to participate. Do you tell what you're going to cook before you cook it so I can have all of my stuff together so I can go along with you or am I asking too much?😂😂😂

    I am wondering about the carbohydrate count. Would I just use the number of carbs from the milk? Does straining process alter carb count? Any suggestions how to calculate carbohydrates?
