LEFTOVER GARLIC CHICKPEA FRIED RICE 🍚♻️

  • THIS IS ENTIRE DISH IS MADE WITH LEFTOVERS! 🤯 Leftover Garlic Chickpea Fried Rice! 🍚
    - 5-6 cloves garlic minced
    - 1 in piece ginger minced
    - 2 green chilies minced
    - 1 scallion stalk diced
    - 1 carrot grated
    - 5-6 fresh curry leaves
    - 1/2 cup chickpeas drained
    - 1 cup cooked basmati rice
    - 1/4 cup water
    - kosher salt
    - 1 tsp raw cane sugar
    - 1 tsp neutral oil
    - 1 tsp toasted sesame oil
    - fresh coriander, scallions, sesame seeds for garnish
    Method:
    1. Sauté curry leaves, ginger, garlic, chilies and scallion whites until fragrant over medium heat.
    2. Add in chickpeas, carrots and salt and sauté until chickpeas are slightly softened.
    3. Add in rice, water, and salt. Saute and cook about 5-8 mins until water is absorbed and rice begins to get slightly crispy. Add sugar and some fresh coriander.
    4. Serve with garnishes.

      CERTAINLY! I generally add some sugar to balance the flavors. You can sub with maple syrup, agave, coconut sugar or just leave out!

    You have to fry the rice to make fried rice. Adding water defeats the purpose

      I add water to break up the rice and it helps the rice kernels separate and get crispy against the pan.
