What's so great about this meal is that chickpeas are a great source of protein and if you switch it up with brown rice you get a variety of nutrients and extra protein.
People need to realize that they may be doing more harm than good when they try to pack their bodies full of protein. It is way way way over-rated The maximum amount of protein humans need is shown in human mother's breast milk and it is very little - something like 2-8 percent of calories depending on where you look. In fact protein causes pain and a lot worse (weakens your kidneys which are crucial to successfully eliminating cellular wastes from your hundred trillion cells).. Take protein out of your diet for a week and pain goes away. Then try eating a big meal with lots of protein and see how you feel. Ask any body builder whose body is now wracked in painful arthritis due to over doing protein.

Great recipe. Tried it with leftover khichuri with vegetables. Didn't bake the chickpeas Sautéed with mustard oil, Dried red chillies and the rest of your ingredients then added the khichuri. Came out delish.

This is a great recipe! I use quinoa instead of rice, simply because we eat rice very often, and it's surprisingly delicious with quinoa (I'm saying that as a die hard rice fan). It has actually become my favorite quinoa recipe 😆 Thank you!
The oven-baked chickpeas and onion is a game-changer! I've seen the same dish prepared by some great Indian cooks and, while they looked really good, I couldn't allow myself to use so much oil in my food. I will give your recipe a try.
Having spent a few decades cooking Indian food, I would suggest you simply use less oil than a lot of Indian recipes call for. Same thing often comes up in Chinese cooking, particularly in Sichuan dishes. You kind've have to use your best judgement, and pay careful attention to what the purpose of the oil is for and when it is being added, but in many cases it can be cut down fairly dramatically. There must be dozens of Indian recipes that I've cooked that called for 5-6 TBSP of oil and I halved with no apparent effect other than to make the dish less oily. I will qualify my experience by saying this pertains almost exclusively to curries.
I just made this recipe this evening and I am blown away! So delicious! I didn’t have chili oil, so I used a tablespoon of Korean chili flakes instead. Amazing. 10/10
I just cooked this for my daughter's school team lunch and it is not hard and has amazing taste! I cooked my own chickpea and used some of the water to cook the rice. The taste is warm and the texture fantastic! Thank you for making Indian cooking approachable!
