LEARN HOW TO MAKE A QUICK WEEKNIGHT FRIENDLY CHICKPEA CURRY RICE RECIPE TONIGHT!
LAY HO MA (how's it going in Cantonese)! It's always exciting to make food in your very own kitchen that's worthy of being served at an amazing restaurant. Join me in this episode and learn how to make an easy curry basmati rice recipe with crispy baked chickpeas. Let's begin
Ingredients:
1 red onion
400ml canned chickpeas
1 tsp smoked paprika
pinch + 1 tsp salt
pepper to taste
drizzle of avocado oil
3-4 pieces garlic
2 long green chili peppers
1 tomato
2 cups basmati rice
2 tbsp chili oil ( • Most addictive Red Chi... )
1 tsp cumin seeds
1 tsp crushed coriander seeds
1/2 tsp cayenne pepper
1 tsp sweet paprika
2 tsp curry powder
2 cups water
Directions:
1. Pre-heat the oven to 350F
2. Slice half of the red onion and place into a mixing bowl. Rinse and drain the canned chickpeas, then add to the red onions. Add the smoked paprika, a pinch of salt, pepper to taste, and a drizzle of avocado oil. Toss to mix together. Then, spread onto a baking tray lined with parchment paper. Bake in the oven for 30-35min
3. Finely chop the other half of the red onion. Roughly chop the garlic and finely chop the long green chili peppers. Dice the tomato
4. Rinse and drain the basmati rice 2-3 times and set aside
5. Heat up a sauté pan to medium heat. Add the chili oil followed by the cumin and crushed coriander seeds. Fry for about 1min
6. Add the red onions and sauté for a few minutes. Add the garlic and green chili peppers. Sauté for a couple of minutes
7. Add the cayenne pepper, sweet paprika, and curry powder. Give the pan a good stir. Add the tomatoes and 1 tsp salt. Sauté for a couple of minutes
8. Add the rice and sauté for another minute. Then, add the water, turn the heat to medium high, and give the pan a good stir. When the water begins to bubble, turn the heat to medium low. Give the pan a good stir. Then, cover and cook for 15min
9. When the chickpeas are done, turn the oven off. After 15min, turn the heat off on the rice and let it steam further for another 10min
10. Transfer the chickpeas to the rice and gently fold to combine. Plate and serve with fresh cilantro

What's so great about this meal is that chickpeas are a great source of protein and if you switch it up with brown rice you get a variety of nutrients and extra protein.

People need to realize that they may be doing more harm than good when they try to pack their bodies full of protein. It is way way way over-rated The maximum amount of protein humans need is shown in human mother's breast milk and it is very little - something like 2-8 percent of calories depending on where you look. In fact protein causes pain and a lot worse (weakens your kidneys which are crucial to successfully eliminating cellular wastes from your hundred trillion cells).. Take protein out of your diet for a week and pain goes away. Then try eating a big meal with lots of protein and see how you feel. Ask any body builder whose body is now wracked in painful arthritis due to over doing protein.

Made this rice yesterday. Oh my word it’s delicious! Omitted the Chili pepper, too much for husband. Only 1 tsp curry powder as the one I use is quite potent. Delicious! Will be making again and again.

Great recipe, the spices and flavours are really nice. The main change I made to this was to half the amount of rice and double the amount of red onion with the chickpeas.

This is a great recipe! I use quinoa instead of rice, simply because we eat rice very often, and it's surprisingly delicious with quinoa (I'm saying that as a die hard rice fan). It has actually become my favorite quinoa recipe 😆 Thank you!

The oven-baked chickpeas and onion is a game-changer! I've seen the same dish prepared by some great Indian cooks and, while they looked really good, I couldn't allow myself to use so much oil in my food. I will give your recipe a try.

Having spent a few decades cooking Indian food, I would suggest you simply use less oil than a lot of Indian recipes call for. Same thing often comes up in Chinese cooking, particularly in Sichuan dishes. You kind've have to use your best judgement, and pay careful attention to what the purpose of the oil is for and when it is being added, but in many cases it can be cut down fairly dramatically. There must be dozens of Indian recipes that I've cooked that called for 5-6 TBSP of oil and I halved with no apparent effect other than to make the dish less oily. I will qualify my experience by saying this pertains almost exclusively to curries.
I'm salivating just watching the ingredients being added.

Great recipe. Tried it with leftover khichuri with vegetables. Didn't bake the chickpeas
Sautéed with mustard oil, Dried red chillies and the rest of your ingredients then added the khichuri. Came out delish.

I just cooked this for my daughter's school team lunch and it is not hard and has amazing taste! I cooked my own chickpea and used some of the water to cook the rice. The taste is warm and the texture fantastic! Thank you for making Indian cooking approachable!
