Thanks, John! Great recipe. I agree with filling the cake with American buttercream like you did. I just made an ombre cake and filled with Italian Meringue Buttercream and the cake did tilt a little as the cake came to room temperature (like you warned in, I think, your Funfetti cake class). Also, I would use canned pumpkin. I've made my own and could tell ZERO difference between it and the canned variety in a side-by-side test. Last, on the IMBC I find that whipping for 15 plus minutes can be needed to bring it down to room temperature after adding the hot simple syrup so I've started pressing a gallon bag with mostly ice (and a little water) up against the bowl and it helps it cool down faster. I check the temperature with my Thermapen Infrared gun. I think 90 degrees F works.

I made the basic cake yesterday (with different frosting) and it was the best pumpkin cake I’ve ever tasted. It’s definitely a keeper. Secondly, I used your homemade cake strips technique, and for the first time in my life got perfectly flat cake layers. The layers were tender from edge to edge, and no rise anywhere. I’m sold, will buy cloth strips so I don’t have to mess around with paper towels and tinfoil. THANK YOU SO MUCH.

3 questions I was told to ask. So it can be seen. 1. Why do cakes sink in the middle? 2. What do you think about adding pudding to cake batter? 3. Have you ever substituted Cream in a batter instead of regular milk? Also I love you channel and have shared it with my Recipe group.
Gina Brown, I'm a home baker, I believe the answer to #1 is you didn't let it bake long enough Signs of doneness: the sides are pulling away, slightly; test the center with a toothpick, it should come out clean; also, when you can really smell the scent of the cake, that means it's done, or close to done. #2 I am guessing you mean the dry pudding mix, and I say it's okay to add, especially to a box cake - so it''s semi-homemade. #3 Substituting cream might be okay, but I think cream has more fat content than regular milk, so I don't know how that might affect the batter.
