I was the go-to birthday cake maker and would make box chocolate cake. I added heavy cream in the batter, would make a ganache with some half-price holiday candy (the sales!!!) and add that to the mix to make it a bit fudgey, and a few other tweaks. *Not* a structurally sound cake, but it was so good for pretty cheap. I'm going to have to try your recipe! 😊

You’ll be excited to know In some areas (like Ontario where I live!), you can actually buy most dairy products now as lactose free - not only milk, cream, and butter, but sour cream, cheddar cheese, mozzarella… it’s very helpful! My advice is to buy on sale with a far out expiration date (filtered is best for this) and/or freeze if you can. Loblaws hands down as the MOST lactose free products (though most Canadian dairy companies have now caught up). The other cheat is specifically cultured, old, or non-pasteurized cheeses (think France) are naturally lactose free thanks to the bacteria and enzymes present. Anyways, all the best as a fellow lactose intolerant person! 😊

I already do milk and butter swap with the extra egg but if Im using yellow, white or butter cake mix I also add a bit of vanilla extract to make the flavor little more smooth
i read a little instant coffee can accentuate the chocolate flavor more. Also I read in the 1930's to cut down on the price of using so much chocolate, people added in a smashed up tomato in their chocolate cake. People got inventive in the depression.
I have a solid chocolate cake recipe I’ve been using for years, but despite trying dozens of white/yellow/vanilla scratch recipes, I’ve never found one that I prefer more than doctored General Mills white cake mix 🤷🏼♀️ I’m a firm believer in using a box mix as long as the icing is from scratch, never had a complaint, huge time saver, consistent results every time no matter who is actually making it!
The time saved is invested in pulling out pantry staples and a measuring spoon. 5 minutes tops. Measuring cup doesn't count bc you're already using it.

Box cakes were more tasty decades ago, now even Betty Crocker tastes like foam. Of course I have no family now at home but I am definitely going to try your method. They tasted better because they were full of all sorts of fat and chemicals and things you could not pronounce, all the things to give them body, structure and taste, but also maybe cancer or at least a bigger waist line. I'm not so big on the political correctness in food ingredients. If you think about it and what all the ingredients are that we inhale and consume and are surrounded by, you would never get out of bed. I do also agree, I've eate plenty of things that had good mouth appeal, but no taste. Like eating a sponge.

3:20 when I notice lumps or clumps in my cake I always mix it with a stick mixer. This also helps if I used too cold butter and I have butter flakes in the liquid. Just blend it thoroughly with the stick mixer for a few minutes and it will come together perfectly

I tried a muffin made at local bakery even when adjusting stuff I was able recognize yellow cake mix possiblity it was general Mills Co. If you use organic box mixes it's better all ingredients are real I made chocolate chip scones they came out great.

Yes. Lactose is also in sour cream. But I believe e the lactose won’t cause gas if it’s cooked inside a cake. It’s more like drinking milk and ice cream.

Yes. Lactose is also in sour cream. But I believe e the lactose won’t cause gas if it’s cooked inside a cake. It’s more like drinking milk and ice cream.
