    Finally! Someone doing a food tutorial that doesn’t add in a lot of silly anecdotes and talk really slow and bore you to death. I’ve only been watching this for a few minutes and I am so very impressed! This is definitely one I will watch to the end! What a great job!

    She explains things better than any online pastry chef I have ever seen. I used to work in a bakery when I was younger and there were things I knew to do, was told to do, but didn't know WHY. But all these years later I learned by watching Erin. Now I know the reason you bring a pudding to first boil is to kill the enzymes in the eggs so they don't eat the starch when your pudding is in the fridge making it go watery, or why you add eggs one at a time in a cake batter and blend after each addition because it is an emulsion. Things such as that I knew to do, but didn't know the science behind it. I just love her so much!!!

      I agree with you! Shame on them! I find that the people who pick negatively at something, which is obviously great, are usually people that are so unhappy with themselves as they are and the life they have planted themselves in that they are extremely jealous of anyone who is happy and living a successful life!

    UK COMMENT. At 75 years old I now have time and two grandchildren to bake for, I found this video instruction very clear and helpful and it also showed areas where I've made mistakes, by far the best instruction I've seen.

      Buttery Fruit Cake

      Ingredients *
      100 g raisins and glacé fruits
      250 g of Buttter
      250 g of White Sugar
      4 Eggs
      3 tsp of Vanilla exract
      30 ml of fresh Milk
      250 g of Flour
      2 tsp of Baking powder
      Instructions
      Combine tutti frutti and raisins. Preheat oven to 180 degrees celsius. Grease and flour a loaf pan Whisk flour, ground almonds, baking powder and salt. * Beat butter and sugar in an electric mixer until it becomes fluffy. Add the vanilla extract, tutti frutti, raisins and walnuts. * Add milk and beat gently Pour the batter into the loaf pan and bake for an hour. * Remove from oven and let it cool Slice when cool and serve with Tea/coffee

    my goodness Erin, this is one of the most beautiful sites I have ever seen. Those looks spectacular! I love cake so much. And you are amazing. Thank you for having your hair always so tidy and neatly pinned up unlike some RUclips chefs that make it all about their hair. Nothing is more unappetizing than hair dangling down while they’re cooking. How lucky are we to have this MasterChef teaching us for free!

    I did my first 3 layer cakes within the last week, all to subsequently better results each time, but nowhere near how I wanted them to look. I watched and read so much over the last week, but this one is the most useful! I almost want to make another tonight just to see how it goes, but I’ll wait a couple days for the weekend. 😊

    Dear Erin, I.m frankly telling you , that I have gone 4 cookery classes to learn cake making.. But the knowledge that I obtained are not sufficient to make a proper cake, I'm daily watching , how to do a layer cake as I need to learn to make a wedding cake for my grand daughter if i would be fortunate.     I’ve watched this before but had to watch it again. Erin is top tier. Her value proposition is apparent in the first few minutes of her presentation. Her instructions are so easy to follow. I feel more than capable of being able to make my layered cakes.

      If you appreciated this video, you may also want to know that Chocolate sometimes gets a bad rap because chocolate products can include a lot of added sugar. Sometimes, there’s even up to 50g of added sugar in one chocolate bar! For context, the World Health Organization recommends staying under 25 g (or 6 teaspoons) of added sugar per day!

    I’m actually a pastry chef and cakes are my favorite thing to do. Even though I know everything she said I still watched the whole thing because her voice is so soothing!

    Thank you for these videos! You are a excellent instructor.. you have helped me so much , I started baking, my son's birthday cakes… The first one was the very hungry caterpillar theme and this last one was a dump truck theme, which was my first two-tier cake… I always use the same all vanilla cake with Swiss meringue buttercream.. I am definitely not 100% confident in baking cakes yet at all… But watching this video has really really helped me with expanding my horizons. If you will at all the cool unique things you can do with cakes this is not the first video I've watched of yours, every video I have watched I will say, has been extremely knowledgeable for me. You're a rockstar girl! Thank you so much
