    3 x 7" Tins
    VANILLA SPONGE
    235g Butter
    100g Vegetable Oil
    290g Caster Sugar
    5 Eggs
    335g Self Raising Flour
    ⅛ tsp Sea Salt
    100g Buttermilk
    ¾ tsp Vanilla
    ¾ tsp Orange Food Colour
    BLACK BUTTERCREAM
    300g 70% Dark Chocolate
    420g Cream Cheese (Room temp)
    130g Butter
    660g Icing Sugar
    2 tsp Black Food Colouring
    VANILLA BUTTERCREAM
    125g Butter
    200g Icing Sugar
    1 ½ tsp Milk
    Drop Of Vanilla
    3 x 8" SPONGE VARIATION
    305g soft butter
    130g veg oil
    375g caster sugar
    6 large eggs
    130g buttermilk
    1 tsp vanilla extract
    1 tsp orange food colouring
    435g self raising flour

    What I love about Jemma’s cake is that most of them are fondant-free.

      I've never eaten a layer cake covered in Crisco frosting, fondant, or whipped cream that I enjoyed. All common in the US.

    discovered this as we're getting to the season - looks GORGEOUS, delightfully spooky! i generally reside away from food coloring in baking, but i can't think of a more appropriate season than Halloween to include it! 👻

    For my workmates, I made a pumpkin cake the other day and made your cream cheese frosting to go on it.
    When I make this, I like to put pumpkin seed brittle on top.
    Inspired by the peanut pralinee from a couple weeks ago, I did the same with the brittle. Some of it was drizzled on top of the cake. Some of it went into the frosting. The rest is in a bowl with pretzel sticks next to it for dipping!

      Yes! Its the only chocolate cake recipe I use. Its lovely, moist and chocolatey😊

    Big ups to the camera man/editor for including the clean up of the cake board. Every cake video on youtube focuses on cleaning up the top edge and totally disregards the bottom.

    Cake looks fabulous! I saw a video about intensifying the buttercream colour, by putting it in the microwave for a few seconds, then chilling it and beating it again

      @@MrsBrit1 buttercream is not supposed to be fluffy, its supposed to be smooth. If someone puts too much colouring in, it will become runny. The video i watched, wasn't fake. And it wasn't the only video, offering the same tip. The heat intensified the colour...

    Hi Jemma.
    Tried this recipe and it came out the best I’ve ever made until it cooled down it looked lovely and fluffy and the skewer came out clean but sank as it cooled. What did I do wrong please.

    Is the "top coat" technique she does common? I've always struggled with that top-to-sides corner and seeing this, it's occurring to me maybe I was trying to apply too much frosting at once. I'll have to try thin coats with chilling in between next time

      I have usually heard it being called the "crumb coat" because the purpose is to not get the crumbs on the visible part but it totally makes sense that it would help get sharper edges. I need to have more patience to do that :p

      As the other commentor said I've always heard it referred to as a crumb coat but yes it's very common. At least from the Pro bakers I follow. You don't need to use a lot of frosting when doing it. Just enough to cover any crumbs and you're good. Once it's had its time to set up (harden) that's when you can go in with a good amount of frosting. Those plastic scrapers are very handy. Get one if you don't already have one. I noticed a huge difference (not applying too much frosting and my level of frustration) after buying/using it. Good luck. Happy baking...

    I would have guessed pumpkin sponge from the IG teasing (to actually have an orange ingredient in an orange cake xD) but I guess vanilla was smarter for a chocolate ganache :p

    What is a fan assisted oven and how do I know what I have?

      The newer ovens are mostly fan assisted these days. If your oven has a setting that allows you it move the hot air around inside it with a fan, that will be it. It allows you to cook food more evenly and reduce the heat setting by 10 degrees celcius or 50 degrees F.

      It's also known as a convection oven. Mine is a double oven, the bottom one is convection.

    I feel like that sponge should be orange flavour. But perhaps with the buttermilk in there it wouldn't work.

      I was hoping it was going to be orange flavored too. Hmm, not sure if the acid from the orange would effect the buttermilk. One way to make buttermilk if you don't have the reg on hand is to add vinegar or lemon juice so I don't see why it wouldn't work. Then again. There's a science to baking so I'd do some research before attempting it... 🤷‍♀️

    This one is the opposite of the one that was done I think 2021 or so with black chocolate cake and orange frosting with pumpkin designs ,I would love to make the cake orange flavored cake

      You can totally add orange zest to the sponge - add it with the butter, sugar & oil 👌🏼
