£1.42 BUDGET meal: Airfryer Tandoori Chicken with Lemon Rice

  • Being a Korma only type of person, I never ventured further afield spice wise, so it was fun to be a spice explorer and try something new. I also have never cooked with spices before, preferring to get it out of a jar - nothing wrong with that but after making this Tandoori chicken I will definitely be exploring making my own spicy foods at home rather than rely on a jar. (recipe/method below and pinned at the top of comments)

    Tandoori Chicken:
    1 Pack Chicken Thighs x6
    175g Plain Yoghurt
    1 tsp Garlic (lazy or 2 cloves)
    1 tbsp Ginger (lazy or grated)
    1 tbsp Paprika
    1/2 tsp Gr. Turmeric
    1/2 tsp Gr. Coriander (Sainsburys)
    1/4 tsp Cayenne 3p
    1 tsp Garam Masala (Sainsburys)
    1 tbsp fresh lemon juice
    2 small red onions
    Put plain yoghurt in a large bowl,
    add all the spices & lemon juice and
    mix thoroughly. Add Chicken thighs
    to marinade, coating completely. Pop
    in fridge to marinade 4 hours or longer
    Lemon Rice:
    250g Basmati Rice (for 4)
    Juice of 2 Lemons (I used 1)
    Coriander leaves chopped
    1 tsp Turmeric
    1tsp ginger (grated or lazy)
    65g Cashew nuts
    240g Green Beans
    Fry Cashew nuts until browned, add the
    ginger, Turmeric, coriander leaves and the
    1/2 a cup of water to the frying pan. Cook
    off for a few mins until slightly reducing.
    Add lemon juice, stir then pour over
    cooked rice, thoroughly stir in and serve
    with the Tandoori Chicken & Green Beans

    The first air fryer I bought was the 9in1 in October 2021, I then bought the 15in1 in December 2021, and have newly bought the dual. I can pressure and steam in 2 and air fry in another, best products ever! I’ve not used my oven in about 18 months cos the ninjas do what I want.

    That looks delicious Kerry, this will be cooked by me for tomorrow's tea. I absolutely love my duel blaze I make sponge cakes and everything in it. I tried so long to get a ninja but they were sold out everytime so I got the Cosori and never looked back. Great for all cooking and scotch eggs come out lovely aswell.😊

    Good one Kerry I have a Cosori their really good mines small version I use mine in tandem with tower oven air fryer also bought induction hob only small one only two of use all work well together in the hope of saving a bit on them there energy bills .

    Really enjoyed watching this one Kerry. I use lots of herbs and spices but like yourself I tend to do a pinch of this and a bit of that lol. Nothing ever tastes the same twice ha ha ha. My favourite herb is Fenugreek (Methi) I even use it when doing seasoned flour. Brings out the taste of any meat but especially lamb. Another great vlog. Thank you

    Thanks for the vlog especially as you are not very well Kerry. I’ve got an Instant Pot so l have to adapt a bit. The pressure cooker setting is very useful and does rice lovely . As you are suffering some mistakes and are not to proud to say let me tell you about my popcorn disaster! I followed the instant pot recipe and lots of the corn didn’t pop and burn the pot, so I tried the saucepan on the stove with same results so I searched RUclips and found a microwave recipe which was perfect, so I got my popcorn but left behind a kitchen that looked like a war zone😂

    Spot on. Been doing tandoori and tikka chunks in my air fryer for a while now. It's lush. I always take the skin off and make a couple of deep cuts in the chicken. Gets the marinade right in to the meat.

    My cooker is electric and has a glass covering, I put the Ninja on the cooker, I turned off the cooker so it's completely off, no clock, I have a 1 plate induction hob at the side on the counter. Unless I'm doing rice or a curry, madras or similar I use the Ninja. My mother used to debone the thighs before cooking them, sometimes she would remove the shin as well if she was cutting up the thighs. My meats are all reduced price in Lidl some by 30% and the majority by 70%, my freezer is full of whole chicken, chicken thighs/drumsticks, Mince and stewing beef waiting to be cooked or turned into pies in the case of the mince and stewing beef when I have the space in the freezer.

    Snap, just added the same Cosori to my collection Kerry, when I bought my Ninja could not get the 400uk so opted for the 300uk, although I have cooked lots of things in it found the drawers just a bit small. Have not used my electric oven since Christmas, just used air fryer and gas hob. Your chicken looks lovely. X😊

    I already have a ninja all in one with pressure cooker.
    Considering getting another air fryer to accompany it.
    Was looking at the dual ninja, but that cosori is looking very appealing due to the size of the basket.

      Hi I have a ninga 15 in 1 and use the pressure cooker mode most I think, and I also have a Cosori 5.8 think it’s that size😜, I find it’s a perfect combination, not used my electric fan oven at all except for the occasional large pizza, hope this helps ?

    Hi! It sounds like your new kitchen set up will be similar to ours. It was the induction hob that took the most to get used to. Luckily all our old pots and pans, bar one, had a magnetic base. If I take boiled rice as an example, on the gas hob it took 15 minutes to boil the water and 10 minutes to cook the rice. On the induction that's now 5 and 10. Quite an energy saving.

      I found that with the induction hob, so quick to get to boiling point! Gas seemed to take ages even on max

    I can just imagine the smell. I make something similar but I cut the chicken thighs into cubes and marinate with red onions and red bell pepper, then next day I cook them on skewers. I serve with either lime & coriander rice or turmeric rice with a tomato, cucumber and onion salad. Yum. I bet your family can't wait to get home to see what you've cooked for them.😊

The channel has definitely improved my cooking lol, Jimmy my youngest was becoming a fussy eater but that's all gone now, he would never have eaten and enjoyed the tandoori chicken 6 months ago ☺️👌💕

    Well your getting plenty of use from those lovely bowls, bet your so happy with them . Sounds like you have a bit of a cold coming. I like your new ninja. I have a induction hob. I love it. I had mine fitted when I had a new kitchen. It is very sensitive to leaning over it so safety it will turn off. Make sure your saucepans have a magnet ic bottom , normal saucepans will not work on then. I hear you say the colit has come out, hope you soon feel more your old self again. Take care. Xx

      @@budgetcookinguk so hope your feeling a little easier . There are some horrid bugs about at the mo, and seem to have been since just before Xmas. From what folk say , it is lasting about three weeks as well, sometimes linger, make sure you keep paracetamol up and your fluids. I feel like being back at work hehe. Not wanting to sound bossy sorry. . 😰😣

      Oh that's lovely Heather thank you💕 they are good aren't they. I had been buying cheap lidl/aldi ones for years, which were rubbish. My KR ones must have paid for themselves since I got them ooo jeez about 6 months ago, althou I paid just over £12 each for mine, I later saw that the prices had shot up! It's this cost of living thing, nothing is safe from price surges. Glad your hubby is having a good time!😄👍💕💕

    That is one Humongous basket - my 5.5 looks tiny by comparison!
    Have you come across Goldfish brand curry sauces? Haven't tried them yet, but they seem to get good reviews on RUclips so there are two tubs of the 'mild' Chinese one sitting on my shelf, courtesy of those nice people at Amazon Groceries. (Goldfish also do a 'hot' one, and some Thai as well.)

      Ah I googled it and I've got one in my cupboard and funnily enough Al made some to go with his chips an hour ago. I buy it from a near by co op about £3.25 although its prob had £1 added since I bought it lol. Chinese curry sauce is the one I've got. Lasts for ages, great with a chinese fakeaway, I used it (same one) in one of my very early vlogs. It's the closest to chinese curry sauce we could find. Come next Tuesday, I will have to put a kitchen extension on my wish list😄, it'll be a 100% comprehensively stocked kitchen for the channel👌💕💕💕hope you have a lovely weekend Nigel

    hi hows u what another great video i will be testing this out my self was wondeing if u could try to make fuge and can cu have the cosori 6.4 lite which is the one i am looking at u can neaver have to many air flyers and if u are looking at a pressure cooking i have the crock pot express turbo very goiod bit of kit

    Kerry not a cooking question but when you are cooking PLEASE SWITCH those lights oFF in your kitchen..they really annoy my eyes and give me a headache, especially when they are flashing [MIGRAINE] and i cannot watch your show only listen, AND I LIKE YOUR COOKING SHOW,
