HI well done on the victoria sponge.Do you weighing scales have a tare function! I only ask as mine do so that when doing ingredients all you have to do on each item take it back to zero then as the next! Just saves on the collection of bowls & make it easier!

Sponges don’t have any fat in them at all.
This is a Victoria Sandwich, not a sponge.
