Love the combination of pumpkin and chocolate and the ooey gooeyness of it all! Can light corn syrup be substituted for the glucose, or is it something entirely different?
Pumpkin and chocolate is a FAB combo! You can use light corn syrup in place of glucose - however you'll need to take into account corn syrup has a higher water content than glucose so you'll need to do some maths!

It makes it more stable. You could get away with leaving it out if you knew the meringue didn’t need to last that long

You can always put the meringued cookies onto a baking tray and pop them under the grill for little bit to get nice and toasty!
