We could not wait to share the recipe for these seasonal delights - everybody's favourite autumnal treat.. Pumpkin Spice NY Cookies! They're thicccc, packed full of white chocolate, pumpkin and of course all the spices - the ingredients you'll need to make your own Pumpkin Spice Mix is listed below! PUMPKIN SPICE MIX
2 tbsp Cinnamon
2 tsp Ginger
1 tsp Cloves
1 tsp Nutmeg
MAKES 12 COOKIES
COOKIE DOUGH
230g Cold Butter
160g Light Brown Sugar
160g Caster Sugar
360g White Chocolate
480g Plain Flour
2 tsp Baking Powder
1 tsp Salt
1 tbsp Pumpkin Spice Mix
100g Pumpkin Puree
1/2 tsp Vanilla
Orange Food Colouring
Roll in Demerara Sugar

Just one question, you say it's important to use unsalted butter, coming from Brittany this isn't something we use at all, always salted butter. So why should we use unsalted butter instead?
It's because salted butter can contain different amounts of salt - some are extremely salty, others much less so, even within the same brand. Because they want to control the amount of salt, they use unsalted butter and then add salt into the dry ingredients, that way they know they always have the same flavour every time they bake. But if you only have salted butter, of course the recipe will still work with that! Just leave out the salt when mixing the dry ingredients.

I baked these cookies and had a strange thing happen. I had some cookies spread and some stay high. From the same batch, cooked in a fan assisted oven, with an oven thermometer. I thought it might be one half of my oven was heating more than the other half. But the next day I put 4 more in out of the freezer and the side of the oven where the cookies spread previously hadn’t, they had spread the other side. It wasn’t this flavour. It was the extra chocolate flavour. With cocoa in the dry ingredients. Any ideas?? 💡

These cookies do look amazing. I am not a fan of white chocolate so I will need to substitute cinnamon chips.
Not using eggs is very unconventional and would seem to not work. I'm tempted to bake these with an egg. Sally and Dane, did you experiment with eggs? If so, how come you opted not to include them? Very curious.

Ground clove is impossible to find here... Did someone tried to crush some whole cloves in a Pilar and mortar before ? Is it possible to have it fine enough

When u first made them u mentioned first heat tray but I see on thr last 2 flavourd u never did that?

Usually when I make cookies the dough turns out very very sticky. I normally have to add loads more flour for it to turn out looking/feeling like the finished dough in this video. And I have no idea why I always need to add lots of extra flour.
Cold cubed butter don't overmix. It usually happens if you cream butter and sugar together until soft. Works for some cookies but not if you want them big and chunky because they will just spread.
A couple of thoughts I have are about the eggs and flour. The C&D book says that the eggs they use are about 60 g (if memory serves). I'm in the States, so our large eggs are smaller than that. Maybe yours are bigger, so there's too much liquid from that?
Or maybe the flour you're using has a lower protein content than what they use.
@@Arlo.x.x Hmm maybe I’m creaming the butter and sugar too much. Right now I just have a handheld whisk. I want to get one of those proper stand mixers and see if that does a better job.
@@lesliedausey yeah I was thinking something to do with the moisture, the liquids or the dry. I always use large eggs, and recipes for most things always say to use large. Maybe it’s the local supermarket flour I use that’s the issue.
