I have ever never seen who makes the pound cake like this. Feel like you combine the creaming method and the reserved method together to get a dense, light crumbs, moist and a liitle fluffy cake. I always want to find a way or a clip to combine two of the methods. The cake turn out really satisfied. Thank you for ur video clip.

Rather than doing so much trimming and wasting cake try baking your cake with the pan in a cold water bath. You’ll get much less doming and the sides won’t be so crusty. You will need to adjust baking time but at least there will be less waste. Apart from that the recipe looks delicious and I will try.

Mine is kind of hard, not the most fluffy and tender as it was claimed. 3. The amount of chocolate for ganache and glaze plus the jam would make the cake very very sweet. I cut the jam and glaze, but the cake is already so sweet. 3. The video is very pretty, but I found it not practical to be used. Maybe it’s just for relax while watching.
My doses : SPONGE CAKE: 1 eggs + one yolk ; sugar 34 gr ; cake flour 40 gr ;matcha 4 gr ; butter 22 gr . No cream, no honey, vanilla flavored. FILLING: Matcha 2 gr + cream 20 gr ; White chocolate 45 gr ;whipped Cream 130 gr. GLAZE : Hazelnuts 35 gr ; white chocolate 60 gr ; seed oil 10 gr ; cream 50 gr ; Matcha 2,5 gr I hope to be proved helpful
