Gaji-namul is a simple, delicious, everyday Korean side dish, meant to be eaten with other side dishes and rice.
It’s one of my favorites. I love the fresh taste, soft texture, and the beautiful vibrant purple color of the dish on the table. It's refreshing and goes well with oilier items to offset their texture and taste. I never get tired of it!
If you are a vegetarian, replace the fish sauce with soy sauce. Хобби
Tried this today and omg so good!! Been your fan since covid times, you were my lockdowm menu inspiration.. and still is!!

Hi! I'm Chinese and we also love eggplant with lots of garlic. Yum!
Charvi Singh: Being Indian origin, I was thinking the same thing. We cook so many versions, and many involve garlic.

I moved from a city that had so many selections to eat Korean to a city with not much option. I saw this recipe and had everything to make this dish. It was super yummy. Love the combination of sesame oil and soy sauce. Yumm yummmm
Same here 😫, went from living in a Korean settlement next to NYC, to staying in a small village in Bulgaria, where there’s no Asian food whatsoever 😬
She is the cutest person on youtube! I can just hear her talk, Im not even cooking. I feel like Im sitting in the kitchen with her and listening to her amazing stories!

Thank you for this delicious vegan recipe. I have these eggplants growing in my garden in AZ and lived in Taiwan for years. All the recipes I knew required ground pork and lots of oil.
This is delicious.
I love to watch your show and your happy personality. Such good recipes!!!
It sounds like you are good at cooking! Home grown eggplants will be very fresh and tasty when it's steamed and seasoned!
I love your many kinds of Kimchi too!
Absolute perfection! I made this dish many times under your guidance and it comes out perfect every time!
I just, at 62 bought my first eggplant. Not Korean, but the fat American kind. 🤣You’ve inspired me to cook this recipe. Thank you Maangchi for great recipes, as always 💖
I love that you always give vegetarian/vegan alternatives!! Big reason why I watch your videos :) thank you

Hi Maangchi thank you so much for the lovely receipe just love your shows greatly you are really a wonderful person I love to hear you talk so friendly and kind love you the best from Canada!!!!!
ever since i learned this recipe from you six years ago, it's my absolute favorite and i make it at least once a week! i love making a huge portion because eating cold leftover 가지나물 straight out of the fridge the next day is my guilty pleasure hehe
same here! It's been two and a half years only, but since then I made it numerous times. It is sooooo satisfying, and the taste stays with you for quite a while.
hii can you please tell , how many days it ca be stored in fridge after making ?
Made this for lunch and I'm so hooked up, it's so savoury and delicious. Not greasy at all too! Even my mother who was skeptical about this dish ended up loving it too! Will definitely make this again from time to time since it's very easy 😋
Great news!
This and your tofu recipe were a big hit during our family dinner.
Thank you so much.
Chinese (Simplified) caption is up now thanks to our volunteer translator!
Hi Maanchi You are just a wonderful person I look foward to your great receipes and I love listening to you.You are so homely and friendly thankyou .I am from Canada.
Romanie Thusyanth .
Maangchi what kind of soy sauce do you use? is it ligth or dark?
L. Parak just happened pasting by , light soy sauce for cooking , dark one just for colouring purpose
I am newly wed with my korean husband and this channels helps me a lot to cook korean food and side dish. Thanks a lot ❤🎉
I made this dish for the second time, definitely do NOT want to over steam the eggplants, 5mins is enough. Because I can’t have rare garlic, I left the garlic out and added extra chopped shallots. It STILL delicious WITHOUT garlic 🙂👍👍 Thankyou so much for sharing this fantastic side dish recipe. Will continue to make it frequently 🙂 🇦🇺
Gotta try this version....🤔✍️
My mom used to make gaji namul when we were growing up (her parents were from Korea but she was born here). I have made it for years as well. This is the first time I’ve seen or heard of it anywhere else. However, we use vinegar instead of fish sauce (just enough vinegar mixed with the soy sauce to make it a little tangy).
Czech caption was submitted by one of my volunteer viewers! Thanks a lot!
I cooked this tonight and I almost ate it all! This is my first time cooking/eating eggplant and now I love it! Thank you Maangchi! You Are The Best!
Wonderful!
This recipe rocked my socks off when we made it at home. We finished it in one seat. Sooooo yummy! We love your channel. Thank you for bringing forward great dishes.
👏
And I ate the whole thing by myself. It was that gooood. I love the taste of sesame oil and sesame seeds!
Looks yummy, thank you for showing us this, you also have a beautiful personality and your cooking is so authentic, great video
I just discovered Korean food with u
Watching ur videos all day
And I love it, following u from Morocco
U r amazing thank you 🙏🏼
I absolutely love the simplicity of this dish. It’s light and full of flavor. Thank you for sharing this recipe. Have a lovely day MaangChi!
Came back to revisit this recipe after finishing two bowls of steamed eggplsnts inspired by this recipe. Ran out of garlic and no pepper flakes. I heated vege oil then slightly fried the scallions before adding sesame seeds and oil. Also added a bit of salt and chicken powder along with seasoning sauce. Loved it.
Greek caption was submitted by Sofia Anna! Thank you so much, Sofia!
This was so easy and yummy to make!! Thanks so much for sharing! So excited to also have a dish that I can share with my vegetarian friends!
I love this recipe. Today, a lady from church brought eggplants from her garden and gave us a few. I can't wait to make it tomorrow.
Thank you for your motivating me to try korean dishes Maangchi! :)
I am from germany and tried cooking traditional japanese breakfast the first time and desided to try the eggplant too! Maybe I will try it with something else the next time and a little less seasoning to train my weak european taste buds hehe!😅☺️
Thank you for inspiring so many people!
I made this dish last night Maangchi. It was so wonderful.. What a great way to have eggplant! Nice and light texture and not greasy with a rich deep flavor. I think this is going to be my favorite side dish too.

Gonna try this today for lunch, looks super easy and I have everything already. I was just wondering what to do with a bunch of leftover brinjal in my fridge.
Can you make it and leave it overnight ?
Hi.. thanks for posting vegetarian recipes. Just love them! Keep posting such nice stuff!!
Maangchi love from India 🇮🇳 usually most of Indians do not have side dishes but my family is additced to k-food/ side dishes. Your dishes are really mouth watering 💜💜
Great! Happy cooking!
She had me at "Hi everybody!" Wonderful recipe
Hi Maangchi, I am a big fan of yours. This is a good recipe now that summer is here. Thank you. Always a delight to watch you. Makes me happy.
This is one of my favorite side dishes of yours, Maangchi! I make it all the time and have to stop myself from eating the whole thing! Thanks for sharing this wonderful recipe.
Aaah! Bliss. I took care to tear, not cut, the steamed eggplant, making sure that a greater surface was exposed to the seasoning. Used four pods of garlic, not three, taking a hint from Grandmama's broad hint! It worked.
With Chow Mein, it was totally mind-blowing.
You're absolutely adorably and I just found your channel! We picked 5 lbs of Korean eggplant at a local farm here in Hawaii! Looking forward to making this tonight. Happy New Year and Aloha!
Hi Maangchi! I just prepared this delish side dish today and finished it in one sitting! (my girlfriend luckily had a taste of it, and she loved it!) Thanks for sharing your recipes! We love you from the Philippines!
I'm glad you like this. It's one of my favorite side dishes. Steamed and seasoned eggplant is sweet, soft, a little salty and garlicky. Yum!
Lucky girlfriend! All the best!
Hi guys, I wanted to tell you that I tried this with a few changes and it was delicious!
I used a common aubergine/eggplant instead of a Korean one.
Onion and garlic give me heartburn so I used 1tsp finely chopped ginger *
I only needed 1 teaspoon of (dark) soy sauce for 1 eggplant
I don't know if it made a difference but I used a tiny pinch of asafoetida/hing because I've read that it's used in Indian cooking that doesn't use onion and garlic and we had some at home.
(I've been wanting to use finely chopped anchovies to replace fish sauce and make recipes even healthier but didn't have either.)
I added in 1 to 2 finely sliced radishes because I had some and thought the zingyness would go nicely.
*A lot of people with heartburn or other gastrointestinal problems can find that onion and garlic and tomatoes can give them problems. A lot of the time though, if you leave out foods that give you problems, you can find that after a while (days/months/years) you can eat some of them again in smaller amounts.
That's all. I haven't been eating healthily for days because I couldn't find an uncomplicated
and healthy dish. Thank you for the tasty food, realistic and easy to follow videos and your warm personality Maangchi.
I do have the same gastrointestinal problems that you have. The trick I do is that I use home-fermented garlic and onion. They seem to be kinder to my stomach when they are fermented than fresh OR I saute them and then I add them to dishes. Same thing for green onion (It is called spring onion in some countries) it hurts my stomach when they are fresh, but not when they are sauteed.
made this today and i really like this side dish!! thank you for the recipe. easy to do, but yummy!
👍
I always love your Korean recipes. I am trying to lear how to make Korean recipes as well, because I realised that your culture has delicious food. I will make this for my friends, who are coming to have dinner with me on Saturday.

the sauce in this recipe is amazing, just made the eggplant to go with some dumplings and a steamed egg (in same pot as the eggplant) and the sauce goes with all of it so well~
When I saw this recipe, I immediately went to the market and got some eggplants. Made it exactly per instructions and they turned out amazing! It went well with white rice and my husband loves it! Thanks for these recipes. We are trying to add more veggies into our diet!

Hello Maangchi! Thank you so much for your recipe! I forwarded it to some people who are in love with Asian cuisine like me. I just made it and your recipe really took me back in time when I stayed in China as an exchange student and got immersed in the delicious tastes of how eggplant is prepared there. Hello Maangchi! ..I am from India .
This side dish is really delicious. We , the Indians prepare a similar kind of dish where we just do a few alterations..like we use roasted eggplants and mustard oil which provides really strong flavour!
If you travel to India ever just have a taste of it once !! Love ❤ from India...
Thanks a lot!
I really love the fact that you enthusiastically try the food you make at the end of video, it really does give me humanguous amount of satisfaction and makes me think as if I really ate it with you:).

We have never tried steamed Gaji, but the recipe looks very good and tasty. Your channel is a great way for us to learn and enjoy exotic dishes.
This is my favorite type of dish. In our city were we are, we actually have an Asian store, it's my favorite store, they have all types of interesting Asian foods Korea and Japan etc. and they have exactly that kind of eggplant. I came to United States many years ago, I was not born in United States, i was born in Kazakhstan, and where I was born at people are related to Mongolians, but kind of similar to Korean people on the type of dishes they eat there could be differents on foods some really similar to Korean
That's amazing and really interesting!!!
Nice
Maamgchi you are so sweet & your tutorials are so clear. Thank you!
You are my favorite chef. I don’t even eat seafood but it’s always interesting watching anything you make. The eggplant looks delish.
For some reason, this was on my recommended and when i try to search for food, this is the first video that pops up. I tried making and honestly, 난 너무 좋아요. 잘했어요!
Welcome to my cooking channel!

Some more veg recipe please
This is the best way for me to make eggplant. I just make today and loved. Thank you.
Wonderful!
great recipe. ..i just am so hooked on watching all your dishes and recipes
I love that this is steamed. Eggplants are like sponges and soak up a lot of oil.
Olias that won’t work well. What I found helps is that rub salt on them like a lot, then let it sit for an hour, then wash and squeeze them. They will barely soak up oil except a little!
I agree totally and then it becomes unhealthy.
lol
I think is would be yummy on the grill too.

I make something very like this with asparagus, roll-cut for maximum surface to absorb flavor.
I used to fry my eggplant, like this, but now, I'll steam it. Thank you!
I made this for lunch today and it was so yummy! ☺️

the first time i saw this video, i made this since we have eggplant in the backyard...it was so delicious...i put ginger, a tablespoon of coconut vinegar and lemon juice in addition to the spices you have on my salad.really a mouthwatering dish.
I made this and it was delicious! Thanks for sharing this recipe. I'm not vegetarian but I did not have fish sauce on hand so I used more soy sauce instead like you suggested. Yum!
