thats how u decrease the bitterness of bittergourd as well. here, we cut the bittergourd into its desired cut then soak it in saltwater for an hour or more (longer, better). but dont overcook it because it will become more bitter hahaha

2 Chinese eggplants cut 4 inch long and half inch fat Keep in salt water for half hrs[ 1 or 2 tbl spoon salt and fill up the bowl with water and keep there ] After half hrs over no need to wash just drain in and add following components 1 and half teaspoon of corn starch and mix evenly Afterwards heat up wok in high heat with whatever oil you like with eggplant When wok is heated turn heat to medium and put eggplants The goal here is mostly to get that caramelised ish texture so we gotta cook it like 90 percent Fry on High Mid heat for a min and after min get a lid and take down heat to low medium and keep covered And make sure to take off the lid every 20-30 secs to stir the Veggie to make sure they not sticking as you know eggplants love to stick to the bottom Anyhow after 4 mins you should find your eggplants skin nicely charred and overall 90% cooked And set it to a bowl or dish to let it rest and use later And now the aromatics Chop 5-7 or more cloves of standard sized garlic cloves, depending on your interest of garlic you may reduce or increase the clove amount Get like a Ginger that's like 3 inch tall and 2 inch thick and finely chop it Now Pepper, Get 4 inch fresh red chillies and cut it in stringlike fashion, red is important And chop up some green onions for garnish, garnish comes at last so just keep it prepped Now the important part, yhe stir fry sauce 2 tbsp of sodium Soy sauce 1 tbsp of Dark Soy sauce 1 or 2 tbsp of oyster sauce 2 tbsp of black vinegar 2 tbsp of brown sugar And try to find spicy bean paste it's an unusual thing but you nay find it. If you can't find any it's fine 3 tbsp water And now stir it in the bowl real good Now the finale Heat up wok to medium heat and add finely chopped ginger and garlic and proceed to give it all a nice stir for about 30 secs And after 39 secs add red chillies and after stirring for 10 secs get the previously almost cooked EGGPLANT that you set aside Stir it all for 20 ish secs to get the aromatics in your eggplant After 20 secs add that sauce mix from before Now keep stirring it till you are happy with sauce consistency But cook it for at least 3 to 4 mins and stir it every 20 secs turn off the heat when you are happy with the consistency and add the green onion garnish And voilà, you have attained Chinese garlic eggplant stirred something And here's something you can copy on your clipboard

This was crazy good! Made it last night. I didn't have all the ingredients for the sauce and used soy sauce, oyster sauce and balsamic vinegar. Also used regular red peppers sliced thin to look the same. So it was delicious but a non spicy option as we had to feed our two year old too

I made the recipe with 1/2 tsp of brown sugar cane out ok, omitted the red peppers & told my spouse just use her Tabasco, & came out ok, eliminated the spicy paste , but use yellow bean paste, still tasty.

That’s how do it too. I’ve learned it from my mom.

When l lived in China, l *always* requested the egg plant dish; l was not even a fan of egg plant. Chinese egg plant with rice is the best.
