    2 x chinese eggplant cut into bite size pieces
    1/2 tsp vinegar
    1/2 tsp salt
    (Let the above mixture stand for approx 15 minutes)
    Scallions, chopped (white part used in cooking - optional; green part used as garnish)
    1 tbsp ginger, grated
    1 tbsp+ garlic, finely chopped
    Finely chopped small green chillies
    4-5 tsp corn starch - divided (approx 1 tbsp used to coat eggplants, the remainder to make slurry)
    1 1/2 tbsp soy sauce
    Chilli flakes to taste (optional)
    Water as needed
    Little bit of sugar
    Sesame seeds for garnish

    This is delicious! I've made it about 3 times now. The only thingI do differently is that, after I coat the eggplant in cornstarch, I put it in a parchment lined roasting pan, toss with olive oil and roast at 425 for about 25 minutes. I stir it about 2 times during its roasting time. They come out really crispy.

      I’m confused with why crisping the eggplant is so important when you end up covering them in a reduced, syrupy sauce?

      @@rggunter The eggplant will still be crispy unless you eat it the next day. I'm thinking it's for the texture. But what do I know? Lol

      i'm not concerned about fat or weight loss because i'm extremely healthy and consistent in the things I eat so much so that when I piss my ph is 8 ii'm sure this has fat because of the coconut oil I planned on baking mine because I DON'T FRY FOOD EVER!

    This was really tasty. I made it this morning and my partner loved it even though he previously hated eggplants. The ginger makes all the difference. I added jalapeñoes instead and chilli garlic sauce instead of the flakes and it was really good. Thanks!

    Btw I just used ginger-garlic paste instead of mincing then separate, which saves a lot of time and effort just FYI. Also, I’d recommend adding the chili flakes early on before the soy sauce. The heat from the pan activates the aromatic properties of the chili flakes from my experience

    I love that you cut the eggplant in pieces not slices. That way they keep a firm texture which makes them extra delicious.
    I don't salt and rinse them because I like the bitterness but that's just me.

      Ann T did you coat the okra in cornstarch and sauté it the same way as the eggplant together before adding the sauce? Or did you cook the okra separately? I’ve never cooked okra before

    Finally! An eggplant recipe that has some significant flavor and a little spice for good measure. I don't have Chinese eggplant, only globe eggplant that I purchased at a farmstand, so I'll use that instead. Great idea to make a coating with cornstarch and saute in light amount of oil. I think I'll serve a small portion of this eggplant with a side of other vegetables and maybe some rice since the eggplant is pretty heavy on the soy/sodium. Looking forward to trying your recipe.

    Oh my gosh! This is amazing! So I used mini eggplants since that’s all I had, and used a jalapeño instead of the chillies since I didn’t have any and let me tell you, my mouth is on fire! But I love spicy and it’s amazing! Also added a little too much cornstarch for the sauce but it turned out really great! Will have to make again! Thank you so much for sharing this recipe!

    I made this oil free. Instead of sautéing in oil I cooked the coated eggplant for 15 minutes on 400 in the air fryer. I prepared the sauce only using water to sauté. I added the cooked eggplant to the sauce and cooked together for 5 minutes. Delicious!

    This recipe is fire! 🔥🔥🔥I added basil to it and didn’t have oyster sauce and scallions so I used white onions and hoisin sauce. I also don’t use corn starch at all so I used arrow root powder as my thickener very good it felt like a whole ass Thai restaurant in my kitchen thx!

    Mitisha I’m a bachelor and I cook for myself. I took a go at this today. It doesn’t look like yours my eggplants are a bit mushy(Italian eggplants) and I also added a couple of different ingredients. Green Chile’s, peanuts instead of sesame seeds and several dashes of Tabasco sauce and several dry seasonings not used here. I served on a bed of basmati rice. I will definitely make it again because it tastes great

    I made this dish with your instruction tonight and it was great! My wife and I found it to taste authentically Asian, and spicy spicy! The most challenging was getting the chopped eggplant pieces fried/toasted without burning the outside too much. It came easy for you in the video.

      Terri me too...I'm going to try it this weekend but I'll add the ingredients 1st....olive oil etc then the eggplant last n cover it up to simmer down.
      I don't want the crispy version or frying it 1st. Then frying the ingredients too. I'm a lazy cook as it is 🙈🙈😁😏. So the easiest n quickest way is best 4 me🍆🤷‍♀️😁😁👍

    I made this and wow. I thought I fully messed up the eggplant. No matter how much oil, the eggplant would stick and burn it was a mess. I think I put in too many at once so I feebly attempted to rescue it by using a new stainless steel pan and only cooking half after recoating with cornflour and my lord I cannot believe the flavour!! Next time I will do double. This tastes like addictive takeout THANKYOU!

    Yrs ago a restaurant use to make this eggplant dish, we use to drive for an hour to buy it, then they changed ownership + chefs and the dish was boring. Pretty darn sure this is the one we fell in love with. Going to try it next day off. Even if its not, it sounds yummy.

    I tried making this a few weeks ago and it's now a favorite! I add a bit of fish sauce along with the soy sauce and god dang it, so good!
