High Protein Sandwiches with Chickpea and Olive Spread
1 cup chickpeas, mashed
1 cup garlic hummus
1.5 tbsp olive tapenade
1 tsp Greek or Italian seasoning
1 tbsp fresh lemon juice
black pepper and/or red pepper flakes to taste
bread, avocado, pickles, cucumbers, basil, and lettuce for assembling
Combine all of the ingredients in a large bowl. Mix well and adjust seasonings to taste. Add more tapenade, Greek seasoning, or lemon as desired.
Assemble the sandwiches with a layer of chickpea spread on each slice of bread. Add the avocado, pickles, cucumbers, basil, and lettuce. Slice in half and enjoy!
Homemade Vegan Sushi
Sriracha Baked Tofu:
1 block of extra firm organic tofu
2 tbsp Sriracha
Sushi Rice:
2 cups sushi rice
3 tbsp white rice vinegar
3 tbsp agave
3/4 tsp kosher salt
Filling:
1 Avocado, 2 mini cucumbers, 1 cup red cabbage, 2 carrots, and whatever other kinds of veggies you like, cut into thin strips
Other:
Nori sheets for rolling
Soy sauce for dipping
Step One: Make the Sushi Rice
Cook the sushi rice according to package directions. Once cooked, add the vinegar, agave, and salt and let it cool.
Step Two: Make the Sriracha Tofu
Press the execs water of the tofu. Pat very dry and cut into strips. Coast generously with 2 tbsp of Sriracha, save the last tbsp for later.
Bake on a lined baking sheet at 400 degrees for 15 minutes until firmer and the edges are slightly caramelized.
At the last minute of cooking, add the remaining 1 tbsp of Sriracha and pop in the oven for 1-2 minutes. Let cool completely before rolling into sushi.
Step 3: Cut the veggies and avocado
Step Four: Assemble the Sushi
To assemble, place nori shiny side down. Add a thin layer of cooled rice and press + spread it out using wet hands to prevent sticking.
Then line up desired veggies and tofu on the top third of the sheet. Tip: sometimes I drizzle with sesame oil and/or a squeeze of lemon juice here for extra flavor! Then roll tightly, pressing down evenly as you roll.
Slice with a serrated knife, serve with soy sauce, and enjoy!
Tip: Meal prep this 2-3 days in advance for easy lunches or a nice snack to come home to after a long day!

Wow ur all in my mind, I was literally just reading abt the complex carb, protein and fat combination and I thgt I'd make chick pea tuna with pesto spread on the bread, and I have rice paper that Im scared to use b/c they're so delicate 🤷🏾♀️, I want make wraps but I also wanted to make dumplings & either fry or tost them in oven 😏 idk...
I'm so glad this was good timing! I really think it's key to feeling good and energized, so I'm happy this was helpful! Hope you enjoy the sandwich, and I'd say try the summer rolls!! If it takes a few tries with the rice paper, that's totally normal. That's how it is for everyone, but it gets easier with practice and also, even if there's a little rip or they're not perfectly wrapped, they still taste good 😊 I'd say go for it and have fun! 🤗
How to you curb the occasional meat cravings? How do you adjust when you haven’t prepped for the week or are just feeling lazy and don’t feel like prepping?
Having hearty meals with healthy fats and proteins so you’re satiated. Trying some different mock meats like beyond burgers or daring chicken or Morningstar corndogs etc for replacements when you’re in the mood. Having easy 5min go-tos or freezing portions of things you’ve cooked before (like stews, bean burgers, stirfrys etc that freeze well) so you’re never in a bind
That's a great question! If I feel like I'm craving chicken or a cheeseburger, I eat them, but I just have the vegan version. So for example, if I want chicken parmesan, I'll have vegan chicken parmesan. And if I want a bacon cheese burger, I'll make a vegan bacon cheeseburger. I don't think a plant-based diet is about deprivation, it's just about reducing harm whenever possible. So I still eat what I'm craving, but I opt for the vegan version 😊 I do think that meal prep is a separate question though. Meal prep has less to do with veganism and more to do with cooking in general. I don't think it's necessary to meal prep, but having a loose plan when grocery shopping helps me make more enjoyable food. I totally get feeling lazy or just not having the time to prepare meals though, that happens to me too, and in those moments I rely on very simple meals. A lot of times I say: "a grain, a bean, a green, and a sauce." I learned that slogan from Nina Montagne on RUclips and it helps me make a balanced meal using what I have on hand. Any combo of a grain, a bean, a green, and a sauce is usually tasty and quick. This could be rice, chickpeas, broccoli, and store-bought Bitchin sauce. Or it could be quinoa, black bean burger, spinach, and tahini sauce. This combo usually works well for me and it's easy to throw together. But my favorite "lazy meal" is breakfast for dinner....aka tofu scramble with toast. It's easy, filling, hearty, and fast. We have it for dinner A LOT and dinner's read in 6 minutes lol So in short, it's just about finding what works for you on busy days, and what you can make quickly that you actually like eating. I think that takes some experimentation but it soon becomes second nature. Hope that helps!

Brush a little bit of neutral oil on it if you want as left overs
Yeah they dry out in the fridge sometimes so it's a good idea to wrap them individually and store in an airtight container. They soften as they come to room temperature too, the cold makes them harder. Hope that helps!

With the rice paper rolls, I always find the rice paper is hard the next day…. How do you prevent that??
Good question! It's a good idea to wrap them individually and store them in an airtight container. They also soften a bit when they come to room temperature. Hope that helps!
