So I tried the Lemon Asparagus pasta and let me tell you, capers and beans are NOT optional, this food is fucking amazing!!! I had so many doubts because my husband doesn't like strong lemony flavors, but the whole pack of pasta was gone by the end of the day with just the two of us!! :D Thanks for the recipe

I love how accessible and approachable truly all of your recipes (these included) are. Whenever someone asks me for vegan meal ideas, I always direct them to your blog and social media-admittedly, the mushroom stroganoff recipe. I’ve turned several non-vegan heads over the years with that one 😂
Of all the vegan content producers I’ve found online, nobody comes close to how entertaining you are while simultaneously offering 100% free meal and recipe ideas that a home cook can pick up with ease, all with realistic ingredients that you don’t need to spend $1000 on. Sooo looking forward to making that Lemony Chickpea Soup...honestly, the majority of my favorite soup and stew recipes come from Nisha! Because of that, I just bought her Instant Pot cookbook which I've heard a lot of great things about. My Instant Pot had been sitting sadly under-utilized, and I'm looking forward to this cookbook spurring me on to finally make use of this wonderful, time-saving tool that I inexplicably never use, lol.
Ha, I can relate! I have had an unopened toaster oven sitting in my garage for the last 6 months. Like I know it will be useful, but I haven’t taken any steps towards unpacking it let alone using it. I’m so honored that you love my soup recipes!
I have been following you for years and I just love your recipes! I was raised vegetarian and I like to experiment with a lot of different things in my cooking, and I love the flavors and ingredients you incorporate in your recipes. I'm also Indian and find some vegan recipes to be more "new american," and it's just lovely to see you incorporate indian flavors and cooking techniques in some of your other recipes. It makes me feel more connected to my culture and family while still cooking in my own special adventurous way.

While I appreciate that you're sharing and not always shilling your Meal plan, I do think it's a Public Service for you to TELL THE PEOPLE that they can have more of your delicious, healthy, superb recipes by signing up for the Meal Plan. It's worth it, folks! Support this woman. She's endlessly creative. (decidedly not a paid review - I'm in Toronto, far, far from anywhere where there are Spring Veg in farmers' markets)
Another tip for preparing asparagus...much of the toughness is the outer skin. If you use a peeler to take it off of the lower section of the stalk, it makes it edible and saves food waste. You can also use whatever you have left to make soup either the bits or peels. I just cook it down, blitz it up and filter what's left to get rid of the tough fibers. That way you waste even less.

I watch your stuff and use your recipes almost on a weekly bases since I went vegan 4 years ago. I truly love your recipes, they are delicious, very balanced and mostly very manageable! I have to say that our all time favorite is the red lentil curry, I even once cooked it for my co-workers! thanks for all your work it really helped me stay vegan and even get my friends and husband to enjoy vegan food!

Because I was going to the grocery store today anyway, on a whim I decided to make that tofu "ricotta" toast with spring pea salad, and it was SO good! I used some thick-cut rosemary sourdough loaf from the grocery bakery as my toast. Only adjustment I made was cooking the peas a few minutes longer.
Right? Such a good combo of flavors and textures. Glad you enjoyed it!
You are outdoing yourself Nisha. Everyone of these I want to eat this week! It's autumn here in Sydney but I did buy some Mexican asparagus for $5 last week. How many stalks of asparagus in the bunch you might ask? Five. So $1 per stalk. My son, an adult now, used to call it “asparasguts” as a child, so he suggested it was ridiculous to spend that much on asparasguts. Still we have enough of all the makings to, well, go forth and make. Tally ho, guv'nor (you gave me a laugh) 😅

He's coming home from a very stressful time at work (tax season in Canada and he's been working very long hours since mid-February!!) and I am surprising him with this soup. Delicious!! I save the asparagus ends and make a pureed veg soup (sweet potato, carrot, asparagus, onion, garlic, maybe some coconut milk, Thai curry paste or whatever). All the ends of those veg, even skins, because once pressure cooked and out of instantpot, it gets pureed so you don't see the ugly, blemished or ugly veg scraps!

I slice the harder pieces of the ends of asparagus and boil them with rice and lemon for an infusion of flavor

Nisha, will frozen peas work for the ricotta toast?? I am making a mother's day supper this Sunday and have already committed to making the ricotta toast and the soup (with fresh from the garden rhubarb minosas)! However, I can't find fresh peas at any grocery store, apparently they're not in season here yet! Many thanks for your fabulous recipes!
Regarding the spring salad, I find it really interesting. As oranges are in season in winter in switzerland (though still imported), for me, they are defenitely a winter and especially christmas flavor. I imagine, this salad tastes super delicious. If I want to use something more in season, could I use anything else than an orange or citrus fruit? What do you think would work?
