I just tried this recipe and I am floored at how delicious it is. I had to give up flour so thought I had to say goodbye to waffles and pancakes. I am so happy! I used an Oster Belgian waffle maker (one of those that flip over) and it made one big beautiful non-sticking waffle. I wish I could post the picture. I put it on maximum and waited until there was no steam coming out. I was out of oranges so added a teaspoon of white peach balsamic. Put slices of mango on top. Amazing! Thanks ladies.
Ok. Just made these like pancakes, as Aussies rarely have waffle irons. They were fantastic. Topped with Jane’s Very Berry sauce....perfect dessert. Thank you 😊

Old school tip. Wait til they stop steaming before you open the iron. Mine has a green light when they are ready but I find oat and banana waffles need to be cooked longer. I like crunchy!
Hi Jane and Ann! I'm not much of a recipe person anymore, but I'll tell you the basics of what I do. Last batch I made was with flour I ground from some red lentils. I added a tsp or so baking powder, then I added liquid ( I use veg broth and a tsp of ACV) till I had a thickish pancake batter. Made a flax egg separate and let them sit while I prepped my veggies. I like to sauté veg first such as bell pepper, onion, carrot, garlic, to soften them. (Leafy veg can just be added before cooking). Let that cool a bit. Next I choose my spices/seasoning. Mix the batter and flax egg, add seasonings and mix well. Taste and adjust seasonings. Stir in your cooled sautéed veg. Taste again and add adjust seasonings if needed. In the meantime I should have mentioned I had my waffle iron heating. Next, but I hate to admit, but I use a schmear of oil to top and bottom of waffle iron. You can try a nonstick one. These take a good 5 to 7 minutes to cook thru. I watch how much steam comes out of the edge. When that slows down I open the lid and lift the edge with a chopstick. When it's browned nicely and doesn't stick it's done. These are moist, dense and in my opinion delicious. I've made so many variations! You can customize this to fit your tastes. I've also done "no-meat" loaf/burger mixes in the waffle iron just so I don't have to use my oven. The possibilities are as vast as your imagination.
I just tried these and I love them. I like them so much more than just eating cooked oatmeal for breakfast (or whenever) and I can make a bunch up ahead and reheat as desired in my toaster oven. My new toast!!

Beverly Holiday I’m in the same boat. I have a Nordic Ware stovetop waffle iron which I adore, but I’ve made these several times and the sticking is epic. Have tried lower temp, different cooking times... I’m just going to have to spray. 🤷🏻♀️

Dash makes a great non stick waffle grill. I got it on sale for 32.00. I never use any oil. But the Esselstyn recepi never sticks. Its great. 6 minutes its done
This recipe looked so delicious as I start my plant-based food journey. Since I didn’t have a banana, I substituted 4 oz. of unsweetened applesauce, used oat milk in place of water, and used cinnamon in place of the orange rind. Oh, so delicious!

Also, I made extra to take to work...and you know what? They taste great cold at my desk. Real food as ingredients...you just can't go wrong.

Did a variation of this, today, with some sourdough starter and it came out great. I don't have a 'processor' or a waffle maker, so I put it all together the old fashioned way, in a bowl, and made an old fashioned pancake. Oh, yum! Thanks for the idea.

Please tell me what waffle iron you used. I tried to make them and they stuck miserably in my "non stick" waffle maker.

They are a staple in my home now. When I eat organic oranges, I freeze the peel so I can add it to waffles, pancakes, smoothies and cakes. Delicious!
