Zeb's Ingredients:
2 1/2 cups old-fashioned rolled oates
8 ounces of apple sauce
3/4 cup Walnuts ; finely chopped
1/4 cup Flaxseed meal
1/2 zest of Orange & 1/2 zest of Lemon
1/2 to 3/4 teaspoon ground Cinnamon
1 medium Banana chopped into 3 parts
1/2 teaspoon of vanilla extract
1 to 1 1/2 cups Almond Milk
All ingredients are combined & poured into power blender ,then batter is poured into a waffle maker to grill and then serve.

Can you leave out the banana or substitute extra apple sauce
@@donnadallariva8377 I think you could use something like cooked sweet potato, or canned pumpkin (a little more liquidy), somewhat close to the texture of a banana. Not as sweet as a really ripe banana.

That’s how DNA works.
Typically cook the waffles until the steam stops coming out of the side, and that means that they're finished! Usually anywhere from 4-6 minutes. I usually set a timer for 4 minutes and then watch until the steam is gone, then get them out. I read that a few years ago when I first started making waffles and it seemed like my plant based ones never got cooked enough until I started following that tip.

As the batter sits and thickens between waffles do you add more liquid?
Im eating them right now. Took some out of the freezer and toasted them. Topped with sliced bananas and maple syrup.

I tried cooking the batter in my waffle iron. No luck, they stuck so I tried cooking as pancakes. Nope, didn't like them. Too gooey and yes I did cook they long enough.

Seriously curious to know the brand of Zeb’s sturdy waffle maker. Seems to be standing the test of time judging from the paint stirrer that holds it together.
When I was in junior high, I was electrocuted by a short circuit, putting a fork into a waffle iron (I was barefoot and it was raining). It threw me across the kitchen. Now I am afraid of waffle irons! 🤪

I have made the waffles today, but no matter how long I kept them they split in 2. They were very crispy, but it just skin, nothing in between. I added a little more oats thinking maybe it was too thin, but nothing helped. Anyone can tell me what I did wrong?

Hi Everyone, I tried making a half recipe but made an unholy sticky mess of my non-stick waffle pan. I’m new at this kind of cooking so I’m not sure what I did wrong-does the kind of plant milk make a difference? I didn’t use a nut milk-it was pea milk. I may have come up with a batter that was too thin, also. Then I thought, “No problem, I’ll make pancakes”. Those stuck also. I poured the rest into muffin tins. We’ll see what happens. Anyone out there have a suggestion for next time? Thanks in advance!

Are you sure it cooked long enough before opening the waffle maker? Btw, I plan to use water to make these less calorie-dense since oats + water in the Vitamix makes a basic oat milk. I use a very similar recipe for oat/water/banana/applesauce/flaxseed/cinnamon/vanilla pancakes. :)

I’ve GOT to try this. I don’t have a waffle maker but will try it like pancakes
I’ve tried this recipe twice (from plant strong menu which does not have the applesauce so I added it this time) both times using my vitamix to blend it all together. No matter how long I cook these the inside just wont cook through, it stays mushy and I am cooking them twice as long as our regular waffles, maybe I am over blending the batter…help, Zeb what am I dong wrong? Really want these to work, love the ingredients.
Me too. It must be the waffle iron that does the trick. If yours works with plant based, no oil mixture, name the waffle maker brand.

Well since everyone is thinking what happens lol when you zest I'm going to say something too haha I think that when we zest we get the essential oils the deliciousness of those lemons and oranges yum yum and yum flavor

😋😋😋 I am guessing that this might work for pancakes as well…perhaps with less liquid. I have been fooling around with recipes using psyllium husks, oats, and flax, (which come out very sticky, but I will definitely try this one!

Did you put any oil on the waffle maker? Mine always stick without a spray of oil-and I HATE using oil. Any suggestions would be appreciated.

No oil is needed and yes, you can always use batter for pancakes.

This recipe is called Big Hit Waffles in the Engine 2 Cookbook. Warning: Big Hit Waffles recipe calls for baking SODA. If you use soda, waffles will not turn out well.
I'm not new to plant-based (50 yrs) not whole foods (40+ yrs). I say that to say this. Seems this gluten free stuff is a fad. I've made so many waffles in my life...healthy ones. Always had to spray the waffle iron with oil. Ok, so Zeb didn't, & his didn't stick. I ask myself why. Anyone have answers? Oats are sticky stuff. I tried (with 2 diff waffle irons) & both STUCK BADLY. We were unable to eat (not only do I hate wasting but I can't afford to waste). I sprayed one iron, didn't spray the other. Both the same. I follow the recipe exactly. And as Zeb indicated, it continued to thicken, so I had to add a little more soy milk, two times. I'm not believing I'm the only one who has struggled with this. Personally, I have no issues with the flour God gave us from grains. I understand some are Celiac but that might be half of 1% or less of the people out there? So why is everyone stuck on oats... A variety of grains is better for us.
That's how I see it, for whatever it's worth. If I can save anyone the trouble that I had today with the sticking... I'll use this recipe again if someone can tell me how to keep it from sticking. It has a good taste, and of course the ingredients were all healthful. Thank you!

Thanks for this recipe! I made these waffles yesterday - fantastic! I had a leftover waffle today which I heated in my air fryer. It might have been even better!
Syrup has a big glycemic impact on me so I made a topping of frozen mixed berries (thawed) and blended with a couple dates. Heated this up on the stove until it thickened. It’s delicious on these waffles!
