I love love love the 'picture book' meal (base) plan. I cut & paste this and it is now what is my shopping list! (Of course with Rip's updates) ... You should do this for an entire month!
How I would like to have a bowl building cookbook, with recipe lists, that takes into account that people have to prepare lunch at home at the crack of dawn, and with no aftermath preparation start eating lunch right away... Just a week with 21 meals, that you can prepare in two minutes.... put together in a book with shopping lists attached to it.

Haven't had any problems during the holidays here. We don't do "traditional" things or foods. Way too expensive anymore. We are plannings on pizza for Thanksgiving. I will be making my own pizza dough and pizza toppings. Now for Channukkah (no wrong way to spell it), I fix latkes for my son and husband the usual way. For me I fix latkes using plant ingredients and the oven to bake and not fry. This is a time for fried foods and I have found ways around it for me. It is also a good time to used seitan with the Bake-On sauce, Yummy! Eat Loaf is also good, and of course homemade pizza.
I was six pounds from my weight goal when covid arrived here. The governor of the state I live in made it law that all seniors had to stay inside their homes and only go shopping during certain hours set aside by some stores. All of our medical appointments were canceled by the various medical facilities. I could only go up and down the stairs just so many times. Most of my exercise was walking to and from places before covid. I gained about forty pounds during that year and been trying to eat and work it off. So far, just a couple of pounds. I'm into Davidic Dancing and do that every Saturday and whenever else I can get away with doing it. If you want to know what it is, look up Messianic Dancing on tube. I am 68 and yes I do it at those speeds. I'm not able to get down onto the floor to do anything because my knees hurt to get on them, plus they do a lot of painful popping when trying to pick up something from floor level or slightly higher. I can do pushups against the kitchen counters by pushing myself away. Got any ideas for arthritis? Lower back pain? Also need a recipe for ketchup that does not have sugar. When I first started Plant based, I tried having something with sugar and it made me lose a perfectly good lunch. So, no sugar. I was still learning the basics at the time and didn't know about "no sugar". I have since found healthier substitutes like fruit. Thank you for any help that you are able to do. :)
I have both Engine 2 books. I use both depending on what I feel like eating any particular week or two. I make enough to last about one to two weeks so that I only need to take from freezer and warm up in the microwave. I have lots of time (retired), but I'm not the only person using the kitchen. I put a lot of riced and shredded greens in my chili along with beans, veggies, pureed pumpkin, refried beans (nothing added), and anything else I find to put into it. I make a large stockpot of this and it lasts me for about two weeks. My food is cheaper than for others in this household. :). Found that with mushrooms, I need to rice it to be able to eat it. Something to do with texture. I am currently have problems with being able to eat anything raw. I no longer have any upper teeth to be able to bite and chew. In process of needing to get dentures and lower teeth taken care of. So far I have been working around this by cooking everything until they are very soft.
I prefer to soak my beans overnight and then cook them in the morning. I do a big batch at once and measure out about one and a half cups per ziplock bag and put into freezer. Beans already done!
My regular breakfast bowl each morning is Oldfashion oats, hemp seeds or chia seeds, cinnamon, unsweetened applesauce, kale, mixed berries (Blackberries, blueberries, raspberries, and strawberries), and unsweetened plant milk. Warmed up in the microwave, then topped with sliced bananas (when available, don't last long around here). Sometimes for a change of pace, I cook up some steel cut oats with chopped peaches and cinnamon with the same seed choices. Sometimes Instead of cooking with water, I cook the steel cut oats in strong coffee for a whole different taste sensation. I have also used chopped apples and raisins and chopped dates. I top these off with a drizzle of plant milk. Sometimes I go all out and make the blueberry pancakes with fresh blueberries. don't need to top those with anything. Now with that cornbread recipe, is there a way to reduce the amount of pure maple syrup so that it isn't so sweet? I have made it and found it to be too sweet for me.I make them into muffins in my non-stick muffin pan my husband got for me. A whole set of non-stick cookware and bakeware.
@@kathiemott3988 when recipes call for maple syrup, sugar, etc, I always omit sugar and syrup. Instead I make date paste. (1 cup pitted dates, 1 cup water, simmer until soft then blend. Pour into ice cube trays, when frozen put in zip lock. ) I also add unsweetened applesauce to recipes calling for sweeteners. If baked muffins are not sweet enough for you or hubby, add a dab of maple syrup. 😋 hope this helps.

The only problem is, it gets pretty boring after a few days. Do I need to eat only oatmeal to help with this? Any helpful suggestions would be greatly appreciated,
We really really encourage everyone to eat oats every day. You can mix it up - eat raw rolled oats with fresh fruit, steel cut or cooked rolled oats, overnight oats, oat pancakes, etc. They are the BEST.
You know in an emergency Taco Bell has this fiesta veggie burrito and all you have to do is take all the dairy off and it actually tastes pretty good. Ends up being a burrito with rice, black beans. Guacamole lettuce and tomatoes. And they're only $2. But I wouldn't eat them everyday.
I am new to this community. I'm so struggling because I don't know how to make vegetables good enough for my kids and husband to enjoy eating. Whole wheat bread, pasta etc. are nasty to everyone but I'm open minded so it is not that bad to me. My husband is recovering from stroke so I am trying to fix meals that are healthier and trying to cut back on the eating out too.
Question: I’m pretty new to eating plant strong and have a huge bottle of high-quality fish oil supplements. Although I eat Chia seeds and flaxseeds I feel it would be nice to use up the supplements of fish oil. Are they bad for you heart-wise?
We are very mindful that everything we use is oil free. If a condiment has sugar in it, it has to be at the end of the ingredient list (not in the first three) and it is used sparingly. Hope that helps!
Amazon dressing from the Engine 2 cookbook by Rip and Jane Esseltyn. Makes about one cup 3 Tablespoons fresh lime juice 1 mango peeled and pitted 2 green onions chopped 2 Tablespoons chopped cilantro or basil 1 Tablespoon minced fresh jalapeño pepper 1/2 teaspoon cumin In a food processor or blender, combine all ingredients until smooth. My favorite Engine 2 cookbook dressing is Dragon dressing. The Esselstyns make eating plant based easy and delicious.

Oh, I love my plant foods. Plus I love making my own foods, like sweet potato fries, no oil.
I like ti fix Sloppy jacks. Jackfruit with BoneSuckin' Sauce with onion topped onto homemade bread. Yummy!!! Also add spinach.

Brown rice pasta is much better tasting than whole wheat.
