Here's a cooking hack for chopping greens. Place your greens with a lot of water in your Vitamix ...use the pulse option and pulse until the greens are chopped how you prefer . Strain water out. You have both washed your greens and chopped them. I have never gone back to traditional knife chopping off my greens ... I eat more greens now !
i’m so stingy, after i squeeze each half in the citrus press i put the two halves in, on their sides, facing each other, and squeeze again. i usually get at least another teaspoon or two of juice! thanks for another great recipe-i love you guys!
Never take the pit out of your avocado by holding the fruit in your hand. Emergency rooms deal with injuries from this avocado pitting technique all the time! My mouth is watering!!! Hint: for ginger, I wrap it in plastic wrap then foil and keep it in the freezer. When I need to grate it I peel a bit of the skin off and use the microplane zester. Awesome!!!

Some people cannot taste cilantro. They taste soap. I use parsley when I know there will be someone who only tastes soap. This salad is something for Sunday. 😄
Just made this salad tonight for the first time. All I could think about as I cut the tofu was making sure my squares were small enough and the same size. 😂 Oh my goodness! I’m making this once a week! My new all time favorite! I used a baby kale but next time I want to try arugula. The baby kale was amazing but arugula is my favorite. Thank y’all so much for sharing. I bought the ebook but I’m also getting a hard copy.
I bought the Engine 2 cookbook for this recipe - it is sooo good I have made it several times and is going on regular rotation. I did notice you guys forgot the green onion when you were making it - Jane said she knew the recipe by heart and forgot them!
Ok this is an amazing dressing. I changed the veggies. It works on anything. I used it with soy beans , toasted sunflower seeds. Peppers, spinach and cabbage. I did do the tofu as well. Thxs for the dressing.

I have recently gone vegan and i have a hard time finding any dressings I like. Have tried making at least 20. But I can say Green Lightning salad/dressing is my favorite i repeat every week!. I found some green tea noodles at the Asian store. I like to use them cause i can cook a bunch and they do not get sticky at all in the fridge like most other noodles. I also add some chopped snow peas to this but LOVE it. If I could find a few other killer entree salads I would be in 7th heaven.

Hopefully you can take a screenshot of the pages. I don’t have great internet reception where I am at the moment but, since I just made the salad yesterday, here are the ingredients from memory. In the video there were no green onions, if memory serves, but they are listed in the written recipe. The dressing: 5 tbsp each of maple syrup and Tamari (5tbsp = 1/4 cup + 1 tbsp.) 2 tbsp rice vinegar 1 garlic clove, minced 2 tsp. minced fresh ginger 1/2 jalapeño pepper, minced Juice and zest of one lime Salad: 1- 14oz pkg firm tofu, cut into small cubes, marinated in a mix of 1/2 cup each of Tamari & maple syrup and then baked on parchment for 45 mins. @ 400F - flip them over halfway through. 8oz ramen noodles cooked and rinsed well in cold water 1 bunch kale, stems removed, chopped fairly fine 6 green onions, sliced 1/2 cup chopped cilantro 1 good sized avocado, cubed 3 tbsp. toasted sesame seeds Toss all salad ingredients, except the sesame seeds, with the dressing. I have been told by a licensed Functional Nutritionist that only Asians have the enzyme needed to process soy. Both my husband and I have had hormone related cancers, so I’m trying to sort it out and wonder if you all have any resources on this or what “The Doc” might have to say about it. Love you guys and have ordered the book! I think I too could eat this every day!
I had to laugh when you discovered Ann didn't know how to use the juicer--I think maybe 10 years ago my daughter and husband were playing sous chef with me in the kitchen and they saw😆 I used my squeezy with the rind facing up and they were like "WHUUUUUUUT?"
Hey Jane! Replace that remmer that is missing paint if it's made of aluminum underneath. Acid such as lemon will IMMEDIATELY start dissolving aluminum at a microscopic level which is why is terrible to cook with aluminum or store food in it. I was concerned about it one day with my own and looked it up. Found some seriously concerning pubmed studies about it.
Jane, please look at page 189 of the Engine 2 Cookbook, Thai Curry Sweet Potato Bowl. There seems to be a step missing about what you do with the oat milk green curry sauce. Please advise. Thanks Luann Wiedenmann
I liked this but found it too sweet overall. Will reduce or eliminate the maple syrup next time (at least in the dressing). I also used arugula instead of kale, which was great.

Ann is on point with the cilantro stems, I always include them. They are tender and flavorful, just chop more if you want them smaller.

Fresh Tofu from an asian shop has a certain, nice taste. It‘s better fresh. If you freeze it, it absorbs more marinade.
