  • A true bread pudding recipe traditionally doesn't involve layering slices of buttered bread with custard but rather uses bread mixed directly with a custard mixture and often includes additional ingredients for flavour and texture.

    Ingredients:
    - 4 cups of stale bread, cubed (hearty bread like French or sourdough works well)
    - 2 cans (379 ml per can ) of Evaporated Milk, whole milk, or heavy cream for a richer pudding
    - 3 large eggs
    - 1 cup (200g) granulated sugar
    - 1 teaspoon vanilla extract
    - 1 teaspoon ground cinnamon
    - 1/2 teaspoon nutmeg (optional)
    - 1/2 cup (75g) raisins or a mix of dried fruit (optional)
    - Butter for greasing the pan
    Grease a 9x13-inch baking dish with butter.
    oven 350°F (175°C). 45 mins
    Air fryer 320°F (175°C) 35mins

    I made bread pudding last week. I came from a family of 13. We never had a lot of money. My mother was born in 1933 and she used to make what she called war time bread pudding. Bread soaked in water and wrung out. Then she would use a bag of mixed fruit, a pot of mixed spice, sugar and heres the unhealthy thing lard. She would mix it all together and make peeks and put sugar on the top. She never used eggs or milk. She always followed her mother and Grandmother's recipe. Bread pudding is so under rated these days. Love your channel, i am binge watching all your amazing recipes.

    here where i live, was taught a differen way to make this. mum used to cover in the bowl of bread with water, let itsoak and then squeexz out the liquid. we use brown sugar and suet with the spices the pudding come out dark and tasty.

    After 37 years of marriage I have at last made my husband some bread pudding, his favourite dessert. I am Swedish and had bread and butter pudding growing up, but couldn't figure out what bread pudding was. Now your delicious bread pudding will be a firm dessert fixture on our menu.     Rik, this might be the northern recipe but I've never tasted anything better than my nan's from the 70's in Southwest London. Changes to yours, Whole milk, mixed spice, currents, sultanas and course sugar on top that's only partially caramelised. I've lost the family recipe but you have inspired me to make one. RIP Nan ❤.

      I grew up in Lancashire from a poor family my mam made bread pudding every week, bread, milk, currants & sugar, but I remember that taste even now & I’m 70. No custard or ice cream - but you didn’t need it the the taste was amazing 😊

    I worked in the Food Service business for 40 years - recently retired. One of the places I worked, we used to make bread pudding using the leftover danish and donuts (along with bread as needed) that didn’t sell the day before. That was one of the tastiest bread puddings ever! Looked almost as good as yours, Rik!

    Back in the day, a lot of people used to soak the bread in plain water first, then it was squeezed out almost bone dry before adding the ingredients as you have shown.

      That's how my nan made it and I do too,water to soak the bread then squeeze the water out before adding the brown sugar ,fruit and spice, then the eggs.

    I attended an "old English" night. Black Pudding, with English Mustard (if you wanted), followed by Tripe and Onions and a dessert of Bread Pudding and Custard. I have to say the Bread Pudding didn't look as good as yours. All washed down with Ale. With a Clay pipe smoking competition to end, (won by a lady). What a night.

    My Mother made Bread pudding but she always soaked her stale bread in water for a little while squeezing it out until almost dry then adding the other ingredients plus the zest of a lemon and a couple of tbsp of Atora suet. Delicious hot and great cold. A wartime favourite because nearly all the ingredients did not use up precious ration points. 🥰

    This used to be a staple of our canteen at work - it was a great way of using up stale bread. They used to sell it cold in slices, dredged in brown sugar, and it was delicious and very popular.

    For a lower calorie version, I mix skim milk powder with much less water to get a rich milky taste without fat. I don't use sugar in the pudding, but eat it with honey or jam. I often add chopped apple or banana. Another way is with a can of crushed pineapple. Or use lemon flavouring instead of vanilla.
    I'm enjoying your recipes. Some of them I've only seen mentioned in British novels, so it's interesting to see what they are in real life!

    I first had bread pudding in U S Navy in the 70's ships cooks always saved the left over bread from the days meals and saved them in one of the huge steam kettles, and made huge pans of bread pudding once a week . We had to eat it plain , without any sauce or cream

    Bread pudding is one of our favorites! Thanks for sharing this method. The crispy top with a sprinkling of sugar is one difference in the way we make it. I think we will be adding that and the evaporated milk to our recipe. We add other things to it, depending on what we have on hand. Chopped up nuts and other types of dried fruit for example. Another favorite we do (in addition to having it with ice cream or milk) is to make a lemon sauce as a topping. Anyway, really appreciate what you’ve shared here! We like variations and options with our bread pudding. The crispy top is something I am really looking forward to trying.

    That really brings back good memories. Very much like the bread pudding my mother used to make. I think the only diferences were she would add apples to go with the rasins, and would sometimes ues bluberries, strawberries or rasberries (but only if they were marked down for quick sale!).

    My mum used to freeze the bread toppers then once the freeezer drawer was full she would defrost it and make bread pudding... It was amazing!!!

    How amazing is that. My Mum used to make bread pudding, occasionally. It's one of my favourites. I'll have to try it with evaporated milk. I've not made it for years. I love the crunchy top. We used to eat it like cake, but it looks nice with ice cream.

    Used to make mine with a soak in cold tea. Dark sugar with the eggs and spices. Also sprinkled sugar over the top. Very handy when you have a tea van to use up the bread.Oh and a bit of suet too.

      @@BackyardChef Well, for my first attempt it came out pretty well ---- although I have discovered that my oven (F) cooks a bit cooler than your suggested temperature, so it had to stay in a bit longer than you suggested.     My grandmother used suet and lots more fruit. Soaked the bread in water first perhaps due to cost😊

      Yes. Back in the war years and rationing when ingredients were short on supply - its is amazing how these puddings were made. I use suet quite a bit on this channel - however other don't like it or cannot get hold of it worldwide. Best, Rik

    I LOVE bread and butter pudding so now I have to make this! My dad used to give us bread soaked in warm milk with sugar as a breakfast treat occasionally. I’m 76 now and still make it because of the memories it brings.

    I love your evaporated milk idea Rik, i use it all the time now 3 tins in the cupboard, my personal preference is brown sugar in the mix and a teaspoon of mixed spice, and leave it for 24 hrs, it cuts and tastes like a dream, but thats just me , with a cup of tea o 0r coffee, brilliant, I hope you dont mind my input. cheers Allen

    That looks bloody lovely. I was brought up on this is Essex and Norfolk. It was my Dad's favourite, so we had to eat it. There was no carnation milk or milk. It was stale bread, water, allspice, raisins and egg. It was as grey as a damp February day in Great Yarmouth. I've got to try this, but I may need some bigger T-Shirts.

    Bread pudding is one of my favorites. I'll even use cinnamon raisin bagles that have gone a little stale. Only problem being is that I'm the only one in my family that ever liked bread pudding and now I live alone. So I eat the whole pan of it over about a weeks time.😂🎉 Thanks Rik😍

    Bread pudding was my mother in laws favourite I made it for her many times the first time she asked for it she said bread and butter pudding but when I had made it she realised it was just bread pudding she wanted both totally different but both delicious , thank you for your recipe Rik I will try evaporated milk next time , Amanda xx🍞

    Bread pudding so good. When I make bread pudding. 1 would save the ends of sliced bread loaves in the freezer until I had enough to make bread pudding. I use a spouted grain cinnamon raisin bread and other bread bread if needed adding extra cinnamon and raisins in the mix. I always use a slow cooker for the bread pudding.

      Oh wow! Give it a go. Change it up a little. Grab an apple slice thin and poke it in or layer in the mix when you put it in the tray - make a fantastic apple pie type pudding. Best, Rik

      Cut out your pastry in 5 to 7 inch circles, I use a soup bowl. Fry the apple slices in plenty of butter with cinnamon,sugar and nutmeg. A little corn starch to thicken. Just spoon a bit of the apple mixture and fold into a half moon and crimp the edges. Bake at 375 Fahrenheit for maybe 20 minutes. Glaze while still warm.

    Yep,I made some of this the other week ( I used some raisins soaked in some Irish Whiskey,a diced apple& a little strawberry Jam) and I baked it on a lower Heat ( for longer obviously) which I think worked out better!)
    .But this BP was really nice,( The Colour& texture was spot on) So the Bread was most def suitable and the evaporated or Carnation Milk,I think is ideal! Those imo are game changers👍 Great Job!
    P.s I always liked the BP they sold in the Bakerys in the UK,but how do they get that really dark colour?
