    Taking Cooking food back to basics.
    Ingredients
    150 - 200 g (10 oz) Cheddar Cheese, grated
    3 medium eggs, beaten
    379 g tin evaporated milk or Milk
    salt and pepper to taste (check how salty your cheese is before seasoning)
    1 tsp dried parsley(optional)
    For the pastry:
    - 420 g All Purpose Flour
    - 65ml Water
    - 150g Shortening
    - 50g Butter / Marg
    - 1 medium egg
    - 1 tsp Apple cider vinegar
    - 1 tsp salt
    Preheat the oven to 180C/160C Fan
    prebake pastry 12 -1 5 mins
    second, bake 5 - 8 mins
    egg wash to seal back in oven 2 mins max

      Dead right, mate! Not many know the trick; even the celebrity chefs on the tube don't show it. Mind you, they never show the pastry bottom. I've shown the bottom and given the trick. I hope others can enjoy baking at home more now. Best, Rik

      If you're ever doing a bacon and egg pie, a sprinkling of grated cheese on the bottom before adding the filling stops the soggy bottom scenario as well. Don't ask me how it works but grandma told me this 40 years ago, and I've never had a soggy bacon and egg pie bottom 😊

    Such a shame that schools dont have home technology lessons anymore. I learned to cook watching my nana ( my mother could burn water and once a boiled egg) and carried on in home tech for 2 years ❤. Ps love your recipes keep them coming

    I was a cook in charge in school meals from September 1978 to june 1987

      The meals were fabulous back in the 70s & 80s ❤ proper fresh ingredients, not over processed 😊
      I remember eating Cheese and Onion flan on cold or rainy winter days with chips and beans, got me through High School 🙂 Great regional recipes

      My Mam was the best cook Ever, born in 1921 she made everything from scratch with basic ingredients, she had to for 11 kids 😂 I enjoyed All school meals in the 70s because the Dinner ladies were COOKS

    School dinners at Primary school were always tasty. One of my favourite meals was cheese and onion flan served with mashed potato. Chips were never served at school mainly because the meals came from a central kitchen and arrived at each school in large metal canisters or sealed trays depending on the food.

    Oh that flan is great. I will make it this weekend. School dinners were so lovely. Chocolate concrete went flying as you cut it. I did not realise how poor my mother was at cooking/baking until I got to big school at 11. I didn’t know the names of dishes as I had never eaten them at home. Stew. Cottage pie, toad in the hole, jam and coconut sponge etc. You know people talk about favourite dishes their mum or aunt or grandma made. I don’t remember any. I phoned my brother who is five years older to ask him why I don’t remember, and he said we lived on sandwiches. Thank you for this video. It was well worth the effort for me to enjoy watching.

    You have been taking me back to the late '50s for a while now. Thank you.
    I cannot remember EVER getting Chips for School Dinner. Boiled, Mashed and Creamed Potatoes although I could not tell the difference between Mashed and Creamed except perhaps that Creamed went onto the plate with an Ice Cream Scoop thingy and Mashed was a dollop.
    I see you have contrived to give everyone a Corner piece! So no arguments :-) from the family.

    Cheese flan chips n beans was my favourite in junior school .. until on one occasion there was leftovers ... I had thirds 😂... Didn't have it again for months .. needless to say I got over it and still make it to this day with chips n beans ..😂😂😂 peace

    Back in the day when our cafeteria ladies could really cook, we never had such a great dish. Mostly I brought my lunch to school. But on those rare occasions when I ate in the cafeteria I remember big cookies, cakes, macaroni and cheese and maybe I'm imagining fried chicken! English schools really had another level of food.

    FLANNNtastic!!! Sorry... I'll get me coat... lol That looks wonderful, Rik. In fact, you have truly inspired me. I am going to make one myself for dinner today, but I'm going to add some sauteed onions, only because that is my personal memory of this school dinner classic. And home made chips and beans, of course! :) Another pie I remember is creamy chicken pie with puff pastry. I have never experienced such a delicious pie since then. It was DEEP with filling, too. Rich, creamy chicken filling. Some chunks, but a lot of the chicken kind of shredded into the sauce. But no mushrooms or ham or sweetcorn. Just pure, unadulterated creamy chickeny deliciousness lol Even I have not been able to replicate it, and I have the memory so seared into my mind from all those years ago. It was a real treat the day that was on the menu. Good times. Makes me snarl when people knock and dismiss real British food. They have NO idea what they are talking about. I love these old school British classics. Thank you :)

    In 1972, when my junior school 'moved' to a new school, there was a kitchen with a cook and an assistant. They made some lovely meals at only 12p a meal!! My best memories of school were lunchtimes. Thank you for walking me back along memory lane...

    A lot of the kids in my primary school, back in the 1970's, hated the cheese flan until I suggested putting mash potatoe on the top and the beans on the top of that. It was also a great way to finish it quicker so we still had time for seconds of pudding and play time.

    Flan and baked beans were a classic back in the day. And chips and beans (Heinz only) were the other combo for me. Flans are quick to make but you wouldn't catch me trying to flip it unless I wanted to redecorate the kitchen floor. Nice one mate. I'd add a little one to the flan and bingo.

      I wouldn't normally it should be served in the tin - however it did show the bottom was perfectly cooked and not soggy after my tip for everyone. DON'T do it was the cry! Best, Rik

    I love evaporated milk. I always have 3 cans in my pantry and use it all the time because i have to pre plan transportation and this stuff doesn't go off before I can use it. Love quiche and make it monthly. Good for breakfast, lunch or dinner. ❤

      Annette, I'm with you - I have tins all the time! Its one of the best ingredients in my opinion that was ever invested years ago. I use it in all sorts of cooking, baking to curries. As you say the shelf life is long. Best, Rik

    Wow, this is an amazing recipe. I have been discharged from hospital after 16 weeks and Ive to follow the same meal plan as we had there. It was stuff like Cheese flan and mash and salad, Veggie quiche, liver onions and mash, gammon steak, breaded haddock or poached fish, haggis or stovies, proper old school food with semolina or creamed rice or custard and something for dessert, and scones doughnuts and lots of milk. I didnt think this would be easy to make, and your right about it being nutritious. especially I think pre made pastry doesnt have butter in it, and butter is good for me, I'll take a look at your other videos. I need to learn to do creamed rice do, the hospital chef says its easy, and delicious with stewed rhubarb. Thank you

    When we had cheese flan it was served with roast potatoes and a hot tomato sauce I have never been able to replicate the sauce,it was unique and never had it anywhere else

      I remember that sauce, we had it with roast fore end (gammon) I suspect it was cream of tomato soup in hindsight. I cooked gammon a while back and used a cup a soup!

      At our school we had baked fish with that tomato sauce (I am sure it was cheap tomato soup) and the mashed potatoes dissolved into the soup, ugh! However cheese flan with roast potatoes and raw grated carrot as the vegetables, actually the roast potatoes were deep fried and crunchy. Alternate squares had either a slice of tomato or a slice of mushroom. I liked the tomato. Yummy.

    My elementary school lunches in Dallas, TX, USA, were fabulous. We never had flan of course, but we had homemade rolls daily that were a meal by themselves. I love custard type dishes, and this looks really good.

    I remember lovely school meals in the 50's and 60's, chocolate sponge and chocolate custard were my favourites for Afters. We had cheese flan regularly, just like yours, it was delicious and filling!

    This is the real stuff! I remember cheese flan at my first school. The dinner ladies were a dab hand at it.
    I've been looking for a good recipe for years, and this is it. I was trying to explain to my wife what a flan was (she wasn't schooled in the UK for the most part), and she kept asking if it was a quiche...To her, a flan is something else.

      Top man, Allen. Evaporated milk i one of the best things ever invented. I use it almost daily in everything from baking to curries, mate. It's a must to have a couple of tins in the cupboard. The shelf life is long. Best, Rik

    As an American I’ve never heard of this but it sounds good. I’d probably put a little bit of onion in it. My grandma was a school cook back in the 40s-60s in Nothern Wisconsin. Ai went to a local history museum, the old ladies there remembered my grandma and what they remembered was her baked bean sandwiches on homemade buns. I still use her recipe for buns that have a little honey in in them.

    I’m born ‘58 and was a huge fan of school cheese/onion flan during 60s. I saw an old school recipe book a few years ago where cooked rice was added to the cheese mix to help the filling go further. I did try it successfully once but then lost the recipe so didn’t make it again.

    There were very few school dinners I didn't enjoy back in the day. My school dinner days were when we moved from Scotland to England in 1966 when I was almost 10 up till when I left school in 71'. This cheese flan was one of my favourites.
    Bakewell tart which I've seen on your channel was a well beloved pudding as was jam roly poly and custard. There used to be another favourite but I don't recall a name, only that it was a pastry base with red jam on top with a couple of small dairy cream swirls. I'm positively drooling now and trying to recall the many great things we were served up compared to the rubbish of today. I'm not even trying to moan, it's just a fact.
    My mum was a great cook but it was all standard Scottish fayre which was fantastic but completely non adventurous and predictable. She did fantastic battered whiting though and would drop some more piping hot chips on my plate whilst I was watching tv and not realising. I would then pop one of those chips in my mouth and proceed to try and swallow that red hot poker as fast as possible, lol. Why did we never learn to remove it rather than go through the pain??
    She baked daily as well, apple tart, rhubarb tart, Dumpling (clootie pudding), treacle tart, tablet, shortbread to name but a few and her soup aka kale was legendary.
    My parents never even tried mushrooms let alone a curry or a spaghetti. Items such as mustard, spices and even tomato ketchup were never in the family cupboard. Now I'm retired I have suddenly got interested in experimenting and trying to rediscover tastes from the past. I believe I've found the right place.

      Wow! This was fantastic to read. You have good memories right there. I was lucky, Mum experimented with various foods back in the day - she was a proper home cook - Old fashioned , parents Dad out earning the crust, Mum at home. However she along with many, introduced Vesta meals for us all. Giving us a chance to try risotto and curries. Obviously not the same as homemade. However an introduction. We had a roast every Sunday left overs always on Monday, with mash potato. She baked all the time. Just amazing when we think back. Thanks for sharing and good luck with the discovery. Best, Rik

    Great to know about evaporated milk. Don't always have cream in, but evap can always be in the store cupboard ready for use, and what about your pastry, that's a revelation too. Thank you for sharing.

    My smallish infant school used to fill with the aroma and us kids used to scream FLAAAAN, best day of the week. Great tip on the evaporated milk, always wondered why it was different from other flans. Cheers mate, nice one.

    This recipe inspired me to cook a cheese flan for supper. I made a couple of changes. I spread mustard on the bottom crust to give it a bit more flavour. I caramelized some onions and put them on the bottom of the flan before adding the grated cheese on top. I also sprinkled some basil on top of the cheese. The rest was the same.

    My high school Aigburth Vale High School for Girls in Liverpool served up CHEESE PIE on Fridays it was everyone’s favourite. Many years later I found someone on the school FB page who was the daughter of one of the dinner ladies and she reproduced the recipe. It’s gorgeous. It certainly wasn’t a flan, and the pastry certainly didn’t need an egg and ACV in it either! Evaporated milk????? Never! 😂 Nit we always had chips with it. Always.

    I recognized that cheese flan immediately - it was one of my favourites at school 70s/80s. I never knew the secret ingredient was evaporated milk to give it that special flavour . And nothing better than crispy chips and beans with it. Thanks so much - my mouth is watering. 😋
