    Mum and Dad have been to stay for the weekend. Dad likes RUclips so I showed him your channel. I think he's binge watched most of your recipes, and was sat drooling at all your food. It sounded like he was having a conversation with you too 🤣

    Rik, thank you for explaining to your viewers the waste of time that the horizontal or parallel cut of onions is. About 40 years ago, when I was a restaurant cook, I had a vendor challenge me on this. He was a big proponent of using that extra cut. I cut my onions exactly as you do and cut them just as finely as -- and more quickly than -- he did. Mind you, I have never been a wiz with a knife. It wasn't a matter of skill. It was simply a matter of logic. You're quicker than I am and I probably had a duller knife. You would have smoked me. Nonetheless, I was able to outperform that vendor. It's just a fact, as you point out, that the layers of an onion lend themselves to even, fine dicing with minimal effort. People would do well to think about your instructions and follow your examples. When it comes down to successfully cooking in a consistent manner and allowing for personal preferences, you're the best teacher I've seen on RUclips, so far. I have no doubt that many people's lives have been enhanced by your sharing of your culinary experience and expertise. Keep up the good work. Wishing you all the best. Respectfully, Bob.

    Finally someone who cuts onions like me. I hate that other method and have tried many times to do it, but just can't without the onion slipping and sliding and then making it harder still to slice and chop.

    Oh my gosh, please can I have a big slap of that pie? I haven't had that pie for ages. Hier in Germany you don't have pies.. My dad made them as we lived in England.

    I totally agree about the danger and non-necessity of the parallel cut of an onion Rik.
    Onions are naturally formed in segments and dice cuts make them fall into little cubes easily.
    Cutting towards you hand is never a good idea! 😱

    Rick, I had never heard of cheese and onion pie before. My mouth is watering.
    Looks good as is but my mind is already wandering. There must be so many variations possible too. Add a bit of mustard powder or serve with mustard. Mix in some bacon or chicken into the filling? Pees or carrots? Add olives? I finally found those whole green pepper corns you used in another of your videos - toss a few of those in the mix? Serve with gravy or a wine sauce over top?

    Chefs in America and UK say this or that potato or apple so and so and we go to our African stores and its whatever is there at some total different names. You get that. I like that you dont pretend.

    I’m not very confident making pastry. The few times I’ve tried it’s turned out too dry. I hate making a wonderful filling and spoiling what should have been a delicious meal by my wretched pastry. I do so want to try this pie though. Anyone have any advice? Thanks for this scrumptious recipe. I know it must be flippin’ fabulous.

    I agree with you on that onion cutting bull crap. I never cut mine like that, either. You end up with a solid piece of onion at the very end cause the cuts don't go completely through. How is that a better way?

    Χαιρετε. Μηπως θα επρεπε να τηγανησετε τα κρεμυδια και μετα να τα ανακατεψετε με τον πουρε πατατας ???????? Ετσι, βαζετε ετοιμο πουρε με ωμα κρεμυδια, δεν καταλαβαινετε οτι τα κρεμυδια θα γινουν......βραστα ???????? Ισως εχετε συνηθησει τα ........ανοστα φαγητα και δεν σας νοιαζει η γευση.     Charlottes sautéd in butter or olive oil are added as opposed to orrible boiled onions.

      Shallots are bit milder than onions or can use normal fried onions, as opposed to boiled
