Cheese Flan (Old School Dinners)

  • This retro Cheese Flan was requested by many people almost all telling me it was a memory from their School Dinners in the 1950's & 60's.
    As I never experienced school dinners I had to do some serious research into this recipe.
    RECIPE
    Short crust pastry (Either make your own or use shop bought) Below is a link to my pastry recipes.
    4 large Eggs
    200g Grated cheese (I used a mature cheddar)
    150mls Single cream
    Salt & Pepper to taste

    As someone who was in primary school during the late 2000s/early 2010s, this definitely takes me back! It’s great to see that some parts of our culture are shared by so many generations.

    In the 50s we had this dish in school dinners every second Friday alternating with awful boiled fish. I loved the cheese flan chips and beans in fact I am going to have it for tea!

      They still serve this on Fridays at school,instead of boiled fish its fried or over baked

    Im from Gorton Manchester and my old school Spurley Hey used to have this flan and we had it with chips and beans and a lovely tomato sauce , always used to go back for seconds if there wasnany left this was in the 1970s.

      Hi, I have mentioned this in a very early video of mine I think. I was born into a travelling family (Romany Gypsies) and was brought up on the road, so never went to school. Didn't learn to read & write until I was 17 years old and YES I've had a very interesting life spending the first 18 years of married life travelling the world with my late wife as Circus Artistes. I hope this answers some of your questions.

    Our's were cooked in the school kitchen, a small roll of streaky bacon was placed on top, one for each portion and baked on the flan, resulting in a lovely flavour throughout the cheese. We had mashed potato and a jug of reddish sauce to pour over both. I recently worked out that the sauce was the liquid from the previous days hotpot which was really huge tins of vegetable soup. That was the 1950's and a personal favourite. Other fav's were corned beef pie and spam fritters. We never had chips at any school I (sometimes) attended.

      We never had chips either. I loved the school dinners in the late 50s and 60s. Real food not like what they get nowadays.

    This was my favourite school dinner! I make it regularly. It's fantastic with slowly cooked leeks beneath the cheese with nutmeg in the beaten egg.

    Oh my this takes me back to the 1970s, wonderful! Sometimes we would have little cubes of ham or possibly Spam on ours, but always with chips and beans! Thank you for sharing, I’m going to have to make this now.

    omg I always wanted the original 80's recipe thanks so much Paul I am going to make this Tomorrow as I had no Cream in. I was going so wrong trying to recreate this in the past using milk and combining the egg and cheese like a quiche. Real Dinner Lady recipe this is a treat. 😃😋❤❤❤

    just found your channel. Excellent. I was in school from 1970 onwards. We used to have this with mash potato and a kind of runny tomato sauce/gravy. if you could ask the dinner ladies for the tomato recipe to go with it-if indeed they did that at their schools that would be terrific. I think you missed an opportunity at the end there to just cut into the flan and let us see how it layered. Great vid though , I'll give this a go 😀

    At my school in Yorkshire it was Cheese Pie (no onion!) we had it served with small new potatoes and baked beans. I loved cheese pie, but even when I was in charge of a table at school everyone got a fair share, I found out many years later the little ones all wanted to be on my table because I was fair, I had no idea.

      It was also cheese pie (no onions) at my school, in north Derbyshire in the 1960s. The pie was baked in a large rectangular tin with a sheet of shortcrust pastry on the bottom, then the cheese filling, and another sheet of shortcrust pastry on the top, and it was served cut into 4" squares. We invariably had ours served with mashed spuds and baked beans. I sometimes still make this dish for myself but I make the pie on an old-fashioned circular enamel pie plate.

    Thank you so much for this video! It brought back such good memory’s from the 90’s when I used to love this flan in Primary School. Casomorphins in Cheese can cross the blood-brain barrier and attach to dopamine receptors in your brain. This causes your brain to release dopamine, a neurotransmitter related to feelings of pleasure and reward. I never knew this until I Googled it. Cheese does for me what Chocolate does for others. Both wonderful foods to treat yourselves to! ☺️🧀🍫

    Although you are still recuperating Mr. Paul, I do hope you are able to read your fans comments, we don't want you to do anything strenuous, just get well again first. I have been re-watching your videos and today it's school cheese flan I am making. Yes, I have made this twice before and it was delicious. Anyway, to cut a long story short, being a bit of an old bird, the same age as you, I do have to look recipes up countless times, so thank goodness for you. My eldest daughter is 62 today and this flan is for her, yes, she'd rather have this than Birthday Cake, and her elder brother, younger brother and younger sister are all looking forward to it. I'm going to put birthday candles on it. Thanks for your recipes, Mr. Paul, you are such a treasure. We hope you keep getting better and better from Di and family in the UK xx

    My favourite meal from school dinners in the early 1970’s. In our school, it was served with roast potatoes and Russian Salad ( Coleslaw without the dressing) mostly.

    Don’t remember having this at school in the 70s. Our school cooks were brilliant. The food was really good overall. Feel sorry for children today with their packed lunches.

      Oh the flan was delicious by the way ,brought back fond memories, but I think I might have about one too many eggs in, (4) as it tasted quite omelette-y. And I can't remember 100% if that's how I remember it tasting 🤔

    My grandma in California made something similar with bread in between and baked. I think she called it Cheese Strata. I always liked it but anything Grandma or Grandpa made was perfect to me. My other Grandma made onion pie. It was like an onion flan. I thought it was delicious. Thank you for this video. The whole old school dinner sounds delicious.

      Hi Gypsy Boy. don't know if you know I was a Romany chal born on the road in a vardo in the UK almost 80 years ago, but lived amongst the Spanish Gitano in Granada for 25 years. Unfortunately, I never went to school so don't remember this dish.. Thanks for watching Kushi Divus

    Hello and thanks, I can confirm your recipe as my mother was the head cook at our local comprehensive in the 60's and 70's. No onions were used (too many kids didn't like onions). I suspect an alternative to cream was used, costings were king!

    I had School Dinners in the late 50s early 60s and seeing what passes as a Schoold Dinner now I feel sorry for the kids of today. The two Schools which I had the dinners at had the Kitchens on site which may have been an advantage I suppose and they were good wholesome grub. I cannot remembr having this or Chips during my time but apart from what looked like Frog Spawn pudding (may have been Tapioca) it was excellant.

      I think you're right James, on site kitchens had the advantage, the other thing is, the Ladies doing the cooking were first class home cooks with families, so they really knew what they were about.

    Hello Mr Paul, Your shortbread recipe caught. my attention tonight and I stayed on to watch a few other recipes and I jusst subscribed after You made Cheese Flan. I have never had that, I never went to school in England and being an American, I have only tasted “English” food in Victoria BC in
    Canada..They say Victoria is more English than the English. I had a “mix grill”breakfast there in a restaurant and it was delicious. On my last visit I was very disappointed to find that everything I ordered had a very bitter taste, kind of a hot spice than burned. my tastebuds. I had a white creamy chicken soup and lthat i couldn”t eat and later for dinner I ordered what I thought was a safe choice: A BLT triple decker sandwich and curly french fires. . Ah there it was again, bitter and burning even the fried which had been deep firied with a batter-like crust.I learned later that they put horseradish in the mayo and put Indian hot curry spice in the fries and the soup.I Gathered that those flavors were greatly enjoyed by the local folks and part of the culture.I finally satisfied my hunger at high tea at the Empress Hotel. There was no horseradish or hot spices in the tea cakes ,scones, sandwiches and the other good things that were served I LOVE English food, or at at least the foods I have read about in novels set in England and Scotland. I am relieved to find recipes for the dishes ,mentioned in my novels. I will be fixing the cheese flan , it sounds and looks delicious. Thank you.

    I started school in 1968, and had school dinners from the start. Cheese flan was a favourite of mine. The only school meal component I did not enjoy, was beetroot, which appeared in salads. I still detest it to this day, and the smell alone is enough to turn my stomach. It's one of an exceedingly short list of foods I dislike.

      @@MrPaulsPantry - I have no problem with anybody else enjoying Beetroot, as long as I'm not asked to join in! I love lots of things other people dislike: Black Pudding, Haggis, a lot of offal dishes, Whitebait, etc. So it balances out.

      As my father had 5 pork butchers shops (where I started my working life) I'm on your side with all the Black Pudding and Offal. Still make my own sausages and black pudding.

    I made a similar recipe just a few days ago it was very nice but still not the same as our old school cheese pie,.I found the cheese stayed on the bottom and and a thin layer of the egg on top which was more like a quiche ,I will try this recipe ,

    Easy short crust .put 8 Oz of SR flour .4 Oz of soft butter .chop butter into flour doesn't need much .if butter is soft mix together with a little water at a time till it comes to a soft dough .flour work surface put dough on form and roll to as thin or thick as you like put in container with filling and cook .makes a lovely short crust pastry .cook till golden brown .

      @@MrPaulsPantry there was a recipe that I used before I stopped eating meat .it was called sausage pie one of only two meals we made in our school cookery class that I liked .the school meals though we're great.the pie wasent made with pastry it used potatoes.it was sausage meat rolled and cut into three pieces a large tomatoe an onion an egg and milk salt and pepper .you slice the tomato and onion put some one the bottom of a dish with some salt and pepper then one piece of the sausage meat ,repeat this three times .wisk egg and milk .pure over the top cook till sausage is cooked I think 20minuets or so mite be longer it's a long time since I last cooked it .boil some potatoes .and mash them and put them on top .and enjoy .☺️

    Hello I used to have this at school our cook would make it but it would be like a 3 inch square blocks with pastry on the top and bottom does anybody know how to make this style with a top on please as it was one of my favourites at school every Friday cheese flan then pizza then fish the next Friday the best dinner days at school.....this is a great video still thanks

    Thank you Mr Paul for your amazing recipes, when I watch videos on cooking of baking I always wonder why the amount of eggs used are not weighted in grams. You may say 4 large eggs and what I consider to be large are possible only medium. 🤔

      As usual the US have to be different, even with egg sizes, this makes it very difficult when developing recipes. In the bakery, because we were using a lot of eggs all the time we did whisk the eggs and actually weigh the quantity for a recipe, however, that's not very practical for home baking. so I use the European size system, A medium egg in shell weighs approx 50g - 62g a large egg in shell approx 62g - 72g
